In my excitement for the 20 Salads in December Challenge, right after I pressed publish on my last post I shoved the last 3 gingerbread santas in my mouth and got to work on a lunch salad. (No life much??)
I saw a deelishish picture in Martha Strewart’s Living mag of a lentil salad so I got to work semi recreating it.
You can imagine the resemblance to Martha’s salad right? Mmhmmm. Almost identical
Lentil Salad adapted from Martha’s French Lentils with Caramelized Celery Root and Parsley Salad
- 1/2 cup green lentils
- 1 1/2 cups veggie broth
- kale, chopped off the stems
- 3 radishes, sliced thinly
- 2 ribs celery, sliced
- 2 tbsp walnuts, toasted
- 2 tbsp goat feta
- 1 tbsp balsamic vinegar
- juice from 1/2 lime
- 1/2-1 tsp cumin
Cook lentils in veggie broth for about 30 min or until tender. Drain and toss with kale, radishes, celery, walnuts and feta. Mix together the remaining ingredients and adjust seasoning to taste. Pour over salad and chomp.it.down.
The salad was great! I forgot how tasty lentils are!
I didn’t stop the salad train for supper. Yes I just said that.
Warm Yam Salad
- 1 tbsp extra virgin olive oil
- 1 large yam, diced
- 1/2 white onion, chopped
- 2 cloves garlic, minced
- 1/2 tomato, chopped
- 1 tsp tumeric
- 1 tsp cumin
- 1 tbsp curry powder
- 1/2 tsp cayenne pepper
- 1/2 cup greek yogurt
- 1/2 cup water
- 1/2 cup unsweetened original almond milk, optional
- 3 tbsp cilantro
Heat oil over medium heat and add onion and garlic. Cook for 2 to 3 minutes, add chopped tomato and stir. Cook for 30 seconds and add turmeric, curry, cumin, cayenne, salt and pepper. Add yams and stir. Add greek yogurt, almond milk, water, stir and bring to a boil over medium-high heat for about 15-20 min, until potatoes are cooked through. During the last 5 minutes of cooking add the cilantro. They are done when the sauce has thickened and yams are tender.
Served along side baked cajun cod and steamed broccoli. Leftovers are even better cold on a bed of kale with some edamame beans, goat feta and pea sprouts. Just so ya know
I’m gonna go do some cuddling with the boyf (well maybe not too much cuddle as he has strep throat ), slurp down this cup full of warmed chocolate almond milk with chocolate dipped peppermint vegan marshmallows and watch The Office.
