Hey guys!!

Happy Monday!

I took an EDO last minute and am so glad I did! It was such a beautiful day 🙂

I got to catch up on some reading, cleaning and just relaaaxed all afternoon.

I got stung by a bee though! I am allergic to bees and last time I got stung I couldn’t see for a week! (The ugly proof is on my other computer.) I only swelled up for about an hour and that’s it this time. YAY!!

Last night we went bowling with my cousins! It was AWESOME! I bowled terribly but we went more for the company anyways 🙂

My cousin Kyle and his wife Robyn just got back from traveling and I loved hearing all their stories. Robyn took cooking classes in a bunch of different countries so next time they are in the city I’m definitely going to have to get her to show me a thing or two!!

I woke up this morning with a seeeerious craving for eggs benedict. I looove hollandaise sauce but don’t love how many calories it has. So I made my own healthier version!

Less than 250 calories! Compared to the usual 600-800 calories.

Skinny Benny

1 egg

1 piece of bread (or an english muffin)

3 pieces of swiss chard

2 pieces of Laughing Cow light cheese

1/4 cup + almond milk (or skim milk)

salt and pepper

Poach your egg. Toast your bread. Steam your swiss chard. Mash the Laughing Cow with the almond milk, salt and pepper in a small pan and heat over medium heat. It will thicken the longer you cook it. Add more almond milk until the sauce is a consistency you like! To assemble, put your toast down on a plate, top with the swiss chard and the egg and pour your sauce on top. Optional: Add hot sauce, lemon juice, salsa, or chives to the sauce or use different greens like beet greens, kale or spinach.

I’m gonna get a little off topic now but this is something that I have wanted to discuss on the bloggie for a bit now.

I want to make a point that I do not count calories. And I am definitely not on a diet. How I eat is a lifestyle. My lifestyle. And it works for me. I listen to my body and feed the monster when it’s hungry 😉 I follow a “Rainbow Diet” and love to eat colorful meals. I also eat locally and organically as often as possible. Gardens ruuuuuule and I am SO GRATEFUL for the portable one my mom made me! I don’t eat chicken, pork, or beef but do eat fish occasionally and I eat whole grains, eggs and dairy. And I LOOOVE smoothies. Especially green monsters! I try to show my body some love by moving and exercising daily and I love to sweat!!

Some examples of the “Rainbow Diet“:

Orange

orange peppers, apricots, carrots, pumpkin, oranges, yams, cantaloupe

Red

red peppers, tomatoes, watermelon, cherries, strawberries, pomegranates

Yellow

yellow peppers, bananas, squash, pineapple, onions

Green

peppers, spinach, kale, swiss chard, brussel sprouts, asparagus, avocado, kiwis, peas

Purple

eggplant, grapes, blackberries, beets, plums, onions, prunes

Big salads are also a HUGE staple in my diet. They are so versatile! I know you’re probably bored to death with seeing pictures of my big ass salads but I swear they are so awesome/filling I just can’t help it. I had a one again today 🙂

This one had:

organic spring greens, spinach and coleslaw mix

1/4 of an avocado

1/2 cup of brown rice

1/2 an apple

steamed asparagus and brussel sprouts

pomegranate seeds

a grated carrot

1 tbsp of goat chedda

1/2 tbsp of Danica’s sesame ginger dressing

1 tsp of ranch

blob of new hummus

I’m 99% sure it is made by the bakery in the local health food store. Regardless, I love the ingredient list and their cute little label

Because we don’t have air conditioning and the house is HOT, Andrew cancelled any oven use by me today.  (I did toast some pecans for some pecan butter while he was at work this morning though ;)) We decided to bbq but I wasn’t quite feelin’ the same old bbq food. I did some brain storming and decided to do a meal in a foil pouch. Easiest clean up EVER!

I had a picnic on the floor on my yoga mat. (Don’t worry, it’s clean!) My computer was in front of me but I got caught up watching Sister Act instead. Should I be embarrassed that I know the words to all the songs? Naaah.


