So I know I told you guys that I would be making a Baby Page so as not to overload you with all my crazy ramblings/thoughts/baby shiz but I couldn’t figure it out. Technically NOT technical at all so from now on baby posts will be mixed with food posts. Hope that’s okay
I don’t want to talk about babies at all though today! I want to talk about breakfast. Yummy yummy breakfast. If haven’t noticed on the blog before (I know it’s kind of hard with the lack of posts…) but I get into suuuuper food routines. I have no problem eating the same meal a couple times a week or month. Example: Peas and Thank You Zucchini Quinoa Lasagna. HOOKED. But I couldn’t imagine eating the same thing everyday for lunch or dinner. Boring much? But breakfast on the other hand is a completely different story.
A few years ago I never used to eat breakfast at all. I used to sleep until noon (or 2 or 3), wake up and have lunch. Or if I did wake up before lunch time I would eat leftovers for breakfast. Spaghetti at 8am? Yes please. I’m not sure when I came to the realization how important that first meal of the day is, but now I can’t imagine not eating as soon as I get up. And not leftover rice with mushroom gravy either
Breakfast is the one meal where I can eat the same thing every single day and not be bored. But it changes weekly.
Of course it started with oatmeal. SO many different variations.
Ashley’s scottish oats with granola and pomegranate seeds
same oats as above but with peanut butter cups (chocolate + oats = amazing)
buckwheat groat oatmeal with granola, raspberry jam, maple peanut butter and almond milk
quinoa flake oatmeal with goji berries, frozen raspberries and blueberries and almond butter
overnight oats – 1/3 cup oats, 1/3 cup almond milk, 1/3 cup yogurt, 1 tbsp chia seeds, cinnamon and vanilla left to soak in the fridge overnight…..
topped with a pear, raspberry jam and granola in the morning
After my small oatmeal obsession, I moved on to french toast…
Ezekiel french toast with almond butter + almond milk mixture and frozen raspberries
topped with strawberries, greek yogurt and maple syrup
cinnamon spelt waffles with pomegranates and almond butter + almond milk
with greek yogurt and strawberries
waffle sandwich with 2 egg whites, raspberry jam, laughing cow and maple syrup
and pizzert babies (which totally double as an awesome afternoon snack )

Ashley’s banana cornmeal cakes became a staple for many weeks. Total no brainer. They are so filling and so delicious. I think I only stopped eating them because I couldn’t find buckwheat anywhere!

Just as obsessed I was with those bakes, I looove love Deb’s protein muffin. I’ve probably made it uhhhhhh…a couple 100 times? I make mine with brown rice flour, applesauce, egg whites, blueberries and vanilla bean powder. Deeelicious!

Aaand of course I could not forget eggs. I could eat eggs every single day and probably be a very very happy lady. There are soo many different kinds of ways to eat them! Over easy are my favourite though
Egg rollup with pineapple, cherries, toast with cinnamon + laughing cow
Big omelette fail with broccoli, peppers and spinach, oranges and strawberries.
2 egg scramble with tons of ketchup, quinoa cakes with avocado, hemp hearts + goji berries and raspberries
Runny egg on two pieces of toast, avocado + veggie sausages
More runny eggs on a socca pancake (1/4 cup chickpea flour, 1/4 cup water, salt + pepper +italian seasoning) with avocado, cheese and salsa
I have totally saved the best for last. PANCAKES!! I am so so obsessed with this recipe right now. I add in 2 tsp of bee pollen, use Sun Warrior protein powder and have tried almost every fruit in them

I am working my last night shift tonight and then I’m off for 4 days! I can’t wait!!
To say that I am only slightly obsessed with Ashley’s banana cornbread bake would be an understatement. I’ve eaten it 5 days in a row now!! It is that good. Oatmeal who?
Topped with a layer of homemade vanilla pecan butter. Can’t.get.enough. This keeps me full for like 4.5 hrs! Supreme.

My dad was in the city yesterday (awesome!!) and my mom had sent along some quinoa salad for me! She knows me soo well
Baby romaine, quinoa salad, chickpeas, avocado and a big blob of hummus. I’m DEFINITELY going to have this again today
I made another batch of vanilla macaroons for my parents. Not before sneaking a couple for me though. Duh.
I love these blond bad boys. They’re slightly crunchy on the outside, soft and yummy on the inside.
Was taken to work so please excuse the fancy shmancy bowls.
Kale salad massaged with a dressing of oil, vinegar, lime juice, garlic, cumin and salt, chopped pickles, green peppers and hemp hearts.
I <3 massaged kale.
Insert 3 brown rice cakes and a ton of hummus.
Because I work 12 hr shifts I make sure to bring tons of food so I don’t starve! I try to eat something every 2-3 hrs to keep my belly happy and to keep me awake

One good thing about working a night shift is the opportunity to have breakfast again! I love having the x2.
This may not look like much now, but after 4 minutes in the microwave it turns into an quinoa apple pie ish breakfast delight.
It’s Leanne’s 5 minute Apple Quinoa Flake Bake and you should make it now! Tastes amazing and seriously takes only 5 minutes. Winning!

