It’s already 11:45pm and I’m just posting now. ARG.
Damn being a night owl.
I did have a really lax day though (prob not the best idea when we need to be moved out of our house in 5 ish days!!) but it sure felt good
I woke up at the crack of 10am and got right to lurkwork.
Yes that’s right. I named my addiction. Sounds important now, yeah?
While I was working I slurped on a smoothie.
1 cup almond milk
1 frozen peach
1 scoop of vanilla isoflex
2 ice cubes
I bookmarked about a 1000 new recipes and got the googs down to about 700. Wooop!
Just when I planned to take Beasley out for a jog it started to rain. Saskatoon weather is crazy lately! Rain, sun, rain, rain, rain, rain. COME ON MOTHER NATURE!!
Instead of working out I decided to get started on lunch instead.
Healthy Garden Potato Soup
1 1/2 tsp extra virgin olive oil
1 shallot, diced
1 bulb of fresh garlic, minced
1 cup of sliced carrots
6 large stalks of rainbow swiss chard (spinach, kale or green beans would work too)
1 lb of new potatoes, quartered
2 cups of veggie broth
1/2 cup water
3/4 cup almond milk (or regular milk)
1 tbsp fresh basil, torn
salt and pepper
Heat olive oil over medium heat and add shallot and garlic. Cook for about 3 minutes and then add carrots and potatoes. Cook for about 1 minute and then add broth, water, salt, pepper and basil. Bring to a boil and turn temp to low, cover and simmer for 15-20 minutes, until veggies are soft. Add in chard during last 5 minutes. Pour half of soup into blender or food processor and blend until smooth. Pour back into pot. If you don’t like your soup chunky, blend the whole batch of soup. Top with goat chedda, more pepper and some hot saucce if you’re so inclined.
My fave thing about this soup was that everything came from either my mom’s garden or the farmer’s market.
Oh, and obviously the goat chedda.
The rest of the afternoon was spent mindlessly looking through cookbooks and mags, trying to figure out what to take and what to toss. I packed one box. Ha. But I did get all the laundry finished
When Andrew got home from work we went and picked up a Magic Bullet so we can still have smoothies on our holiday.
I would love to take the Kitchenaid but she’s kind of a husky beast. Bullet is a little more practical.
Ander made supper while I watched Pretty Little Liars.
He had a burger and smoothie (obsessed much?) and I had a gigantic salad with organic mixed greens and kale from ma mama’s garden, grilled salmon, kamut and spelt prepared salad, sliced pickles and cucumbers and topped with raspberry vinaigrette and sunflower sprouts.
Need to learn how to make kamut and spelt salad ASAP.
I’ve been snacking on some cherries
and a piece of toast with raspberry jam and earth balance.
That about brings us to right now.
My eyes are closing again as I’m typing so like ushe, I’m off to bed! (Well, check facebook and email first of course )
On the food agenda for tomorrow ~ these beautiful crepes! Not sure if they’re going to be for breakfast or lunch yet.

Hola monsters! Happy Friday!! We woke up to SNOW this morning and winds blowing 94 km/hr! I thought I was going to blow away walking from my car to the door! NUTZO!! Sorry I didn’t post yesterday. I had such an awesome day with my mom and was totally tuckered out after she left. I wish she could of stayed longer though! xx
Backpeddle to yesterday. I got up sSsSsSuper early to do our recycling. We have curbside recycling and it comes every two weeks. And we always have baaaags of plastic. Totally crazy how much you can actually recycle.
My mom helped me and it took us about 45 minutes to get it all organized and out. I was soo hungry so I made two egg whites with a laughing cow and a sliced pear.
After breakfast my mom and I headed out to Costco. LOOK WHAT I GOT FOR EASTER!!!!!
Yes oh em gee my mind is blown. I am just elated. It matches the Kitchenaid food processor they gave me for Christmas!!! I have wanted a Kitchenaid mixer for A LONG time now and weeeooow!! Thanks mom and dad!!!! The only problem with it is that I don’t know what to cook in it first LOL
My mom also spoiled me with a new pan
And tons of groceries. I am SO LUCKY. We even got a big jar of almond butter for $5.00!! Unheard of haha.
Okay. Totally stop what you’re doing now and focus on what I’m going to show you. THIS IS A FOOD REVOLUTION. For me anyways Probably just a new-to-me food but I am totally and utterly in love.

AMAZING!! Get used to seeing these around here oh, probably everyday! (if not at every meal lol). Moving on……
After Costco and another stop, we were hungry hungry hippos. We wanted something quick and close. Enter Chili’s Restaurant. I had never been to a Chili’s and had never had any desire to go to one but it was so close! LAZY DRIVING FAIL. I ordered the grilled salmon caesar salad with a side of seasonal veggies mixed in and the dressing on the side. Riiiight. Their idea of seasonal veggies are shredded carrots and raw broccoli. E for effort. The salmon wasn’t half bad. My mom didn’t mind the sandwich she got ( the cajun chicken) but we both felt that there was nothing special about our meals. I just prefer to eat at home
After mi madre left last night Andrew and I decided to use the new pasta we got. I called it the planes, trains and automobiles pasta. I am such a sucker for pasta shapes.

