Good evening! Everyone have a great day? Mine was dece. I just got back from a run with Beas and wow running outside is totally different then running on the treadmill. I got a cramp after like 3 minutes!! Lame balls. I only ran a few blocks and was sooo tired! DEFINITELY gonna need to run TONS and TONS more before I could even think about doing a marathon 🙂
Eats are boring today! Sorry! But I did wake up to this nerd:
1/3 cup oatmeal, 1/3 cup almond milk, 1 tbsp chia seeds, coochie-coo banana yogurt, and cinnamon. Plus toppings. Andrew had another bowl of oatmeal, too! Yippee! Two healthy breakfasts in a row. Now were out of oatmeal haha.
For lunch I packed a salad (organic greens and sprouts),
the artichoke/chickpea/veggie mess from yesterday to go on top,
fresh pineapple slices,
and apple slices with cashew butter and an orange.
Work was busy busy as usual today. But we did have a presentation for an hour after lunch so it made the afternoon go by a lot faster. Only one more day shift!
Suppa was ready for me when I got home. WIN! Andrew made veggie soup that was superb. I have no idea what was in it except for the obvious turnips, carrots, celery, red pepper, onions, and broccoli.
and I made the straangest sandwich. But I’m a strange girl so that’s okay. It had ricotta cheese, 1/4 smashed avocado, roasted veggies and sprouts and it did the trick.

So yeah, that’s it for tonight. Lunch tomorrow is going to be rando because I am going to make it in the am. I’m now going to read YOUR blogs (YEEAH) and watch ANTM! Sleep tight monsters!
Hello lovelies!! Another beautiful day, yeah? The title of this post may have brought you back a few years to the kissing game 7 minutes in heaven (which I never played btw) buuut I am referring to my 11 minute straight run today!! B-b-b-booyah!! Awesomeness. I did a 5 minute warmup, 11 minutes of JOGGING, and then a 5 minute cool down!!! After my 45 minute walk with Mr. Beasley.
Breakfast this morning was a HIT!! Andrew liked it! And ate it all. YAY!! And he just ate it on the regular. No toppings at all 🙂 Mine was not so lucky lol
haha like the monroe piercing?? I totally added granola and cashew butter after of course 🙂
I had another productive day (weeeoh!) but I stopped to take a break for lunch. It was supposed to be the wrap from yesterday but I put it in the fridge last night -HUGE MISTAKE – and when I went to take it out, it shattered. Lesson learned. My fail turned into a win pretty fast though. I cut up some leftover veggies and an artichoke heart, mashed a handful of chickpeas, added some dill and a laughing cow and BAM! Lonchi. With the last of the pumpkin butternut squash soup.
Yay super YUM. You might not be able to tell by my awful pictures but it was AHMAZING.
Andrew is making supper tonight and stopped so I could take some pics.
Lasagna switched up made with broccoli and ricotta cheese. And carrots, peppers, onions, tomatoes and goat chedda of course 🙂 We are out of bread so Andrew made toasted garlic buns.
I had a salad with mine as well. I looove when my greens get all mixed up with other food. I’m defintely not one of those people who can’t have their food touching 🙂
We had chocolate pie again for dessert! I made a little one for me with a crust of walnuts and dates. I was missing some raspberries so I mushed up a few defrosted ones and poured it on top.
Andrew’s piece obviously looks waaay more appetizing than mine. Nonetheless I murdered my little piece 🙂
Sooo….back to work tomorrow. Yeehaw. We are having an appetizer night on our first night shift (Friday) and I still don’t know what to bring!! Any ideas??? I also still need song ideas too 🙂

Today was uber productive. I took Bizzle for a walk this morning, spent about an hour cleaning up his nasty winter poop in the backyard and cleaning out the flower beds, cleaned all the cupboards, organized a few, did all my laundry and made a raw chili wrap (it took soo long). That might not seem like a lot but I felt like I got a lot done. Hopefully tomorrow will be the same.
EATS today are as follows:
Overnight oats of 1/3 cup oats, 1 tbsp chia seeds, 1/3 cup almond milk, container of itty bitty apricot Yo Baby yogurt. Topped with granola, strawberries and cashew butter.
I found this recipe in the Raw Food Real World cookbook by Matthew Kenney and Sarma Melngailis. SO GREAT. This is my version. Hope you like it as much as we did!
1 cup fresh pineapple
3/4 of a small banana
1/2 cup strawberries
3/4 cup vanilla almond milk
1 tsp agave
1/2 cup blueberries
In a blender, puree all ingredients except blueberries until smooth. Pour out about half of the mixture into serving glasses, filling each glass about halfway. Add the blueberries to the remaining shake in the blender and blend until smooth. Gently pout the remaining blueberry shake over the pineapple-strawberry shake.
I found a new attachment on my mandolin and until I get my spiralizer, this will have to do 🙂 I mixed some zucchini with leftover red thai curry paste, a veggie burger and some mixed greens. I had a wrap with laughing cow on the side.
Look what we got yesterday!!
Young thai coconuts! YAY!! So many raw recipes are made with these and I couldn’t wait to crack into them. Well, turns out that one of them was rotten! BOOO! The flesh was a nasty purple color and the water was pinky. YUCK.
Here is the good meat
I mixed this with about 1/4 cup of water, 1 tbsp of chili powder, 1 tbsp psyllium husk and 1/4 of a tomato in my food processor until it started to conceal. I then poured it onto a Teflex sheet and thew it in my dehydrator for about 5 hrs.
I’ll be making a wrap with this tomorrow for lunch 🙂
I marinated some veggies in some italian dressing and some cuban seasoning for kebabs
sliced some potatoes with my new handheld mandolin, added some goat chedda and chives and baked for about 20 min at 400F.
and doused my fish with lemon juice and pepper.

