How’s Thursday going for all of you??
Mine was juuuust right.
Minus the rain of course 🙂
Breakfast was lazy and simple.
A piece of toasted Big 16 bread with the honey, costers raspberry jam, hemp hearts and the last of the almond butter 😦
I’m not really sure how I feel about going back to store bought almond butter.
Hmmm…. project for tomorrow??
I have been working on a present for my friend Sheena’s baby shower for the past two days now, and am still no where near being finished.

I’m not really good with measurements though 😉
Andrew saw that I was working so hard [har har] so he went to Dad’s and picked up a pizza for lunch.
He bought Vicolo mushroom pizza for me and a chicken pizza for him.
It was tasted okay ish….just tons of calories.
I don’t count calories but 420 cals and 22 grams of fat per 1/3 of the SMALL pizza was just a little bit too much for my lunch.
No biggie. I had one slice and a side salad with cucumbers, chives and rice parmesan.
The rain stopped after lunch so I got to take Beasley for a walk.
He was ecstatic.
So was I.
I hate being cooped up when it’s crappular outside.
We only went for about 40 minutes and when we got back I got back to measuring and cutting and gluing.
I have had a crazy craving for beets and goat cheese lately so I gave in tonight.
Andrew BBQed two sliced beets with extra virgin olive oil and dill for moi while I
burnt baked some parsnip and carrot fries.
When the beets were done I made a HUGE salad with sliced red onions, cod, cucumbers, chives, red peppers, beets and goat cheese. Dressed it with lots of pepper, lemon juice, vinegar and more dill.
While I was waiting for the fries to finish cooking, I had a small bowl of Annie’s Whole Wheat Shells & White Cheddar.
I can only have a small bowl of Annie’s otherwise I will eat the whole box.
Literally. I ♥ Annie’s pasta.
After supper we watched The Fantastic Mr. Fox.
The movie is based on the book by Roald Dahl that I read in elementary school.
Andrew fell asleep, naturally.
I munched on this while
we I watched the movie.
Chopped kiwi, Good Karma mudd pie ice cream, and a carroat cake bar.
And now it’s time for bed!!
I have a lunch date tomorrow that I’m uber excited about and it’s also daaaate night.

Haha oh well, another excuse to stay in and be lazy today 🙂
I had lots of repeat eats for my night shifts so try not to fall asleep while you read this.
1/3 cup oats, 1/3 of each almond milk and water, frozen blueberries, chia seeds and topped with almond butter, raspberry jam and molasses.
b-fast burrito with 2 egg whiles, swiss chard, mushrooms, onions, red pepper, dill. On the bottom of the wrap was a laughing cow and hot sauce. Grapes on the side. Ballin.
Yes breakfast #3 looks identical to #2. I NEVER EVER have liked breakfast burritos but woke up with a craving for one 2 days in a row. Weird weird weird.
Lunch #1 was epic.
chopped cup kale, steamed broccoli, 1/2 cup brown rice and cheesy kale chip sauce massaged into the mess. The sauce is 1 cup of soaked cashews, 1 red pepper, 1/2 cup cilantro, juice from 1 lemon, 1/4 cup nutritional yeast, garlic clove, salt and pepper in a food processor. wwwwwwweeeeeeeee!
Its amazing. TRUST ME.
Don’t judge me.
Is MIA. Not sure at all…probably more lunch #1 and #2 har har har.
salad with cod, cucumbers, peppers, and rice parm on top. OF COURSE the hummy dressing made an appearance.
I also had a slice of The Big 16 bread with some Earth Balance on the side.
Ha this was the only picture I took of my pancakes! I was in such a rush to leave for work I guess I must of forgot to take an after picture 🙂

I stuffed mine with raspberry jam and used almond butter as the icing. YUM.

This is going to be a short little post for two reasons:
1. I’m exhaaaaausted.
2. I didn’t do any cooking today! Almost everything was made for me 🙂
BIG BIG work breakfast/brunch was uber delicious.
We had waffles, crepes, strawberries, bananas, hashbrown casserole, raspberry sauce, chocolate sauce, whipped cream, juices and chocolate cake for dessert.

Waffle with strawberries and whipped cream, crepe with whipped cream and chili flakes (so great!) and hashbrown casserole.
Chocolate crepe with more whipped cream, raspberry sauce and chocolate sauce and more casserole.
After I filled my face, I went home early!!
Lol I came home, Andrew and I had a nap and then made lunch.
Brown rice with roasted parsnips, carrots, onions and potatoes with Braggs and stuffed jalapeno peppers with feta.
Beasley felt he was lacking in the attention department so he chased me around doing this:
For supper we went to Andrew’s granny’s house and we had scalloped potatoes, an amazing salad, spring rolls and vegetables. And cherry pie with vanilla icecream for dessert.
Great food day, yeah?
Now that I’ve eaten myself into a food coma, I have to go to bed.

