How was your Sunday??
Mine was quite productive. Got a lot of things crossed off the to-do list
I started off this morning with scottish oats! Shocker.
The real shocker was that Andrew had oats too! He never eats the same breakfast as me.
He made his plain and topped it with organic maple syrup (another first for him) while mine had the usual suspects of
1/4 cup scottish oats
1 1/4 cup water
1/3 cup almond milk
1/2 tbsp chia seeds
1/2 smushed up banana
dash of cinnamon
I did mix in an egg white at the end though and WOW, talk about F-I-L-L-I-N-G.
Topped with organic raspberry jam, cashew almond butter, granola and more almond milk.
After breakfast Andrew and I split the to-do list in half and got to work.
Together we cut the lawn, did ALL the laundry, organized our recyclables (which we have missed for the past month and = a huge mess), cleaned the house, and made a meal plan + grocery list.
Then it was time for lunch!
I was still full from breakfast so I decided to make a smoooothie.
Well, I tried to make a strawberry version of the faux frosty but it didn’t quite make it to that level of greatness.
1/2 cup frozen strawberries
1 cup almond milk
1/3 cup of water, optional (I needed it to get everything movin’)
1/4 tsp guar gum
1/2 tsp xanthan gum
1/2 tray of ice
1/2 scoop vanilla protein powder
I ate this bar on the way to the grocery store
I love these bars! It has just the right amount of nuts and seeds and gooeyness.
Tonight’s supper was really really good!
I used 2 recipes out of the Clean Food cookbook and they turned out delicious. GO BUY THIS COOKBOOK!
I made the black bean patties and pineapple guacamole.
grilled corn on the cob with chili powder and baby potatoes with Earth Balance and fresh dill on the side.
I have left over burgers and salsa so you’ll prob be seeing them again
After supper we took Beasley outside to play and then I did the 30 day shred level 2. I was a sweatmess and it was great.
I snacked on a yog mess with a mexican mango, millet puffs and a couple of non-dairy chocolate chips.
Bowl licked clean while I got some blog lurking done.
Andrew and I almost planned our entire trip tonight and I couldn’t be happier! LOTS of fun things planned!
Hope you guys had a great weekend and are getting lots of zzzzzzzzzs for the new week!
I just love this quote. Totally makes me smile
Today you are you, that is truer than true.
There is no one alive who is youer than you.
Hey!! Sorry again for my MIAness.
Computes and I have been having a little break.
Break was obvi short lived, but I am working night shifts now…so you know the deal.
I’ve decided to bore you to death with pics of the same breakfast I have had for the past 5 straight days. Scottish oats and I have been having a seeeeriously long love affair. Time to take a break I think.
oats by the computer
with granola, crofters jam and a blob of almond hazelnut butter
oats on the coffee table
swirled with crofters jam and almond butter
same toppings as before.
Soooo moving onto nonoatmeal meals…..
lunch on thursday was a kale salad with grilled corn on the cob, baby cucumbers, avocado, goat chedda, pickles and a bunch of other stuff. Massaged into the kale was some roasted red pepper dressing and ranch on top.
I was faaamished when I got home from work and luckily I have a frickin awesome other half. He made me curry for supper!! His very own recipe he says. I know that he used cauliflower, peas, onions and almond milk with garam masala, curry powder and cayenne but other than that I have no clue what was in this.
I also had a side of brown rice
For dessert I had banana ice cream. I’m not sure where I first got this recipe from (I’m about 98% it was from Gena’s amazing blog) but I make sure to ALWAYS have frozen bananas now.
I mixed one banana with a tsp of almond butter and a tbsp of chia seeds.
More granola went on top.
Yesterday I had a lunch date and forgot my camera I swear if I had the big honkin’ photo geek camera that I want I would never forget it at home. One day.
Supper last night was leftovers/clean out the fridge night.
leftover curry, chili and with half an Ezekiel english muffin with raspberry jam and a laughing cow.
This was definitely the highlight.
Today we went to the farmers market!!! YAY!! It was awesome. SOMEONE forgot her camera again though. Jeeez. We bought lots of goodies and had a little snacker plate from a new cafe to the market. I got roped into buying some nuts that I couldn’t even test myself because I was wearing my Invisalign braces. The salesman was BOLD! He kept making jokes about “his nuts”. It was funny but after a few too many nut jokes I almost starting feeling uncomfortable. So I bought the stupid nuts. Damn. I need to learn to say no.
woop woop! Market loot.
homemade hot salsa
organic truffle oil
marinated veggie salad
raw goat cheese
I have looked every where in the city for raw goat cheese. Insanely excited.
Boo yah! We had to go to the Bulk Cheese Warehouse to get it but I don’t mind. I love finding new cheeses. Goat cheddar is definitely my favorite. Or applewood smoked cheddar. Yuuuum!
Andrew and I took the pup for a looong walk when we got home since it was so nice out. And then I came home and did my usual 20 minute HIIT on the treadmill.
I tossed my marinated veggies on some spinach and added 1/4 of an avocado for lunch.
Sorry this post is crazy rushed but I still have to shower, make supper and get my ass to work for 7pm. And it’s almost 5pm. So much for a nap!!
Byeeeesss!! Hope you are having a super fabulous weekend!!
Can’t wait to catch up and read some blogs on Monday when I’m on days off
Smile of the day
Happy long weekend!!
Did you guys miss me??
I sure missed you
Three night shifts make it a little bit hard to blog though!
But it didn’t stop me from taking lots of pics!!
1 hemp plus waffle, 2 scrambled egg whites, maple syrup and organic ketchup. With 1/2 an orange on the side.
Salad with spinach, asparagus, potatoes, onions, feta, and hummus. Small bowl of butternut squash soup.
It rained almost all day on Thursday. And then it started to hail!
Those vehicles had to pull over because it was coming down so hard! Lol and some kid on a bike got pelted! I felt so bad for him!
Mixed organic greens and arugula, fishy sticks, avocado, goat chedda and red peppers.
The dressing was HEABs faaaaabulous hummy dressing with some relish mixed in. So gourmet
We had two birthdays at work this week! So we celebrated on our first night shift!
We had rhubarb crisp, brownies and vanilla ice cream.
Scottish oats with almond cashew butter, strawberries, granola. YUUUUUM!!
Mountain wrap with amy’s veggie burger, spinach, cucumbers, pineapple and hummas. Snap peas and butternut squash soup, too.

Topped with nutritional yeast.
and for a snack I took 1/2 an orange, some strawberries and cherries.
I got called in for overtime on Saturday night and I didn’t have any time to eat breakfast. So I made a lunch/supper combo
Spinach with leftover pasta, avocado, cucumbers, red peppers and mushrooms.
The hummy mustard dressing with relish.
Andrew’s cousin came over for supper and brought an awesome tofu dish and Andrew made a ginger stirfry.
This was sooooo goood!! Tofu and I aren’t always one, but this was frickn’ awwweseome.
I also made some more muffs for the work peeps!
The platoon I worked with last night is the best!! If I had get transferred to a different shift, I would definitely want to go there
We had kind of lupper with my parents today who are in the city for my aunt and uncle’s anniversary. We went to Las Palapas again and it was really goood. I am just starting to get hungry now and it’s been about 4 1/2 hours and Andrew is making french onion soup
There is a few things that I want to talk about tomorrow so PLEASE COME BACK!!
I am trying to channel SUMMER over here even though it has been raining for the past couple days!
I hope your weekend has been filled with sunshine!
See you tomorrow!