Red Thai Coconut Foil Pouch

2 tsp red thai curry paste

1/4 cup light coconut milk

1/4 cup veggie broth

2 cloves of garlic, minced

1/2 cup couscous (whole wheat if possible)

1/2 red pepper, sliced

1 carrot, sliced

bunch of chives, chopped

1 piece of mahi mahi (optional, just add more veggies)

Mix together the first four ingredients and set aside. Rip off a long piece of tinfoil and lay it in front of you lengthwise. Fold about a 1/2 inch border along the outside so that none of the liquid can escape. Put the couscous in the middle of the foil and put the veggies on top. Pour half the sauce on top. Top with fish and the rest of the sauce. Grab the top and bottom edges of the foil and pull over the the food, pinching at the top. Fold down until about an inch away from the food. Fold up the other sides and place on the bbq on high for about 30 minutes. Check and cook longer if necessary. Fish will be flakey and veggies will be tender crisp when finished. Garnish with fresh lime juice and cilantro.

Dessert was a little bowl of heaven. More bbq foil pouches!

Clean Eating has a bunch of foil pouch meals in this months mag – check them out! They also have this crazy cherry chocolate dessert. YUUUM!

I modified the serving size because it was just me tonight!

Chocolate-Drizzled Roasted Cherries Clean Eating

1 cup fresh cherries, pitted (I used the straw method)

1 tsp orange zest

1 1/2 tsp honey

1/2 tsp cinnamon

1/8 tsp chile powder

1/8 tsp cayenne pepper

1/8 cup almond milk (or regular milk)

1 oz chocolate (I used Dark Chocolate Quinoa Midnight Crunch)

Make a foil pouch just like the one above. Toss cherries with honey and cinnamon and put them on the foil. Fold up and place on the bbq for 20 minutes. Mix together the rest of the ingredients and microwave until just melted, 20-30 seconds. When cherries are done, place in a bowl and top with a big spoonful of ice cream (if you’re me) and pour on the chocolate sauce. Enjoy!

I go back to work tomorrow. Already. Four days fliiies by!!

Last night was our staff sgts retirement party and it was a really good time!

I’m sure feeling that good time today, though 😦

I started yesterday out with some mini protein pancake stackers

I used this recipe and alternated jam, honey and coconut butter between the pancakes

and poured strawberries and maple syrup on top

Haha okay, now the next THREE meals I’ve eaten are all the same.

Happy Friday Eve!!

There was thundershowers off and on all day today with tons of lightning and thunder.

love it.

Breakfast  was another green smoothie! YUM.

And caught up on some reading. The Pig That Sang To The Moon by Jeffrey Masson is so moving. Read it!

So filling. Really.

After b-fast I ran on the treadmill for 20 min and did some laundry.

Then went and laid outside while the sun was out.

Lunch was a huuuuge salad.

-buttercrunch lettuce

-spinach

-tons of herbs: rosemary, oregano, thyme, spearmint, cilantro and basil

-pomegranate seeds

-sauteed broccoli, mushrooms and red peppers

-1/3 cup brown rice

-sliced pickles

-2 hard boiled egg whites

– 1 tbsp sesame ginger dressing

-1/2 tbsp ranch

Andrew and I went for a walk downtown in the rain later (not by choice) but we did stop at and get some cupcakes!

It was my first time at The Cupcake Conspiracy and it is swaaaaank. So pretty inside. And their cupcakes are da shiiiz.

Andrew and I got 2 each. He ate both of his already 🙂

We got The Area 51, Red Velvet, Hot Chocolate and Marshmallow, the Vanilla Coverup.

We also stopped at Sous Chef and I got a mediterranean pasta salad and a little piece of heaven for dessert.

I also had a piece of baked mahi mahi rubbed with chili powder and cuban seasoning and steamed broccoli with LC light.