How’s your weekend going so far?
Last night was so fun!
Date night x 2 = success!
For our date night we went out for supper and then went to the movie Date Night.
This movie is soooo effing funny. Like OMFG.
I laughed and laughed and laughed and laughed.
And then I laughed about it today when I tried to explain it to everyone at work. 🙂
I’ll back it up though juuuuuust a tad and bring it back to breakfast yesterday.
I had originally made a breakfast cookie with the leftover nut pulp from my nut milk but just wasn’t feeling it.
I had two bites and put it back in the fridge for later.
This is what I had instead
One piece of The Big 16 spread with more of the maple almond butter and a mango.
It was gooooood.
And kept me full for a long time.
All the way through Dim Sum with Andrew.
Have you ever had Dim Sum?? Do you like it??
I used to before I stopped eating meat but now I just think it’s nasty.
I had a veggie pita on whole wheat with mushrooms, onions, green peppers, lettuce (gross iceberg), tomatoes, black olives, shredded carrots and honey mustard sauce.

and I had some Riceworks sweet chili chips with a LC on the side.
So as I said before, we went out for supper for date night.
We tried a restaurant neither one of us had been to and oh jeez.
Sushi and I are taking a little break.
It was all you can eat sushi so I ordered 3 different kinds of rolls. Keep in mind I thought they were the same size as the ones I made at home. WRONG.
I got 18 HUGE pieces of sushi.
And they charge you for leftovers.
I ate 11 whole pieces and then couldn’t get any snacks at the movie because I was so full.
New Island Sushi is only for people with HUUUGE APPETITES.
After the super movie we came home and hung out with the pup.

I had a little snacky after the movie.
Steamed green beans and a piece of toast dripping with almond butter, honey and jam.
Breakfast this morning was so rushed.
I was in such a hurry that I didn’t even have time to eat before I left!
Here it all is
Strawberry smoothie with fresh orange juice, toast with almond butter, 2 salads, 1/2 an orange and some grapes.
Salad #1 had organic greens, cucumbers, hot peppers, steamed beans and hummy sauce 🙂
Salad #2 had organic kale massaged with cheesy kale chip sauce. YUUUUM
Supper was a sneaky copy cat move.
I love Heather’s blog so much.
She seriously can’t do any wrong with food.
I made the spaghetti squash with mushroom gravy.
With my mushroom sauce instead 😉
And some baked beans on the side.
I haaave to get to bed now.
I think could fall asleep standing up right about now!
Tomorrow we are having a HUGE brunch at work with waffles, crepes, fruit, hashbrowns, you name it we’re eatin it!
I’m off early so I’ll be lurking some bogs tomorrow peeps!

I showed the Earth some love today by laying outside with Bizzle, soaking up some sun!! And…
I burnt my elbow.
And it huuurts.
Note to self: SPF elbows.
So Earth Day is my favorite holiday (almost) and I did not do anything spectacular at all.
I recycled like usual and that’s it.
Disappointing x 10.
Breakfast was 3 egg white, dill, tomatoes and a LC wedge with 1/4 of a leftover granny smith apple and
my new best friend the best almond butter in the world.
Ooooh, terrible lighting haha.
Lunch was a wrap with sweet potato, sprouts, cucumber and ranch. With a few grapes and hot peppers on the side.
Eaten outside on my beachy towel obvi.
I also read these two newbies while I was sunning myself
and played tons of catch with this kid
When I came inside I shared some yogurt with Beasley, whose appetite is also through the roof today.
Because Andrew had to get up at 4am for overtime this morning, he had a nap after work.
So I decided to make supper.
Well that’s nothing new but this time I didn’t get him to help 😉
I made a veggie thing out of one of my cookbooks.
Eeeehhh it looks really yummy but I wasn’t such a fan.
This was my favorite thing.
Stuffed avocado covered with salt and pepper pistachios and black sesame seeds with homemade garlic chili chips.

Andrew took me out for icecream for dessert!
We went to Jerry’s because I was craaaaving carrot cake gelato but no such luck.
So I had a scoop of skor gelato and pistachio fudge.
And now I’m stuffed and pooped.
Sorry not much talkie talkie about my day.
My stomach is probably going to explode right now.

Beasley and I went for a walk this morning with my friend Kristi and her parent’s puppy Heidi. So cute.
Beasley wouldn’t leave her bunny Jersey alone though!
Pretty cute but I felt bad for the little thumper being tormented by the little monster!
Before I left this morning I made some homemade Roasted Maple Cinnamon Almond Butter
You heard me right.
The bomb diggity recipe is riiiiiight here.
Store bought nut butters are dead to me.
This is aaamaaaazing.

