Heyyyy everyone!

Hope you all had a fabulous weekend and a great Monday!

I felt like I was in a daze all day. A Mondaze. ย heh heh.

Anywoo tonight now is officially the last night in our house and I prob won’t have the internet until we get to a hotel ๐Ÿ˜ฆ

I won’t bore you with the deets of my day, I’ll just get right to the EATIES.

smoothie + ezekiel toast with raspberry jam and pecan butter

smoothie:

1 cup almond milk

handful of frozen strawberries

1/3 frozen banana

1 chunky ring of pineapple

1 tsp of bee pollen

smoothie + protein pumpkin mess

smoothie:

1 cup spinach

3/4 cup almond milk

1/2 frozen banana

1/2 tbsp pecan butter

1/2 scoop vanilla isoflex


pumpkin protein mess:

1/2 cup pure pumpkin

1 egg white

1/2 tsp cinnamon (or more if you like it cinnamony)

splash of vanilla

pinch of stevia

1 tbsp coconut butter

Mix all ingredients except for coconut butter. Microwave for about 2 1/2 minutes and top with butter.

Heaven in a bowl. I used to eat this all the time about 5 years ago and just recently found the recipe. My lucky day ๐Ÿ™‚

Lunch of an egg white sandwich with stoneground mustard and pineapple salsa, steamed broccoli and beet greens and a garden tomato.

FlatOut wrap with roasted beets, romaine lettuce, laughing cow and stoneground mustard.

Falafel chips with pineapple salsa.

Annnd..half a Pumpkin Cranberry Muffin Top.

These are SO ADDICTING!!! I could probably eat 300 of them. Really really.

Oh gosh jeez. Salad of everything. Pasta salad, bean salad, romaine lettuce, roasted beets, cauliflower, broccoli, red peppers, chickpeas, pineapple salsa, black olives, veggie burger and ranch.

We had supper tonight at Andrew’s parent’s house so no pics! Still not comfortable taking pics of my food in front of his entire fam ๐Ÿ™‚

We had burgers, potato salad, baked beans with pineapple (just as wonderful as it sounds) and shortcake with fresh fruit and whipped cream.

How are you??

Excuse my absence the last two days but packing/cleaning leaves me exhausted. AND a bedtime of 8pm. Which means no times for blogging!

We only have 2 more nights in our house. And one week left until hoollllidays ๐Ÿ™‚

So I left off with me going to the Berry Barn with Andrew’s mom, grandma + grandpa and granny.

I started my morning with a smoothie

1 cup almond milk

1/3 cup strawberries

1 frozen peach

scoop of vanilla isoflex

1 tsp bee pollen

We planned to have breakfast at the Berry Barn but I was still too full from my smoothie so I just had tea.


After breakfast we walked around the grounds, checked out the chapel and the Saskatoon berry bushes and the gift shop.


We stopped at a u-pick on the way back and I picked up a 2 1/2 lbs basket of strawberries.

YUM.

I washed them, sliced them and put them in the freezer for smoothies ๐Ÿ™‚

I had ย few sliced in my lunch too alongside ย steamed brussell sprouts and rutabaga, 2 egg whites with organic ketchup and stoneground mustard.

and had this little snacker plate a bit later

half a sliced ย banana with raspberry jam and pecan butter with the last of the cherries

Supper was just a quick veggie burger with bbq veggies, pesto and crackers.

Yesterday morning I got up bright and early and started baking.

I made Ashley’s Vegan Zucchini Bread Muffins!

Just like all of her recipes, they are AMAAAZING!

I made 3 different toppings:

vegan chocolate chips

fresh strawberries and pepitas

blueberries and walnuts

I had a blueberry walnut one for breakfast with a spinach smoothie.

1 cup almond milk

1 1/2 cups spinach

1/2 frozen banana

1 scoop vanilla isoflex

1 tbsp salt kissed cinnamon pecan butter (also an Ashley recipe!)

I put about 1-1/2 tsp Earth Balance on my muffin.