Dessert was frickin delicious!!

That would be a chocolate goat cheese brownie. For reals.

So good. And I don’t really like chocolate (shocker I know) but I have been craaaving sweets like crazy lately.

I have a bunch of random yummy meals to show you from the past couple days.

I’ll start with our work breakfast.

Supper one night was a fish sandwich. Boring right? Wrong.

I lightly breaded a piece of mahi mahi in an egg white and panko and baked it for 20 minutes at 400F.

I mixed up some coleslaw with relish, a Laughing Cow light, and mustard.

Grilled in ma grill pan and served with a bowl of minestrone soup.

Omgsh up until like last year, I used to HAAATE yams. Totally despised them. But now, for whatever reason, I LOOOOVE them!

I picked a bit of everything for a salad for supper tonight.

I served it along side one of my favorite dishes.

Curried Tomatoes + Chickpeas

(AKA Chickpea Goodness)

1/2 onion, chopped

2 cloves of garlic, minced

1 can of organic chickpeas, drained and rinsed

1 can crushed tomatoes (28 oz)

Fry the onion in a tiny bit of oil in a saucepan. After about 5 min, add the garlic. Saute until the onions are soft and shiny. Add the chickpeas and tomatoes. Season to taste with the following:

2 tbsp chili powder

2 tbsp cumin

1 1/2 tbsp brown sugar

1/2 tsp salt

1 tsp cinnamon

2 tsp paprika

2 tsp curry powder

dash of cayenne pepper

Also add a pinch of saffron threads steeped in 1/4 cup of boiling water. Tumeric will substitute but doesn’t have nearly as much flavor.

Simmer covered for about 15-20 minutes. Serve on top of rice, by itself, on a bed of greens, whatever!

This recipe is from my friend Jaime who made it for me when I first became a vegetarian and only ate pasta haha.

My salad was topped with Danica’s  ginger sesame dressing, ranch and pomegranate seeds

We had a work birthday yesterday and the birthday boy requested carrot cake. I’ve never made carrot cake before and had bookmarked the Carrot Cake Sandwich Cookies by Martha Strewart ages ago, so this was the perfect time to try them out.

They were amazing. BIG HIT. And they were so easy to make! BONUS.

I didn’t realize until after I had made 3/4 of the batch that I had been making 1 ounce cookies….not 1/2 ounce. I ended up making some big ass mamajama cookies.

I followed the recipe almost exactly, except I halved the 1 cup of raisons and subbed in 1/2 cup of pecans. Be warned though that this recipe is by no means healthy. I had never used so much butter or sugar before in my life. Sure are tasty though 🙂

1 cup unsweetened almond milk

2 handfuls of spinach

1 1/2 tbsp homemade pecan butter

5-6 ice cubes

Have you ever heard of yogurt cheese?

I had not. But I found a few recipes and was so intrigued I had to give it a go.

I dumped 1 1/2 cups of plain yogurt that was mixed with 3/4 cup of raspberries and 1 tbsp honey onto a strainer lined with 4 sheets of cheese cloth. I wrapped it loosely with plastic wrap and kept it in the fridge overnight.

I spread it on a few wheat thins.

This was surprisingly really good! I forgot to drizzle it with more honey after I put it onto a plate but I didn’t even notice. I would definitely make this again but would try another fruit. Blackberries maybe??

5-6 ice cubes

1 tbsp pomegranate

strawberry smoothie with almond milk, plain yogurt, banana, fresh orange juice, ice – Andrew made it so I do not know the measurements. Sorry!

I pretty much OD’d on grapes last night

My body has been craving a TON of fruit in the last 72 hrs.

So I fed the food box.

breakfast/lunch wrap with egg whites, yams, broccoli, red onion, red pepper, sriracha and a laughing cow rolled up in a mountain wrap and baked in the oven for 10 min.

Ahhh bloggies!!

