Can you believe that it’s the last day of August already?! Summer flewww by!!
Work flew by too today! Busy busy busy!
I’m happy to be home 🙂
Breakfast this morning was pretty simple.
(yes I am up before the sun)
1 cup almond milk
2 big handfuls of spinach
1/2 pack Jay Robb’s vanilla egg white protein powder
1/4 cup frozen blueberries
1/2 tbsp almond butter
and a piece of Ezekiel bread with laughing cow light and 1 egg white and 1 egg fluff with pineapple salsa slathered on top.
I ate all day but didn’t have time to take any pics! I had a leftover enchilada, grapes, roasted red pepper hummus, raw crackers and veggies.
Andrew had supper ready for me when I came home (score!!!) but we switched up the days a little bit. Tonight was supposed to be pita pizzas and tandoori chickpeas but instead we had the best veggie chili.
Best Veggie Chili
1 onion, diced
3 cloves garlic, minced
1 green pepper, diced
big bunch of mushrooms, sliced
1 can organic corn
1 can organic bean medley
1 can petit cut tomatoes
3 carrots, shredded
2 1/2 tbsp chili powder
1 tbsp paprika
1/2 tbsp cumin
red pepper flakes
2 tsp hot sauce
1 1/2 tsp organic maple syrup
1 1/2 tsp brown sugar
1 tsp olive oil
salt and pepper
Pour oil into large pan and heat over medium heat. Add onion and garlic and saute for about 3 minutes. Add chili powder, paprika and cumin. Add 1/4 cup water and cook for 5 minutes. Add mushrooms and green peppers and coat with sauce. Add tomaotes, beans, corn, carrots and bring to a boil. Turn the heat down to low and add brown sugar, maple sugar, hot sauce, salt and pepper and simmer until thickened, about 20-30 minutes.
It might look a little nasty but trust me, it was the best chili evvvaaaaa. And I know my chili 😉
I had mine on top of kale, 1/2 cup brown rice and some vegan nacho sauce.
Okay lovas I can barely even keep my eyes open right now.
It’s 10:18 p.m. and I am officially a grandma.
Have yourselves a wonderful sleep because when you wake up it’s going to be SEPTEMBER 1!!!

Warning: You are about to see the ugliest food pictures. Seriously. Don’t judge my lack of photography skillllzzz.
Breakfast was overnight oats (1/4 cup oats, 1/2 cup almond milk, heavy handed sprinkle of chia seeds and cinnamon, 1/2 under ripe (aka YUCK) banana and topped with Puffins, strawberry/raspberry jam and Justin’s maple almond butter.
This was my first time having Puffins and I liiike ’em. So far I have only seen the cinnamon kind but they sure are tasty. I can only dream about the peanut butter flavor.

FYI: Cherry season is ova!! Last winter I could not find one frozen cherry for the life of me so this year I will be buying out the grocery store and freezing a ton!!
-2 hard boiled egg whites
-2 tbsp goat chedda
-grainy mustard and raspberry vinaigrette
1/2 chopped cantaloupe
Stickin’ to the meal plan, I made up some roasted red pepper hummus last night to be ready for today.
Chopped broccoli, carrots, green peppers and mushrooms, toasted pita and raw crackers for dippin!
Oh lord I am a crazy hummus monster. I licked the bowl clean 🙂
Roasted Red Pepper Hummus
1 15 oz can of organic chickpeas
1/4 -1/2 cup water
1/2 cup tahini
4 cloves of garlic
3/4 of a lemon, juiced
1 roasted red pepper
salt and pepper
Drain and rinse chickpeas and toss in food processor. Add water and process, adding more water until you get a smooth consistency. You want it to be thick, not runny.
Add the tahini, lemon juice, garlic, roasted red pepper and salt and pepper. Adjust seasoning to taste.
We ate in a hurry because we had to go watch my younger brother play slowpitch! He plays on four teams and this team just happens to be in the playoffs.
He is so good! Andrew and I were really impressed and had a lot of fun watching.
He hit 3 homeruns!!!!
I think he was the best player there but I might be a bit biased 😉

Sorry I’ve been playing ditch with the blog lately but I’m kind of living in a bit of a limbooo. 3/4 of my cooking stuff is packed in boxes while we live with Andrew’s parents and my meals have been reeally random and unblog worthy if ya know what I mean.
Sooo to change that I decided to meal plan this week!
August 30 – September 1
✻homemade red pepper hummus with raw veggies and baked pita wedges
✻pita pizzas and Tandoori Chickpea Salad
✻best vegetarian chili with buns/salad
✻Clean out the fridge stir fry
I will be posting recipes, links, and pics of the meals all week!! 🙂
Plus maybe some breakys, lunches and snacks, too!

This little nug couldn’t sleep AT ALL last night so I called work and came in at noon instead of 7am. 🙂 🙂 I am still rollin’ with holiday time I think.
It was sure nice all the girls at work, though! I haven’t seen them very much in the last month and a half 😉
I woke up craving the same thing as yesterday. No big surprise. I hadn’t had a green monster in almost a month so I have a lot of time to make up for!!
-half a package of Jay Robb vanilla egg white protein
-big handful of spinach
-half a banana
-1 tbsp Justin’s maple almond butter
-5 ice cubes
-1 cup of almond milk
A piece of flax bread with homemade strawberry raspberry jam and pineapple chunks on the side.
Lunch was leftover tofu stirfry and an orange.
-block of firm tofu
-2 carrots, sliced
-2 zucchini, diced
-red and yellow peppers, sliced
-1/2 white onion, sliced
-1/8 cup soy sauce (or Bragg’s)
-1/2 tbsp organic maple syrup
-1/4 veggie stock
-big chunk of fresh ginger, grated
-1 clove garlic, chopped
Drain the package of tofu and pat dry with a towel. Cut in half lengthwise and then into small cubes. Mix all ingredients for the marinade together (adjust flavors to your liking) and pour over tofu. Marinate in a ziploc bag for as long as you can, at least an hour.
Saute veggies in a large pan over medium heat. Add tofu and marinade and continue cooking until veggies are tender crisp and tofu is heated all the way through.
Andrew made enchilada’s for supper tonight!! 🙂 🙂 Suuch a good little wife lol
I had a side salad of romaine from my parent’s garden, tomatoes, pineapple chunks and raspberry vinaigrette.
And I even have the recipe for ya!! Sort of 😉
Veggie Bean Enchiladas
-4 Food for Life Ezekiel wraps (any kind will do)
-3 chipolte peppers in adobo sauce
-1 cup tomato sauce
-1 1/2 cups water
-1 1/2 tbsp cornstarch
Preheat oven to 350F. Saute veggies and beans until soft. Put all ingredients for enchilada sauce in pan and cook over medium heat until it begins to bubble and thicken, about 10 ish minutes.
Pour sauce over bottom of pan to prevent sticking and then fill wraps with veggies and beans. Pour sauce over wraps until they are completely covered and top with goat chedda. Bake for about 45 minutes and devour.
All this talk about food has me thinking about dessert!
Hahaha I swear the food box is never full!

And completely ate my face off 🙂