Nothing really interesting food wise to report for the rest of the day.

Today. Saturday.

Ug. I woke up today and just could not bring myself to pack one more box. Blah.

I had breakfast and mulled over my options.

Same as yesterday ๐Ÿ™‚

Andrew persuaded me to pack a few more boxes and move our bed.

He also said he would take me to Taste of Saskatchewan.

I have been wanting to go all week and since tomorrow is the last day we haaad to go ๐Ÿ˜‰

Our first taste was vegetarian pad thai. It was NOT GOOD. I picked out the veggies and Andrew at the rest.

Killer fish taco. One bite for me. 2 tacos for Andrew.

Salmon wrap with peach salsa. A solid 9.5. The only thing that could of made it better was if the wrap would have been whole wheat.

Watermelon, feta and olive salad. Okay but nothing special. Still not sure if those flavors really go together.

Homemade peanut butter pie. Wowowow. That is all.

Ander and I continued playing hooky by picking up Beasley and taking him for a long walk down by the river.

I was haaaaaanggrrrry when we got home so I whipped up some more of Gina’s crepes.

I stuffed mine with beet greens, yellow and green zucchini, broccoli and red peppers.

Made a sauce of 2 light laughing cows, 1/3 cup almond milk, pepper and TONS of fresh dill.

Chocolate Vitatop for dessert.

My day is complete.

It’s about 40C in our house right now and we have no bed.

Sleepover in the livingroom!!!

Breakfast was…..

wait for it….

a smoothie!!

Duh.

1 cup of almond milk

2 rings of pineapple

1 frozen peach

1 scoop of vanilla isoflex

1 tsp bee pollen

Right after breaky I got straight to work on making some nut butters. I made Ashley’s salt kissed pecan butter and then a hazelnut chocolate kind with vanilla and chia seeds.

I packed for the next 3 hours. Organized, cleaned and packed. Fun stuff.

I took a break for lunch and made Gina’s crepes!!

The verdict?

THEY ARE INSANE.

I big red heart them to pieces.

I couldn’t decide on sweet or savory cuz I love both, so I had both ๐Ÿ˜‰

I rolled one up with raspberry jam and the salt kissed pecan butter

and these two had sauteed zucchini, green pepper, shallots and broccoli with a teeny bit of pesto.

Laughing Cow sauce of 2 wedges, 1/4 cup almond milk, salt, pepper and tons of green onions

Gina is a for real food genius. These are ridiculously amazing.

Soooo easy and sooo versatile.

In love.

I also had a small bowl of leftover potato soup on the side.

While I was eating I did a little bit of lurkwork and came across this post by Lisa. I love her blog and this post was fantastic. So open and honest. It inspired me to give you a little random fun fact about me.

If you really knew me you would know that I am a notorious shower singer. I belt like a Grammy winner when no one is home!

For supper tonight Andrew’s grandparent’s took us out to celebrate Andrew’s birthday. His actual birthday isn’t until the 3rd of August but because we will be gone they decided to take us out tonight.

We went to The Cave and I had a 1/2 order of greek salad and bruschetta.

Imagine them because I didn’t snap any photos!

I did manage to take a picture of his sweeet grandparents though ๐Ÿ™‚

When we got home I was still kind of hungry so I had another slice of bruschetta and some steamed broccoli and carrots with a blob of mustard for dipping.

I did have a really lax day though (prob not the best idea when we need to be moved out of our house in 5 ish days!!) but it sure felt good ๐Ÿ˜‰

I woke up at the crack of 10am and got right to lurkwork.

Yes that’s right. I named my addiction. Sounds important now, yeah?

While I was working I slurped on a smoothie.

1 cup almond milk

1/2 banana

1 frozen peach

1 scoop of vanilla isoflex

2 ice cubes

I bookmarked about a 1000 new recipes and got the googs down to about 700. Wooop!

Just when I planned to take Beasley out for a jog it started to rain. Saskatoon weather is crazy lately! Rain, sun, rain, rain, rain, rain. COME ON MOTHER NATURE!!