Today is a GREAT day!!
Booya!! My term ended at the end of January and I had to go back to my home position. Not cool.
But I’m baaack now!
And I get to stay with my platoon, which is uber duber exciting!!
I love all the girls I work with.
And I have a SPECTACULAR supervisor
Life is goood!!!
I’ve also had some awwwesome eats too in the last 2 days.
Breakfast on Tuesday was eaten on the prison plate.
I couldn’t decide on what I wanted so I had everything I wanted
walnuts, salt n pepper pistachios, half a nan with almond butter, frozen grapes, frozen raspberries and blueberries and half a grapefruit. Perfect.
Lunch was yummy yummy.
Squirrley bread, egg + egg white, swiss chard, veggie burger, salsa and goat chedda.
I made a few snackies for work
popcorn with earth balance and nutritional yeast
steamed carrots (my favorite as of late)
and a mango
Supper was just a simple pasta with edamame beans, leeks, garlic and organic pasta sauce. Swiss chard on the side.
I ate everything pictured
I woke up at around 3pm on Wednesday and even though I had to work my last night shift, I still celebrated CINCO DE MAYO!!
I topped it with salsa and hot sauce
which I apparently didn’t take a picture of ?
when I got to work I mixed in some corn coleslaw.
Before that beaut I made protein pancakes!
This time I added 1 tbsp of almond butter, an extra 1 tbsp of almond milk and 1 1/2 tsp chia seeds.
I topped it with vanilla frozen yogurt and blueberries!!
Don’t judge me
I could only eat about half of these but they were soo good! It was like having dessert for breakfast!!
I snacked tons last night.
We went to Booster Juice and I got the snacksize Terminator. I wanted 10 of them.
I left at 2am because I had a nail appointment and I didn’t want to be a zombie all day on no sleep.
I looooove this color. She mixed two colors together to get this one and it just feels so summery.
I stopped at Indigo on my way home and bought a bunch of cards, two magazines and a new cookbook!
So excited to read this. I flipped through and saw that it is split up into sections of spring, summer, fall and winter. I love eating food that is in season so I’m sure this book is going to be great.
We had Wok Box for supper tonight because when I got home from shopping I was STARVING!! I hadn’t eaten anything yet today and did not feel like cooking. I ordered the Jungle Curry with no meat, rice or noodles. I made a side salad with grape tomoatoes, romaine and feta with a crunched up triscuit and balsamic dressing.
After supper we went to Jerry’s for ice cream. They have way too many choices so I got two. Peanut butter chocolate and key lime pie.
I also got to have a sweet phone date with my best friend Paige. I MISS HER!!
I am off all weekend from work! YAY!! Andrew and I have plans to go for an early morning walk/run with Bizzle and then who knows.

Bonjour mon amis!! Hope everyone is well. I am EXHAUSTED. Just finished eating and I am ready for bed for sure. But I thought I’d come say hi first Boring short little post because I worked today….
oooh I know it looks like a burger. Second attempt at the breakfast cookie and it still looks like crap. I even tried warming up the flax seed meal and water a bit to make it sticky like google told me. It’s getting closer. Maybe the third time will be the charm It still tastes like a dreeeam. I had half a cara cara navel on the side.
Grated raw beets on organic greens, pumpkin seeds, red onion and raspberry vinaigrette. I had made some orange cumin vinaigrette but it turned out plain and naaasty.