Brazilian Thunder from Booster Juice

I spent the afternoon getting my Father’s Day present ready for the mail tomorrow.

Supper

eggless pasta with sesame ginger dressing on top of organic mixed greens, 1/4 avocado, orange pepper, red onion, steamed broccoli, veggie burger, goat chedda and a blob of salsa.

It looks like a lot of pasta but it’s actually only about 3/4 of a cup. The bed of greens underneath is about 2 packed cups.

Last night I promised you the recipe for the spinach cakes Andrew made for supper the other night and here it is

Hahaha okay I don’t really have a recipe per say. I got Andrew to write down all the ingredients. Plus some goat chedda. He said he steamed about 5 ish cups of spinach and then fried the mushrooms, onions, garlic and sriracha in a little bit of olive oil. He then mixed in the cheese and spinach and poured them in ramekin. He let them set in the fridge for approx 10 minutes and then dipped them in an egg white (not yolk) and dipped them in panko, salt and pepper. Baked in the oven for 20 minutes at 350F and voila!

How were your weekends?

I had 4 really good days at work but now I am totally ready for days off!

Today was already a little on the scattered side. I came home from work at 7am with an insanely sore throat. Dag double dag. I gargled with some salt water though and it started to feel better. I had to stay up until 8am to take Beasley for a haircut and then I headed to the orthodontist because Beas chewed up my Invisilign braces last night! Looong story short, I came home and slept for 3 hours, went back and picked up Biz and then back to the orthodontist for 2 hours. I almost fell asleep in the chair.

I just finished eating some Annie’s, Andrew is picking me up a dessert and I am  bloggin’ wich yous!! Finally!

I will not bore you to death with pics of my usual oatmeal…(I know there must be a TON of sad faces right now haha) but I will recap my meals with pics of the bests.

Here we go!!

say hello to oats in a jam jar!

1/4 cup big flakey oats

1/4 cup almond milk

1 itsy bitsy apricot yo baby yogurt

dash of cinnamon

1 tbsp chia seeds

Chilled overnight and then topped with granola and almond butter

About a minute later.

Egg whites mixed with sriracha and dill and walnut bread with new Crofter jam and coconut butter

I can’t believe how long I had been living without this red gold 🙂

I made Danica’s amaaaazing pasta salad for the work bbq. I was incredibly lucky they were serving veggie burgers this year but I knew the salads would be store bought and not so yummy. This was a huuuge hit! I will definitely be making this again (and again and again)

I added what I had for veggies. Red onions, snap peas, green peppers, frozen peas, cucumbers, tomatoes, basil

I substituted truffle oil for olive oil. loove that stuff.

The next meal is so epic.

Andrew made the best supper ever!!!

He is so creative! I told him that we needed to use the mushrooms before they went bad and then this is what I came home to

omg spinach cake! but waaaaay better than just a regular spinach cake.

Heya bloggie boos!

Its Friiiiday!!!

Unfortunately, not for me. Today is Monday in my world. And I’m already up waaaay past my bedtime.

I’m gonna roll straight into my eats so I can get some beauty rest tonight! You don’t mind right? 😉

Breakfast

As you know, same as recipe by Ashley

1/4 cup Scottish oats

1 1/4 cups water

1/3 cup almond milk

1 1/2 tbsp chia seeds

1 tsp cinnamon

+ toppings

My oats were playing a sinking game. That’s how thick and gooey they were 🙂 Almond butter, honey and organic raspberry jam and granola.

Lunch

We picked up some “born today” bread from Earthbound Bakery.

I heart fennel and date bread.

I halved a slice and made a little sandwich with edamame hummus, 1/4 avocado, tomato slices,  sprouts

grilled in my new grill pan (!!)

with a bowl of roasted red pepper soup and grapes on the side.

Before supper the boyf went to the gym and I went for a jog with Beasley in the rain.

It was surprisingly really refreshing. It wasn’t pouring, just mistin.