Instead of working out I decided to get started on lunch instead.

Healthy Garden Potato Soup

1 1/2 tsp extra virgin olive oil

1 shallot, diced

1 bulb of fresh garlic, minced

1 cup of sliced carrots

6 large stalks of rainbow swiss chard (spinach, kale or green beans would work too)

1 lb of new potatoes, quartered

2 cups of veggie broth

1/2 cup water

3/4 cup almond milk (or regular milk)

1 tbsp fresh basil, torn

salt and pepper

Heat olive oil over medium heat and add shallot and garlic. Cook for about 3 minutes and then add carrots and potatoes. Cook for about 1 minute and then add broth, water, salt, pepper and basil. Bring to a boil and turn temp to low, cover and simmer for 15-20 minutes, until veggies are soft. Add in chard during last 5 minutes. Pour half of soup into blender or food processor and blend until smooth. Pour back into pot. If you don’t like your soup chunky, blend the whole batch of soup. Top with goat chedda, more pepper and some hot saucce if you’re so inclined.


My fave thing about this soup was that everything came from either my mom’s garden or the farmer’s market.

Oh, and obviously the goat chedda.

Lurve.

The rest of the afternoon was spent mindlessly looking through cookbooks and mags, trying to figure out what to take and what to toss. I packed one box. Ha. But I did get all the laundry finished ๐Ÿ™‚

When Andrew got home from work we went and picked up a Magic Bullet so we can still have smoothies on our holiday.

I would love to take the Kitchenaid but she’s kind of a husky beast. Bullet is a little more practical.

Ander made supper while I watched Pretty Little Liars.

He had a burger and smoothie (obsessed much?) and I had a gigantic salad with organic mixed greens and kale from ma mama’s garden, grilled salmon, kamut and spelt prepared salad, sliced pickles and cucumbers and topped with raspberry vinaigrette and sunflower sprouts.

Need to learn how to make kamut and spelt salad ASAP.

I’ve been snacking on some cherries

and a piece of toast with raspberry jam and earth balance.

That about brings us to right now.

My eyes are closing again as I’m typing so like ushe, I’m off to bed! (Well, check facebook and email first of course ๐Ÿ˜‰ )

My day started off with a yummmy smoothie

1 cup almond milk

1 scoop vanilla isoflex

1/4 cup saskatoon berries

1/2 banana

big handful (x2) of spinach

1/2 tbsp almond butter

I just love all the green and purple flecks ๐Ÿ™‚

After breakfast #1 Beasley ย and I went for a quick jog and then I came home and did level 2 of the 30 day shred.

And then had breakfast #2!

After breakfast I went and ran a trillion errands. Literally. And it took 3 times as long as it normally would because they are doing construction all over the city!! Ugh.

By the time I got home I was faaaamished.

I was craving a wrap but didn’t think to get any while I was out so I improvised.

I broke off the bottom and shaved the stemmy part down so it was easy to roll up.

This was soo goood but would of been 1000 times better if I would have made this pesto BEFORE lunch.

I attempted to make this pesto but needed to modify just a tad to my taste.

I ate tons out of the food processor (samplers lol) and then mixed 2 tbsp with pasta water and then tossed the pesto with some noodles and tomatoes.

I also steamed about 5 beet leaves and mixed everything with some bbq veggies.

That pesto is addicting! I dipped my veggies in it, along with some stoneground mustard.

Dessert was ice cream! I got a huge craving for tiger tiger so we went to homestead ice cream and I got one scoop of tiger tiger and one scoop of pistachio .

I am so exhausted now! My eyes barely stayed open long enough to finish this post!

Haaaappy Monday!

I had a super lax day today and just hung around the house getting some stuff organized.

Breakfast for me was an apricot from the farmers market, some farm eggs and a piece of grainy bread with organic raspberry jam.

I topped my eggs with leftover pineapple salsa and organic ketchup.