I had a super great walk date today and I am sooo glad that we went!! Thanks Brig!! 30 ish minutes of walking in the sun was definitely better than sitting on my ass for another hour
Andrew had a meeting tonight so I came home and did 25 minutes on the treadmill. AWESOME. Then I got started on supper! We had roasted vegetables with arugula pesto penne. Want the recipe?? Here ya go!! You can modify to your taste of course!
1 1/2 cups arugula
3/4 cup spinach
3/4 fresh basil
2 cloves of minced garlic
1/4 cup walnut pieces
2 tsp lemon juice
3 tbsp extra virgin olive oil
1/4 soy parmesan cheese (or reg parm cheese)
Put 1 cup arugula, 1/2 cup spinach, basil garlic and walnuts in food processor. Blend until mixed. Add remaining greens and cheese. While machine is blending, add lemon juice and oil. Add some salt and pepper. For the vegetables, just toss with some EVOO, salt and pepper and toss on the bbq for about 15 minutes (make sure to watch so they don’t burn!!). Toss penne noodles with a bit of pesto and vegetables. Mix up. Save some pasta water to add if you need to thin in out. VOILA!
He added one turkey breast and goat chedda. And broiled.
Ahhh okay. Tomorrow I have a lot planned and I hope to get it all done! I reeeeallly want to read your blogs and make some wonderful green food for St. Paddy’s Day. It’s also Raw Food Long Change!! Can’t wait to see you back here tomorrow!! Sleep tight!!
Hi hi hi! Was today a gggggreat day or what??! Mine was shaweeet! It was so warm here today! And I got breakfast
on the couch in bed! Andrew brought me home a “healthy scone”. It had dates, flax seeds, whole wheat flour, raspberry jam, coconut and lots of other things. Kind of tasted like the molasses cookies my mom used to make. I dunked it in a mug of Canadian Vanilla Maple tea. It was aweeesooome and I looooved it.
I was on the phone today for prob an hour (after getting hung up on after the first 20) and boy was I sour! I reeeallly dislike crappy customer service. Rrrrr. Oh well. My day definitely got better after Andrew went and picked up my TREADMILL!!!! SOOOO EXCITED!!! I ended up getting a different one then we initially looked at and I am so happy that I did. I am triple times pumped to use it. SUPER YAY!!
After thaat I went wedding dress shopping with two of my girlfriends. My friend Jaime is getting married this October and we have to find her a dress! We went to three different places today and she tried on a ton of dresses. But I think she has it narrowed down to two, so that’s good. I wouldn’t even know where to start with dresses. They all look the same!! Haha I want something incredibly unique. And modern. And me. Possible? I hope so. But that’s not for a loooong time
I got home from dress shopping at about 5 pm and was STARVING!! Skipping lunch is never a good thing. I munched on a bunch of these beauts with some hummus
I tried to make these in my dehydrator once but they turned out HARD AS A ROCK.
Last night I promised you the recipe to my lasagna so here it is:
1 grated carrot
1 garlic clove finely chopped
1/2 onion chopped
1 can of petit cut tomatoes
5-10 mushrooms, sliced
1 zucchini, sliced
1 yellow squash, sliced
oregano, red pepper flakes, pepper
3 cuts of spinach
whole wheat lasagna noodles
dry curd cottage cheese
1/2 cup goat chedda
Preheat oven to 375F. Cook the lasagna noodles according to package. If you’re using a Pyrex bowl like I did, I only cooked about four noodles and cut them to fit the bowl. You can also use a regular sized lasagna dish. Just change the measurements accordingly. Cook the garlic and onion on medium heat in some olive oil until the onions are clear ish. Add mushrooms and carrots and cook for about 3 min and and then add the zucchini and squash. Saute for a couple of minutes and then add the tomatoes and spices. Bring it to a boil and then simmer for 10-15 minutes. Meanwhile in a different pan steam the spinach until wilted. Wait until cool and then squeeze all the excess liquid out. When everything is finished, start assembling the lasagna. Put a little layer of sauce on the bottom, top with two cut noodles, some cottage cheese and then spinach. Repeat until you get to the top and then top with cheese. Cover with tinfoil and cook for 55 minutes. Put on broil for about 5 minutes until the top is golden brown. Let stand for 5-10 minutes. Or until you just can’t wait any longer Eat out of the bowl like a monster….or put it on a plate like a normal person lol.
Suppa tonight was pita pizzas! My fave. These are so good and so versatile. We just use whole wheat pitas with some pizza sauce and spices and whatever toppings you like. Mine had broccoli, mushrooms, pineapple (ALWAYS), red pepper and onion. And goat chedda. Obvi. Ander’s had pepperoni, mushrooms, red pepper onion and goat chedda. I also had some sauteed rainbow chard with organic garlic and balsamic vinegar on the side. I pretty much had my dessert with supper because we made a smoothie too. Another strawberry awesomeness. Recipe? Okay, here you go
Strawberry Bliss Smoothie
1 1/2 cups frozen strawberries
3 freshly squeezed orange juice (or whatever you have)
2 mini yogurts (I used Stoneyfield Organic – 1 peach and mango & 1 pomegranate and blueberry)
1/4 cup of almond milk
1 tsp xanthan gum (optional but totally makes it 100% awesome)
Put everything together in blender and blend errr up. Makes two servings. Add more orange juice or more almond milk if you don’t like it as thick.
So great. I love meals like this. Random but so satisfying. Now A-gel and I are just watching SNL. I’m drinking sleepy time tea and am waiting for some bananas to freeze. I seriously can’t get Angela’s Engergize Me Creamy Fruit Dip. We are a match made in heaven. For reals.
Oh em gee did anyone watch ANTM last night?? It was crazy town. Makeovers already!!! And a naked photo shoot?? My head almost exploded. Can’t wait until next week.