I had no clue what to make for supper. Andrew raved like crazy about those shrimp from last night so I made them again for him.

I decided to have a total random plate.

kale salad with tomatoes, 1/4 avocado, feta, italian dressing

bread and butter pickles, steamed cauliflower, egg whites with LC and more siraracha! A little bit goes a loooong way.

Bahaha I’m so boring. But I bet you didn’t think I would add strawberries to the oats did ya? Mmhhhmm.

I glopped a spoonful of edamame hummus and a swirl of ranch on top, too 🙂

I also snacked on a few grapes

Supper

I got so totally spoiled tonight for supper. Andrew made mexican millet stuffed peppers!

I had a side salad of butter crunch lettuce (from our new garden – THANKS MOM!!) and baby tomatoes with italian dressing.

DEFINITELY his best meal ever. DIME PIECE fo sho.

We finished this beaut and then went for a jog/walk. We are both pretty sore so it was more walk/jog. And then did some abs when we got home.

I am now stuffing my face with popcorn with Earth Balance and nutritional yeast.

BEDTIME!!!

Hi bloggies!!

I can’t believe that the week is already half over and it’s already the 9th of June!

Time is just flyyyying by. With no sign of summer, unfortunately.

Breaky this morning was some egg whities with laughing cow and organic raspberry jam

and an armadillo mango on the side.

Uuughh this is the reason I eat oatmeal every morning. I love the eggs but jeeez, like an hour after this I was hungry again. I held out as long as I could but by 2pm I was staaarving!!

Luncho was leftover pasta salad from last night with 2 leftover crumbled falafels on top of organic mixed greens.

My awwwesome younger brother dropped off some of this hummus tonight from his work. He gets to try out new food products and what not and lucky for me he doesn’t like hummus!

Soo tonight was my first class at World Gym.

I went to Power with two girls from work. They were so awesome. I was soo nervous! I get a bit of anxiety before doing something new. In a setting where I could look like a complete moron that is. I’m just glad that they were there to help me. 🙂

The class was fun! Hard for sure though and I used little weights haha. My muscles were still shaking though!

Cool beans! Tomorrow I am going to Ride! It’s an hour spinning class and I’m sure I will be a huuuge sweatmess when I’m finished.

Andrew had supper ready for me when I got home. We had spicy shrimp, brown rice and barbecued asparagus.

Spicy Shrimp (Whole Foods website)

1/8 cup Sriracha
1/8 cup extra-virgin olive oil
1 teaspoon Worcestershire sauce
3 cloves garlic, crushed
1 handful cilantro, roughly chopped, plus more for garnish
1 teaspoon sugar
Salt
Freshly ground black pepper
2 pounds large shrimp (16 to 20 count), deveined

Method

Mix together the Sriracha, olive oil, Worcestershire sauce, garlic, cilantro and sugar. Season aggressively with salt and pepper. Put in a 1-gallon plastic bag, add the shrimp and mix together in the bag. Marinate in the fridge for 2 to 4 hours, or longer.

Heat a grill. Skewer the shrimp (4 to 6 shrimp per skewer) and grill until pink and delicious, 2 to 3 minutes per side. Remove the shrimp from the grill, slide the shrimp from the skewer using a fork, and pile on a serving platter. Sprinkle with finely chopped cilantro, and spear toothpicks in a few shrimp. Watch them disappear.

These are insane. Sooooo yummy! They are spiiicy though hoooleh!

Many things made me smile today: our new portable garden, hummus from Cade, power class, supper, the friend beasley met on our walk (Clark), etc.

One thing that has made me NOT SMILE for the past 2 months (almost): oil spill. OMG. This is not even close to right. Why is this not fixed yet????? Anyone?? Boner move BP.

Hope everyone had a great weekend and the week is starting well!

I was a sick kid on sat night/sunday for some reason. Not pukey sick, just felt like my stomach found a new home in my throat.