I am trying to book hotels/finish planning for our trip but was wondering if anyone had any suggestions for stops to make, fun things to do, restaurants, hotels, etc.? We will be traveling from Saskatoon to Birch Bay, Washington and be stopping in Calgary, Banff/Lake Louise, Golden, Chilliwack, Vancouver, Victoria and Seattle. I have never been to the west coast (except for Vancouver airport lol) so any suggestions would be great! We have almost 3 weeks to plan! So far we are planning to go ziplining, white water rafting, hiking, going to Whole Foods and Trader Joes, watersliding and just relaxing at the ocean. I can’t wait!

I took a break for lunch and had a leftovers salad.

The pupper got a bath today! He was staaaanky haha!

After Beasley dried off a bit, we went for a jog. A loong sweaty one. And got rained on.

When I came home I did level 3 of the 30 day shred. Doing most of the beginner moves. Jillian is crazy. I swore at her through the whole workout. My tank was soaked!!

Andrew got home from the gym at the same time so he made us a protein smoothie with some new vanilla protein powder.

Frozen strawberries, fresh pineapple, milk, orange juice and powder.

So yummy. I just love smoothies ๐Ÿ™‚

For supper we stuck to the meal plan and had veggie burger sushi.

Yeah, you read that right.

Sooooo not exactly sushi but it sure did the trick.

I used a Mountain Wrap spread with brown rice cooked in veggie broth, topped it with steamed red and green peppers and mushrooms, Amy’s texas burger, pineapple salsa and goat chedda. Rolled up like a sushi roll and baked in the oven at 400F for 15 minutes.

With steamed new green beans with Earth Balance.

Dessert was peach softserve!!

Woot woot!

This stuff is the shiiiiz.

1/2 frozen banana and 1 sliced farmers market peach blended in the food processor

That’s it!

And it is soooo yummy! And healthy ๐Ÿ™‚

I had it on top of millet and quinoa puffs, mulberries and a couple of non dairy chocolate chips

I have to work tomorrow (only 4 more days and then I’m off for 12!!!!) so I need to get some zzzzzzzzzzs!

How was your Sunday??

Mine was quite productive. Got a lot of things crossed off the to-do list ๐Ÿ˜‰

I started off this morning with scottish oats! Shocker.

The real shocker was that Andrew had oats too! He never eats the same breakfast as me.

He made his plain and topped it with organic maple syrup (another first for him) while mine had the usual suspects of

1/4 cup scottish oats

1 1/4 cup water

1/3 cup almond milk

1/2 tbsp chia seeds

1/2 smushed up banana

dash of cinnamon

I did mix in an egg white at the end though and WOW, talk about F-I-L-L-I-N-G.

Topped with organic raspberry jam, cashew almond butter, granola and more almond milk.

Delish.

After breakfast Andrew and I split the to-do list in half and got to work.

Together we cut the lawn, did ALL the laundry, organized our recyclables (which we have missed for the past month and = a huge mess), cleaned the house, and made a meal plan + grocery list.

Then it was time for lunch!

I was still full from breakfast so I decided to make a smoooothie.

Well, I tried to make a strawberry version of the faux frosty but it didn’t quite make it to that level of greatness.

Close though ๐Ÿ™‚

1/2 cup frozen strawberries

1 cup almond milk

1/3 cup of water, optional (I needed it to get everything movin’)

1/4 tsp guar gum

1/2 tsp xanthan gum

1/2 tray of ice

1/2 scoop vanilla protein powder

I ate this bar on the way to the grocery store

I love these bars! It has just the right amount of nuts and seeds and ย gooeyness.

Tonight’s supper was really really good!

I used 2 recipes out of the Clean Food cookbook and they turned out delicious. GO BUY THIS COOKBOOK!

I made the black bean patties and pineapple guacamole.

grilled corn on the cob with chili powder and baby potatoes with Earth Balance and fresh dill on the side.

I have left over burgers and salsa so you’ll prob be seeing them again ๐Ÿ™‚

After supper we took Beasley outside to play and then I did the 30 day shred level 2. I was a sweatmess and it was great.