After supper, Andrew had a request for chocolate mousse with tofu. My friend Jaime made it one night when we were over there for supper so after finding a recipe and running to the store, we came up with this:

Sup monsters! Can you believe that it is Sunday already??? The weekend went by so fast! Hope everyone had fun! I still have two more days off though 🙂 Booya.
I totally skipped breakfast this morning. I went to bed pretty late last night so I might have stayed in bed until 11:30 am!! Super sleeeper. It was awesome. I bummed around with Beasley while Andrew went to a movie and after about an hour I made this salad

My brother dropped off some sprouts he sprouted with the soup yesterday. I don’t know how he does it. I FAIL at making sprouts.
Anderr and I made a meal plan and a grocery list and went grocery shopping! My favorite thing to do haha. Our list was looong and when we got home I was starving. We bought some new gluten free brown rice that takes 50 minutes to make so while that was cooking I munched on some black pepper and olive oil Triscuits with goat cheese and mashed blackberries. Try it because you’ll love it 🙂
The rice turned out soo good! Cooked it a little too long (rice times are always effed up) but it was still really really good. I was lurking a lot of blogs last night and I found myself drooling over stir fried rice dishes. So obvi I had to make some today. I made stir fried rice and veggies with homemade red thai curry paste. AMAZING. I have never cooked with lemongrass before and it was surprisingly easy. Oh and I got to use the chopsticks I got from my friend Kristi for Xmas!
Stir Fried Rice with Red Thai Curry Paste
1/4 red onion
1 stalk of lemongrass, minced (directions found here)
2 red chili peppers
3 cloves of garlic
1 thumb size piece of ginger
2 tbsp tomato paste
1/2 tbsp cumin
1 tsp ground coriander
4 tbsp Braggs Liquid Aminos (or soy sauce or Tamari)
1 tsp cane sugar
1 1/2 tbsp chili powder
2 tbsp lime juice
1/2 tsp lime zest
2 tbsp water
Cook brown rice according to package directions. Put all ingredients in a food processor and blend blend blend until smooth ish. Heat a 1 tsp of oil in a pan and add about 1/4 cup of curry paste. Add vegetables and stir fry until tender crisp. Add rice and more curry paste to taste. Mix everything together, top with bean sprouts and serve.
I am craving that coconut icecream like crazy right now so I’m off to snack my face off! Let me now if you try this recipe! Sweet dreams and happy back to work day tomorrow!!
Hi! How is everyone?? Hopefully you’re having a really good weekend. Mine has been going just fine. Did you celebrate Earth Hour tonight?? We sure did! We shut all of our lights off, took Beasley for a walk (his 2nd one today 😉 ) and then came home, lit some candles and shared the So Delicious coconut milk vanilla bean icecream I bought the other day.
This is my third year participating and it just warms my lame little heart how many people do this. The Sydney Opera House and the Great Pyramids of Giza even shut off their lights!

What kind of things do you do to help the earth? We do small things everyday like use cold water to wash our clothes, use reusable grocery bags and sandwich bags, unplugging appliances when we aren’t using them, and recycling as much as possible! And in the summer we compost 🙂
Backtracking to yesterday.
Three egg whites, goat cheese, 1/4 of an avocado, chopped tomato, dill and an apple.
We had a popcorn night at work (cuz my new supervisor is so cool) and she brought her air popper, I brought some popcorn and another girl brought a bunch of popcorn seasonings. I OVERLOADED myself with delicious popcorn. It was crazy.
I only took one picture of what I took for lunch last night. I didn’t think you needed to see another bowl of potato salad or another wrap so I left them out. Andrew made a quesadilla and left me half to take to work. It was curry ish and awesome.
Work was busy busy busy last night!! Ugh. Sometimes I wish crime would take a vacay LOL. But then I guess I wouldn’t have a job, right? 😉
B-fast today was oatmeal with chia, raisons, blackberries, honey, quinoa maple cereal and almond milk. Weird, I know. I had a craving for all of those things and they tasted decee together.