I did not use enough water and the pasta turned out NAAASTY. Like a sticky gluteny mess. grosss. I had to leave the kitchen and let Andrew finish supper. And it did a great job! He fried some leeks, mushrooms and red pepper, mixed it with pesto and new shell pasta and then baked it in the oven with some goat chedder.
Added a salad to mix with on the side with tomatoes and cucumbers. I barely made it past supper. I was exhausted! More than exhausted. Kaput. All the way until 4:45am when my alarm went off.
breakfast was a weird mess but it worked. 1/3 cup oatmeal, 2/3 cup water, chia seeds, sliced pear, raisins, cashew butter, hemp hearts, honey and new jam. Not just any new jam. This new jam.
It’s niiiiice. Especially on oatmeal.
I packed a pretty simple lunch for work today. New wrap with mustard, hummus, mushrooms, peppers, spinach and sprouts. I forgot to take a pic before it was all wrapped up. oops!
2 carrots and a handful of green beans, steamed
chopped up dragon fruit
and a clementine
For extra snackies I brought Annie’s chocolate bunnies and organic corn.
I ate every single last crumb. Plus a handful of trail mix. Plus a crap ton of water. 7 Siggs full!! Heck yes.
I had a craving for mushroom gravy so bad tonight. Do you ever have cravings so bad that you just HAVE to give in?? I improvised and made a new version. With laughing cow of course haha, mushrooms, almond milk, chives, pepper, pink himalayan salt and xanthan gum.
I also had a piece of cod with chili powder and paprika, baked on parchment paper for 20 min and steamed brussel sprouts with mango salsa ( from Kristi) and stoneground mustard for dipping. It was out of this world. Seriously. I’m already thinking about how I can have it again tomorrow.
Any ideas of what I should make in my new mixer??? I have been thinking about chocolate chip oatmeal cookies or something along those lines. I’ll take any suggestions though!!!
Time for bed! I work two night shifts and then I’m on days off!!! Love it. I hope to try out some new recipes soon!

Hey guys! Happy hump day! I was home from work sick today and am just starting to feel better. I started to feel icky last night after supper and when I got to work this morning it just seemed to be getting worse. I didn’t feel like I had the flu, I just felt off. Not me. So I came home, took some Super Orange Emergen-C and had a loooong sleep. I woke up, had a little bite of lunch and fell back asleep. Obviously my body needed it. I’ve been drinking lots of tea today and Andrew made supper with lots of ginger to help with my nausea. Feeling A LOT better now
I promised a different breakfast today and I didn’t lie…
Gobbled this mess up. Was 2 egg whites and 1 egg. Goat cheese and raspberry jam. So great. I had packed this for lunch
Lunch was supposed to be a sundried tomato with more goat cheese, roasted veggies and radish sprouts, oranges, leftover salad, granola bar, protein muffin with cashew butter and cottage cheese. Lunch ended up being just the wrap, honey lemon tea and another nap.
We had an early dinner tonight and it was excellent. Brown rice and veggie stirfry.
Recipes pour vous
Orzo Salad with Chickpeas and Dill
(Pretty sure this recipe came from Cooking Light)
1 cup uncooked orzo
1/2 cup thinly sliced green onions
1/2 cup feta
1/4 cup chopped fresh dill
1 can chickpeas, rinsed
1 1/2 tbsp EVOO
1 tbsp water
1/2 tsp salt
2 cloves of garlic minced
lemon juice to taste ( approx 1 lemon)
Cook pasta, rinse with cold water and set aside.
Combine pasta with onions, cheese, dill and chickpeas in a large bowl.
Combine lemon juice and remaining ingredients in a small bowl, stirring with a whisk.
Drizzle over pasta and toss to coat.
Feta, Spinach and Pine Nut Stuffed Focaccia
1 recipe focaccia bread
1 tsp olive oil
1/2 a red onion, chopped
3 garlic cloves, minced
Lots of spinach (6 cups?)
1/2 cup feta
handful of pine nuts
2 tbsp lemon juice
salt and pepper
2 tbps almond milk
1 tbsp parm cheese
Preheat over to 375F.
Heat oil in a pan and add onion and garlic and cook until onion is clear, about 3 min. Add as much spinach as you can into the pan and stir until it wilts. Add the rest of the spinach and repeat. Take off burner and stir in feta, pine nuts, salt and pepper and lemon juice.
Place focaccia dough on a baking sheet lined with parchment paper. Spread it into a rectangle ish shape and then put spinach mixture lengthwise over half of dough, leaving a little border. Fold other half of dough over filling; press edges around to close the bread up.
Mix milk and parm and brush over focaccia. Cut a few diagonal slits across.
Bake for 20-25 minutes until brown on top.
Well there you have it. Starting to feel crappy pants again so I’m going to join my puppy and hit the hay. Take care out there!