I snacked on a yog mess with a mexican mango, millet puffs and a couple of non-dairy chocolate chips.

Andrew and I almost planned our entire trip tonight and I couldn’t be happier! LOTS of fun things planned!

Hooray it’s the weekend!!

My Google Reader is at 848!!

Not cool peeps, not cool. I have been internet neglecting. Big time.

This month is going to be crazy busy for me because Andrew and I are moving at the end of the month. And going on vacation for three weeks. We move out on the 31st of July and leave for holidays August 1. We don’t move into our new place until September 20th and will be staying with Andrew’s parents for a month! So basically we have to pack and move twice. Eeeeeek!

I’m getting a little stressed but after my next 4 days of work I am off for 12!!

More than enough time to get everything figured out ๐Ÿ™‚

Onto the food!

I finally picked up some vegan vanilla protein powder (Progressive Harmonized Vegan Protein in natural vanilla) so I could make Janetha’s faux frosty!! I have been drooling over this since the day she made it.

1/2 cup almond milk (I used 1 cup because my blender blowwwws)
1 scoop vanilla protein powder
1 tbsp unsweetened cocoa powder
couple teeny tiny scoops of stevia
16 ice cubes (a whole tray)
1/2 tsp xanthan gum
1/4 tsp guar gum

Blend it! Drink it!

I had to eat mine with a spoon and couldn’t even finish it! So perfect for a hot morning.

Lunch was an Amy’s Texas veggie burger with relish, curried couscous, and Boulder Canyon Rice and Adzuki Bean Chipotle Cheese chips.

It was sooo hot on Wednesday that we HAD to bbq.

I really don’t mind at all ๐Ÿ˜‰

veggie pesto

1 cup chopped green onion
2ย garlic cloves, chopped
1 1/2 tbsp chopped fresh thyme
1 1/2 tbsp chopped fresh oregano
1/2 tsp salt
4ย tbsp extra virgin olive oil
2ย tbsp freshly grated ginger
1-1/2 tsp ground allspice
1-1/2 tsp ground black pepper
1/4 teaspoonย ground nutmeg

Process everything in a food processor and pour over veggies. I marinated my veggies for about an hour first and then tossed them on the bbq with a salmon skewer.

Orange peppers, leek, mushrooms and zucchini.

On my last night shift we had a going away party/appetizer night for one of the girls. I brought a big salad and tons of cake pops and cheesecake pops. I wish I would of taken pictures of the cheesecake ones cuz they are OUT OF THIS WORLD YUMMY. Bakerella is a baking genius fo sho.

This morning we got up early to go to the Farmer’s Market!

Just another reason I heart having Saturday’s off ๐Ÿ™‚

First, I had to get some food in the belly.

Look at all the loot we picked up!

peas, focaccia bread, farmer’s eggies, baby potatoes, fresh garlic, arugula, red peppers, green peppers, apricots, peaches, yellow tomatoes and one red tomato.

After putting all the food away Andrew and I took Beasley for a jog. I’m not sure how far we go, but it takes us about 45 minutes to jog/walk our little loop.

I was starving for lunch! So I had a salad (duuuh! I still have PILES of lettuce/spinach from my parent’s garden)

Leftover veggies, arugula and spinach, fresh peas, balsamic vinegar and ranch.

After lunch we went shopping! I had a gift certificate to use and ended up finding 2 dresses! Yay!

And a new pair of shoes….(the buttercup color).

Andrew made bruschetta for supper with our fresh tomatoes, garlic, balsamic vinegar, tons of pepper and fresh basil. He baked the focaccia on the bbq, topped it with the bruschetta and then broiled it for about 5 minutes.

I had a salad on the side with arugula, wilted baby swiss chard (from my garden), walnuts, cranberries and raspberry vinaigrette.

And a BBQed Amy’s Texas veggie burger.

The bruschetta was AMAZING.

Now I just finished putting back this little chocolate puddin’ while typing this up.

And now it’s time for bed!

A HUGE to-do list is on my plate for tomorrow!