I knew we were having pizza at Andrew’s brother’s house tonight so I had a small meal so I wouldn’t go overboard once I got there. My brother dropped off some soup he made – butternut squash, pumpkin, carrots, cloves and curry – and DAMN! Sooo yummy!! I had it with a smear of goat cheese and whole wheat wrap.
I still managed to have 2 1/2 pieces of veggie pizza 🙂
Time for bed! Or time to have another snack?? Hahaha probably a little bit of both. See you guys tomorrow!!! BYYYYYYE!!

Holla! IT’S FRIIIDAY!!! Awesome possum. I am up waaay too early and tonight is gonna be pretty painful! Haha but that’s nothing new. I had LOTS of eats yesterday aaaaaand…..drumroll please…..
I RAN FOR 10 MINUTES STRAIGHT!!!!
One whole mile! No stops! I know that might not be a big deal to most people, but I don’t think I’ve ever ran that long before. So proud 🙂 I felt so great after!! And I’m so looking forward to doing it again!
Now onto the foooods.
B-fast was a smoothie because I had a nail appointment and I had to mooooove.
I was lurking on the Living Harvest website and found this great smoothie recipe. I halved it.
Vanilla Strawberry Banana Smoothie
1 cup unsweetened almond milk
1 cup frozen strawberries
2 tbsp Vanilla Spice protein powder
Blend it and drink it.
When I got home I decided to make some Quinoa Protein Muffins found here. All I did was change the flava of protein. (No idea why I’m so into protein powder right now. Anything to help me stay fuller longer!)
My muffins did not turn out as well as I was hoping. Mine crumbled so I stuck them together with cashew butter to have as a snack at work.
While these were cooking I went and did my run 😉 Oh and because I had made a tons of quinoa, I made some of Angela’s maple quinoa cereal. Check it out riiiiight here!. I have actually made this three times now and burnt it everytime!! This was my best attempt yet though, ha.
I haven’t actually had any of this yet, but Andrew had it for breakfast (with almond milk I think) and he said it was gooood. Win.
I took Bizzle for a long walk and it went by so quickly now that I have new songs on my ipod. I hadn’t changed the songs in 2 years!! Shameful, absolutely. But I rock out now 🙂
I had eggs for lunch! I am so addicted I have been licking my plate clean for the last three days. I mashed some blackberries instead of using jam this time and IT IS DA BOMB. I also finished up the rest of the stuffed focaccia inards (spinach, red pepper, pine nuts, feta, onion) and a piece of Squirrley bread.
I totally didn’t do Raw Food Long Change. Deferred success. So I made orange and white potato salad. Another win.
Sweet Potato Salad
3 tbsp plain organic yogurt
1 1/2 tbsp low fat mayo
squeeze of lemon juice
1/2 tsp vinegar
1 tsp stoneground mustard
tiny bit of fresh grated ginger
salt and pepper
Use as much of everything to taste.You can’t really mess this up 🙂
I made a wrap using the leftover veggies from supper the night before. I just added goat cheese and sprouts.
Blue Lagoon smoothie is next. Or purple lagoon. Whateves. Sooo good. Same recipe as before, just subbed in a cup of Saskatoon berries that we picked and froze in the summer. Now, please don’t judge the fact that it’s in a jar. I had no to-go cup. I tried to pretty the pic up 😉