It took about 30 minutes with my food processor and with all the stopping to scrape down the sides and taste test.
The finished product pics are actually from batch x2 (I gave the whole first batch to Kristi!) and next time I will be quadrupling the recipe 😉
I had to try out a teeny bit before we went for our walk.
With half a mango and a piece of The Big 16.
Breakfast looks quite similar to last nights snack…
half a mango, piece of Mack’s Flax, a laughing cow and Crofter’s Superfruit Spread. North America style.
After our walk I came home for some lunch.

After lunch I had plans to start making a baby gift from my friend Sheena (baby Tensley) but I fell asleep!
Loved nap time.
I only had about a 40 minute nap but felt way better after.

When Andrew got home from work we piddled around the house and played with Biz outside.
COULD NOT decide on what to have for supper.
I had too many cravings like usual so decided to have them all!
Steamed artichoke with lemons. Dipped in the hummy dressing.
I baked up some goat cheddar covered in italian breadcrumbs.
romaine lettuce topped with said grilled veggies, baked yam slices, baked goat cheddar and arty the artichoke.
Tomorrow is RECYCLING day!!
And EARTH DAY!!
All my recycling for 2 weeks.

Could you imagine all of this going in the garbage???
I could never go back to a life of not recycling 🙂
Just ooonne more little tid bit of my day.
Macadamia walnut hemp heart milk.
All nuts blended with some water and a pinch of stevia and then strained with a fine mesh strainer.
I mash the nut pulp with a spoon to get all the liquid out and then put it in the fridge to save for later.
And ready for drinkage.
Well not really.
I can’t milk. Even nut milks.
Call me crazy.
I just like to have it in my oatmeal and cereal and such. 🙂
I reeeeally need to get to bed finish watching What Happens in Vegas!! Hehe

I am so obsessed with this dressing. I want to put it on everything. Oh wait, I do 🙂
I modify it a bit and put in a squirt of stoneground mustard, tiny squirt of jalapeno mustard, spoonful of hummus and water to thin.

Spinach, romaine, coleslaw, spoonful of greek salad, shredded carrots, cauliflower, broccoli, tomatoes, black olives, nuts, feta, chives, edamame bean salad, chickpeas, and probably a million other things.
MEOW. This socks my rocks off.
I left it dressingless so I could add more of the mustard/hummus when we got home.
And had a 1/2 a baked yam with baked beans with lots of hot sauce and pepper.
There are also some missing pasta dishes in there too. Not sure where those pictures went haha.

So yesterday would have been my grandpa’s 87th birthday.
This is the first birthday since he’s passed away and I thought about him all day.
It was soo beautiful outside yesterday and I just know he would have had a great day 🙂
and here we are out at his farm around the same time
Ah I miss him so much. SO MUCH. He was the youngest 86 year old! He still flew his plane and climbed trees right up until he got sick. He loved showing us everything on his farm and taking us for walks through the trails. We were so lucky 🙂 🙂 🙂 🙂
So happy that I’m back!
I will be posting everyday again and I can’t wait to READ YOUR BLOGS AGAIN!!

Getting excited for the weekend?
I go back to work tomorrow so this post will be short and sweet so I can get to bed eeeearly 🙂
Breakfast was 1/3 oats, 1/3 almond milk, 1/3 water, chia seeds, raisons, almond butter and a chopped up granny smith apple.
The apple was crunchy and yummy.
I took Beasley for another loong walk today and I think this was the first day all week the sun came out.
When I got back I had to rush to my nail appointment so I didn’t get to have lunch! Oops.
Oh well. I now have highlighter yellow nails 🙂
I didn’t get home until almost 5 and I was staaarving!!
Super late lunch of half an apple and cashew butter and
I made the same egg salad from yesterday but put it on top of spinach instead of a wrap.
This is obvi a new fave.
Supper supper supper was a mish mash of everything I wanted.
Grilled cod with lime juice, paprika and chili powder.
Grilled caesar salad with fat free caesar, rice parmesan cheese, goat chedda and breadcrumbs.
And baked spinach and artichoke dip cups.
This was our first time ever grilled romaine hearts and WOW. Delicious. And so easy. (Says Andrew, he did the bbqing 😉 )
And the spinach and artichoke cups are uber low fat. Probably 60 cals ish per piece. I could probably eat a thousand of them.
They are tasteh!

I just finished eating my snack with a little piggy on my shoulder.
In my fish bowl went 1 1/2 pieces of carroat cake bar, strawberries and yogurt mixed with vanilla spice protein powder.
Don’t judge the color.
Now, time for bed!

