Happy long weekend!!
Did you guys miss me??
I sure missed you
Three night shifts make it a little bit hard to blog though!
But it didn’t stop me from taking lots of pics!!
Thursday breakfast
1 hemp plus waffle, 2 scrambled egg whites, maple syrup and organic ketchup. With 1/2 an orange on the side.
Lunch
Salad with spinach, asparagus, potatoes, onions, feta, and hummus. Small bowl of butternut squash soup.
It rained almost all day on Thursday. And then it started to hail!
Those vehicles had to pull over because it was coming down so hard! Lol and some kid on a bike got pelted! I felt so bad for him!
Supper
Mixed organic greens and arugula, fishy sticks, avocado, goat chedda and red peppers.
The dressing was HEABs faaaaabulous hummy dressing with some relish mixed in. So gourmet
We had two birthdays at work this week! So we celebrated on our first night shift!
We had rhubarb crisp, brownies and vanilla ice cream.
My plate:
Friday breakfast
Scottish oats with almond cashew butter, strawberries, granola. YUUUUUM!!
Lunch
Mountain wrap with amy’s veggie burger, spinach, cucumbers, pineapple and hummas. Snap peas and butternut squash soup, too.
Supper
Whole wheat bow ties, organic tomato and basil pasta sauce with broccoli, garlic, mushrooms and edamame beans.
Topped with nutritional yeast.
and for a snack I took 1/2 an orange, some strawberries and cherries.
I got called in for overtime on Saturday night and I didn’t have any time to eat breakfast. So I made a lunch/supper combo
Spinach with leftover pasta, avocado, cucumbers, red peppers and mushrooms.
The hummy mustard dressing with relish.
Andrew’s cousin came over for supper and brought an awesome tofu dish and Andrew made a ginger stirfry.
This was sooooo goood!! Tofu and I aren’t always one, but this was frickn’ awwweseome.
I also made some more muffs for the work peeps!
The platoon I worked with last night is the best!! If I had get transferred to a different shift, I would definitely want to go there

We had kind of lupper with my parents today who are in the city for my aunt and uncle’s anniversary. We went to Las Palapas again and it was really goood. I am just starting to get hungry now and it’s been about 4 1/2 hours and Andrew is making french onion soup
There is a few things that I want to talk about tomorrow so PLEASE COME BACK!!
I am trying to channel SUMMER over here even though it has been raining for the past couple days!

Hellllooo monsters! TGIF hey?! I am blogging from my bed at my parent’s house right now woop woop!! I ♥ being at home. Sorry about my lame ass post last night. Didn’t realize that I don’t make much sense at 330 am! I’m also sorry for not posting pictures of the yam falafels! WTF, I know. I didn’t say they were god pics but here they are anyhoo
and here it is all wrapped up
Inside this beaut was some organic greens, tzatziki, and tomatoes. And falafels obvvviously. While I was busy being a bad blogga, I forgot to post pics of the finished (NOT over dehydrated) lizard skins.
Yes it looks like someone crapped orange on them. It makes them that much more awesome.
I probably forgot a few more pics in there somewhere (possibly work lunch x2) but I’ll make it up to you with a recipe or two. Happy?
Bruschetta
3 tomatoes (I used red, orange and yellow)
2 garlic cloves, minced
couple leaves of torn fresh basil
sea salt and lots of black pepper
tsp extra virgin olive oil
1 1/2 tsp balsamic vinegar (optional)
crunchy bread (I used a garlic loaf)
goat chedda, grated
Cut up tomatoes and mix with garlic, basil, salt and pepper, oils (if using). Toss until just mixed. Throw in fridge for 15-30 minutes to let everything blend together. Toast the bread, top with tomatoes and cheese and broil. I had two bigger slices for dinner or you could also make lots of little ones for appies
I guess I won’t be posting the recipe for the falafels because I just followed this recipe this time. I left out the bread crumbs, used almond milk and added a few different spices. Definitely fun to play around with.
Breakfast this morning was a simple egg white on a flax bun smothered in the hot jalapeno mustard and dipped in organic ketchup. I give it a 2 out of 10. That mustard is retarded.
I drank a black coffee on the way to Nips and when I got here I was a starvin marvin. Made spanish rice from a box. You bet.
Recognize the bowl?? All my friends had these growing up, too. Did you? Please tell me what they are called.
I also made another protein muffin thing. This time with chocolate protein. And cashew butter. No picture but I’m sure you can image how great it was
When I come home I feel so spoiled. Other than spending time with my fam, both my brotha and my motha are GREAT cooks!! (My dad and I are GREAT eaters hehe). This was what was for supper 2nite.
Gahh! Greatness. Brown rice pasta with my mom’s pasta sauce (zucchini, tomatoes, mushrooms, celery, etc.), vegetables with buckwheat, and spicy confetti salad from Company’s Coming Tonight Magical Meals on Short Notice.
I had a piece of this and black current tea while I got schooled in cards.
Date cake/matrimonial cake or whateves it’s called. It was sure swell. Beasley is trying so hard to play with my kitties. Matty hates him but I think he’s growing on Gucci.