Hey guys! Happy hump day! I was home from work sick today 😦 and am just starting to feel better. I started to feel icky last night after supper and when I got to work this morning it just seemed to be getting worse. I didn’t feel like I had the flu, I just felt off. Not me. So I came home, took some Super Orange Emergen-C and had a loooong sleep. I woke up, had a little bite of lunch and fell back asleep. Obviously my body needed it. I’ve been drinking lots of tea today and Andrew made supper with lots of ginger to help with my nausea. Feeling A LOT better now 🙂
I promised a different breakfast today and I didn’t lie…
Gobbled this mess up. Was 2 egg whites and 1 egg. Goat cheese and raspberry jam. So great. I had packed this for lunch
Lunch was supposed to be a sundried tomato with more goat cheese, roasted veggies and radish sprouts, oranges, leftover salad, granola bar, protein muffin with cashew butter and cottage cheese. Lunch ended up being just the wrap, honey lemon tea and another nap.
We had an early dinner tonight and it was excellent. Brown rice and veggie stirfry.
Recipes pour vous
Orzo Salad with Chickpeas and Dill
(Pretty sure this recipe came from Cooking Light)
1 cup uncooked orzo
1/2 cup thinly sliced green onions
1/2 cup feta
1/4 cup chopped fresh dill
1 can chickpeas, rinsed
1 1/2 tbsp EVOO
1 tbsp water
1/2 tsp salt
2 cloves of garlic minced
lemon juice to taste ( approx 1 lemon)
Cook pasta, rinse with cold water and set aside.
Combine pasta with onions, cheese, dill and chickpeas in a large bowl.
Combine lemon juice and remaining ingredients in a small bowl, stirring with a whisk.
Drizzle over pasta and toss to coat.
Feta, Spinach and Pine Nut Stuffed Focaccia
1 recipe focaccia bread
1 tsp olive oil
1/2 a red onion, chopped
3 garlic cloves, minced
Lots of spinach (6 cups?)
1/2 cup feta
handful of pine nuts
2 tbsp lemon juice
salt and pepper
2 tbps almond milk
1 tbsp parm cheese
Preheat over to 375F.
Heat oil in a pan and add onion and garlic and cook until onion is clear, about 3 min. Add as much spinach as you can into the pan and stir until it wilts. Add the rest of the spinach and repeat. Take off burner and stir in feta, pine nuts, salt and pepper and lemon juice.
Place focaccia dough on a baking sheet lined with parchment paper. Spread it into a rectangle ish shape and then put spinach mixture lengthwise over half of dough, leaving a little border. Fold other half of dough over filling; press edges around to close the bread up.
Mix milk and parm and brush over focaccia. Cut a few diagonal slits across.
Bake for 20-25 minutes until brown on top.
Well there you have it. Starting to feel crappy pants again so I’m going to join my puppy and hit the hay. Take care out there! 🙂

I spent the afternoon reading some sweet snags from my brother this weekend
and lurking some pretty awesome blogs 🙂 After all that fun, I made supper! So exciting. Not that I had much to do as I had already made the orzo & chickpea salad last night. All I had to do was steam a few carrots, and broccolini and toast some Squirrley bread. Oooh la la.
Soo good. I love simple dinners like this 🙂
Oh! I almost forgot. I got new protein powder today…and had a protein muffin for my snackie with cashew butter and raspberry jammers.
Okay lovelies, I gotsta go. It’s sleepy time tea and off to bed!! Another work day tomorrow and tomorrow I WILL NOT BE EATING OATS for breakfast. Hi guys! Sorry no post yesterday but after I got home I just wanted to hang out with my boyss and relaaax!! I had such a good weekend at home, though! Just wish it wouldn’t have been so short!

My mom totally spoiled Beasley while we were there. She took him for walk/runs in the a.m. while I was zzzzzing and even picked up his poop! (She’s NEVER been a dog person). I loved it. She took him out in the afternoon if she was going outside and we took him for a really long walk one afternoon. My kitties were even getting used to him. One of them anyway 😉
When I got home I realized I was waaay to tired to cook anything so Andrew and I decided to order out. Shocking, I know. We hardly ever eat out! Maybe if we lived in a city where there were a lot more vegetarian/vegan options we would but for now cooking home is totally fine with me 🙂 We ordered from Las Palapas and my meal was suuper duuper.
I had the black bean and roast vegetable burrito with bean salad. GAH soo great. It had a kind of creme fraiche sauce on top of the burrito and it was deelicious!
I miiight have overloaded on popcorn after this. POPCORN MONSTER.
Today started off with an 8am orthodontist appointment. Not sure why I do that to myself. My last day off and I have to be up early! I decided that since I was up so early, I would get a lot done today. Ha ha ha. Not the case at all. I did eat breakfast when I got home
chia oatmeal with cinnamon and molasses. and a frozen raspberry or two. obvi the only thing I eat for breakfast is oats. maybe I could switch it up once in awhile yeah? haha.
I promptly fell asleep as soon as I put my spoon down. And woke up at nooon! Ahhhh, nothing better than a good sleep but JEEZ! Noon?! Whateves. I got up and took Bizzle for a walk and then came home and did some laundry, had a salad (with the leftover yam falafels)
and started making focaccia for tonight’s supper of stuffed focaccia with spinach and feta. I used this focaccia mix
I have never made focaccia bread before and this was really easy. After mixing it all up, I put it in a greased bowl for 45 minutes to rise. I cut it in two pieces – one for the stuffed bread and just a regular one. Spread it out into a rectangle ish shape, spread my innerds on, folded it up and baked it!
Here are the finished products:
YUM YUM YUM!! Andrew roasted some veggies for supper, too. Mushrooms, peppers, onions, asparagus, zucchini.