Wednesday Hump Day!!
Did u have an interesting day today??
I sure DID NOT.
I got some new kitchen stuff (ramekins, napkins, mini spring form pan).
Took Bizzle for a walk.
Hung out with Andrew.
THAT IS ALL.
Hopefully things will be different tomorrow. It’s my last day off!!
I was late night snacking last night and this this combo
cottage cheese, almond butter, carroat cake bars
Eaten in my lap, where all snacks should be eaten.
The white bag with the hearts is my heat bag from my mom.
I cuddle up with it every night ♥
Breakfast. I was going to have waffles to take part in waffle wednesday but I am out of waffles.
And because I do not own a waffle iron, I decided to have pancakes again.
I wasn’t too upset 🙂
Same as yesterday except I actually followed the recipe correctly this time.
Apparently yesterday I mixed up the almond milk measurement.
It was all done correctly though today.
And they were amazing.
I added strawberries to the mixture and topped them with more strawberries and pineapple.
And dusted it with some coconut flour.
Lunch. Was a little bit later than normal but those pancakes are little protein monsters so I didn’t mind.
wrap with 2 hardboiled egg whites, jalapeno mustard, stoneground mustard, hummus, pickles, pepperoncino peppers, spinach, sprouts and avocado.
Supper was undecided until the last minute.
But I decided on pizza!
Crust was the same wrap from lunch.
76 calories and organic?? You can’t go wrong.
Toppings were organic pizza sauce, pineapple, broccoli, red onion, mushrooms and more pepperoncino. Goat chedda on top.
I rolled it up and ate it with some baked beans and a small salad.
I had only one snack today. Weird.

Another lap snacky.
Anywoo I’m off to bed!
Gonna check to see if I won some Kombucha!! (fingers crossed!!)
I promise there will be a WAY more interesting post tomorrow.
I have lots of ideas in my head it’s just hard to get them all down on

It was pouring rain here all day 😦 so there was no walk for Beasley. Just lots of indoor playing 🙂
I ended up having a wonderful snack last night.
I rolled it up and baked it in the oven at 400F for 15 minutes.
And topped it with the last of the coconut icecream that would not stay on the nanner.
The wrap flaked up like pasty and the banana was all smushy with the chocolate and almond butter.
It was GREAT.
Breakfast this morning was so so so phenomenal. x 10.
I followed her recipe exactly except I added about 1/2 tbsp more of almond milk and I defrosted some strawberries to put on top.
They are actually really mini but they kept me full for 5 hours!!
And because I like to copy everything Janetha does a day later lol, we celebrated national grilled cheese day today! We named them because we are geeks. We also had a side tomato/red pepper soup.
The Husky Kiwi
2 slices Squirrley bread
1 tsp hummus
2 fresh pineapple slices, thinly sliced
1/4 smashed avocado
lots of goat chedda
two sliced pepperoncinis
It got its name because when I lived in New Zealand I ate TONS of pineapple grilled cheese sandwiches. And I also gained about 25 lbs living there haha.
2 slices Squirrely bread
Earth Balance butter
thinly sliced red onion
Andrew set the sandwiches up. Cutieee.
Because it was a stay inside rain day, I decided to try out a new recipe.
I got it from the Whole Foods site but changed a few things. Including the name 🙂
CarrOAT Cake Bars
1 cup oats
1/2 cup chopped walnuts
3/4 cup whole wheat flour
1/4 cup coconut flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
2 cups grated carrots
1/2 cup pure maple syrup
1/2 cup unsweetened applesauce
1/3 cup unsweetened coconut
1 tsp vanilla
1 tsp chia seeds + 3 tbsp water to make a binder
Preheat oven to 325F. Spray a cake pan with olive oil.
Combine oats, whole wheat flour, coconut flour, baking powder, baking soda, cinnamon, ginger, coconut and salt in a bowl and combine. In another bowl mix together carrots, maple syrup, applesauce, vanilla, walnuts and chia seeds. Put dry ingredients in the kitchenaid and combine and add wet ingredients while its mixing. Pour into pan and bake for about 1 hour.
I got to use my new Kitchenaid mixer! (Technically I used it the other day, but it was a complete cookie fail)
I forgot to take a picture after but don’t worry, there is about 15 bars so I’m sure they will make an appearance a lot around here. I’ll prob have one after this post 🙂

Colored soy sushi wraps!!!!
GAH! I have literally wanted these for about 4 ish years.
The day has finally come.
Look at all the pretty colors!
And they are all colored naturally with either spinach, tumeric, sesame, or paprika.
Of course I haaaad to make sushi for supper tonight.
I used the yellow, pink and green ones tonight.
I can’t wait to try them all.
They were A LOT different than nori though.
They were so much harder to roll!
And so delicate when cutting.
Luckily Andrew came to my rescue and salvaged the pink roll.
I mutilated the green and yellow ones. Oops!