Yuck, right? Anyway I’m over it and the last couple days have been great!

I left you off with some farmers market goodies and I used them to make supper.

We had pita pizzas brushed with organic truffle oil

This stuff is TASTY. Like wow. I kept the rest of the pizza pretty simple so I could taste the oil so on top went fresh basil, tomato slices, pineapple, red pepper, red onion and goat chedda.

Baked in the oven at 400F for about 15-20 minutes.

Andrew’s had pizza sauce and salami

Fresh basil is amazing on pizza but pineapple is my absolute fave pizza topping.

I also took a London Fog latte to keep me awake

Sunday was kind of a lame food day for me because I wasn’t feeling that well. Not a complete write off because I still had an appetite, but nothing exciting.

Breakfast/Lunch was 2 egg whites with basil and organic ketchup and 1/2 a bran muffin with Earth Balance.


I slept tons  and drank a lot of peppermint and ginger tea for my stomach and by about 8pm I was hungry again.

I made some bulgar and mixed it with a stir fry of snap peas, pineapples and onions with a sauce of Braggs (you could use soy sauce) balsamic vinegar and red pepper flakes.

I also had a salmon skewer. Obviously supper was eaten in my lap while I was curled up on the couch. All meals should be eaten like this when you’re sick 🙂

I missed breakfast yesterday because I was in such a hurry to get to my nail appointment. Not smart, I know. I had this when I pit stopped at home for 20 min.

My dad was in the city and was stopping by to drop off some sweet things from my mom (pics tomorrow if it’s not raining) and I had the pleasure of making him supper to go! I made him a pita pizza, granola for a snacker at my brother’s ball game and some Peanut Butter Brown Rice Crunch Bars. I subbed almonds and almond butter for the peanuts/peanut butter and threw some chia seeds and hemp hearts on top. They are aahmazing.

Suuuuuupper was fish stick salad. Creative, I know. It blows my mind too. I used mahi mahi and panko with italian herbs and baked them at 400F for 20 minutes, flipping them once. I tossed it with the hummy mustard sauce with relish.


There was 1/4 of an avocado and some baby cukes in there too.

After supper we went for an 1 1/2 walk/jog around the neighborhood. It was beautiful out and I got to wear some of my new clothes from Lululemon!!! Boooyah!

Hmmm, blue much? I didn’t even notice!

Andrew also bought me a new water bottle.

When we got home from our jog I had a crazzzzzy SNACK ATTACK.

This morning I made a point not to skip breakfast. I hardly ever do that, but when I do it fees like I am paying for it all day. I attempted to make a banana split but it didn’t really turn out that way.

I made scottish oats but this time I  halved the recipe and poured it on top of half a banana. I topped it with granola, almond butter + almond milk, and organic raspberry jam. It was still delicious.

I had to make a bunch of sushi for a girl at work so I made a couple of extra rolls for Andrew and I for lunch.

Suuupper was yam falafels, homemade tzatziki, 1/2 a pita, and pasta salad.

The yam falafels recipe is right here, the tzatziki recipe was scribbled in my recipe book and I have no idea where it came from. The pasta salad had fresh dill, tomatoes, cucumbers and goat chedda with a vinaigrette of garlic, truffle oil, vinegar, lemon juice, salt and pepper.

We just got back from a walk and I am EXHAUSTED! I feel like all my posts have been rushed and shitty lately but I’m trying to find a time that is good for me and not at midnight or later every night! I haven’t even had any time to do any reading… 😦 Sooon peeps, sooon. Things will gel like crazy ’round here. Promise.

I’m sure everyone has seen the video of the girl that likes everything (you live under a rock if you haven’t lol) so the other day when I was feeling particularly craaptacular, Andrew sang me the song changing the lyrics to “I like my girlfriend, I like my house, I like my dog, I like my guitar….etc”. You get the picture. It was super cute and definitely made my day 🙂 Obviously a lot funnier to me…..
