Tonight’s supper has been brought to you by the letter

When I was younger, my friend Shannon and her family would have me over for a sleepover almost every Friday. They would call it pizza, Pepsi and Paije night.

I’m bringing it back! Well, the modified version….

Pizza #1

  • homemade wholewheat pizza dough with green onions
  • asiago cheese stuffed in the crust ๐Ÿ˜€
  • basil pesto

  • mushrooms
  • green/yellow peppers
  • pineapple
  • goat chedda

Pizza #2

Mama Pea’s Pumpkin Loaf with White Chocolate Chips

This bread is so moist and perfect. I couldn’t get over it. I probably asked Andrew 100 times if he could believe how good it was! But I’m done sharing with him now. The rest of the loaf is MINE. ๐Ÿ˜‰

  • air popped popcorn
  • Earth Balance
  • vegan parmesan cheese

Two pizzas, two slices of pumpkin bread and two bowls of popcorn later, I AM STUFFED. And POOPED.

I have learned a lot of lessons this week.

Some hard ones.

Some not so hard ones.

Bare with me please.

I will be back to normal ASAP.

Until then, this week:

I have learned…. that every Monday should be spent on the couch, in my pjs, with a bowl of oatmeal watching Oprah’s Favorite Things.

A new 2012 VW Beetle Oprah??!?! Whhaaat?

I have learned….that is is never too early to start wearing Christmas socks.

I have learned….that the peanut butter + almond milk = amazzzzzing.

Especially on top of Ezekiel bread french toast and frozen raspberries. 1 tbsp peanut butter + 3 tbsp almond milk microwaved for 15-20 secs.

I have learned….even though I am completely a child of the 90s

my music of choice is totally 60s/70s. Example: kitchen cleaning playlist.

  • Sweet City Woman-The Stampeders
  • Imagine-John Lennon
  • Take the Money and Run-Steve Miller
  • Lola-The Kinks
  • Why Can’t We Be Friends-War
  • Slip Slidin’ Away-Paul Simon
  • Let it Be-The Beatles
  • Free Bird-Lynyrd Skynyrd
  • Time-Pink Floyd
  • Crocodile Rock-Elton John

I have learned….giving is just as much fun as receiving!

I finished my Operation Christmas Child Box-and took TERRIBLE pictures-but it was great! I had so much fun picking stuff out for a little girl! I wish I could show you the finished product but I had too much stuff in the box and couldn’t close it. Andrew wouldn’t let me open it after he got it closed! And I dropped it off between my night shifts so I wasn’t even entirely awake lol.

I packed the tote box with doodle paper, erasable pencil crayons, markers, a picture book, brush and comb, socks, underwear, toothbrush, hair ties, veterinarian Barbie, 2 t-shirts, a mini pair of yoga pants, candies, and a teddy bear.

A girl at work convinced her whole platoon to donate a box! ย Andrew and I are thinking about donating a boy and a girl box next year.

I have learned….that bloggers can be bad influences ๐Ÿ˜‰ anyone?? Oh jeeeeeez. Thanks Janetha! Haha.

A one-piece snow suits is soo practical! It was -30C today. For reals.

I have learned….that Beasley cannot be trusted at home alone.

I have learned….that beige food is a-OK sometimes.

Tofu, quinoa, mustard.

Because I definitely got my fill of veggies the day before.

I have learned….that the fireplace in the basement is a subpar hot yoga studio.

Basement yoga bomb.

I have learned….that fake nails or not, when I am stressed out I will always be a nail biter.

Nail appt is TOMORROW.

I have learned….that I have the best boyfriend in the world!

Bah! I already knew that boy is a ten! ๐Ÿ˜€ โ™ฅ (Please excuse the cow chair in the background. We are still housesitting).

I have learned….that it’s definitely OK to eat a meals of sides.

parsnip fries with asiago cheese

cheesy scalloped yams with mushrooms and onions

steamed green beans

I have learned….that all of Mama Peas recipes are amazing.

Exhibit A

Better Berry Nutrigrain Bar – made with raspberry jam

I have learned….that I miss blogging on the regular so much. Who knew that spilling my guts to strangers would always make me feel better?ย ย Not this girl. ๐Ÿ™‚

Time for some blog reading and then time for bed!

Ta, sweets!

What have you learned this week?? Do share.

Hey! I have been trying to write this post for a couple of days but honestly, I just haven’t felt like blogging. Work has been mondo stressing me out lately and I feel like I’ve kind of lost my mojo in a few aspects of my life. I won’t talk about on the blog but something definitely has to change soon.

Rant over. The awful work shiz hasn’t stopped me from cooking delicious food though ๐Ÿ™‚

I have been trying to switch up my breakfasts lately. Apparently eating oatmeal every morning is boring? Lol.

  • peanut butter puffins
  • almond milk
  • sliced bananas
  • frozen blueberries
  • mighty maple peanut butter

  • 2 slices of Ezekiel bread
  • french toast mix – 1 egg white, 1/2 cup almond milk, vanilla, cinnamon and nutmeg
  • greek yogurt
  • strawberries
  • maple syrup

Lunches have been my usual salads. For the most part I’m not very creative with my lunches. Huge ass salads are the only thing I want. Everyday.

  • kale
  • leftover beet and brown rice burger
  • steamed broccoli
  • 1/4 of an avocado
  • pea shoots
  • homemade ginger miso dressing

  • organic spring mix
  • steamed cauliflower
  • pomegranate seeds
  • pee shoots
  • leftover mushroom barley burger
  • 1/4 of an avocado
  • homemade ginger miso dressing

Suppers have been random, carby and awesome.

  • quinoa sushi – quinoa cooked in veggie broth and sauteed with ginger and onions
  • avocado
  • carrots
  • red pepper

  • yam
  • mom’s homemade salsa
  • 1/4 of an avocado
  • more of susan’s hummus

  • Subway!
  • kale salad
  • pomegranates
  • avocado
  • bocchini

  • leftover quinoa, ginger and onions
  • kale
  • salmon
  • edamame
  • soy sauce
  • lemon

Sorry about this being one of theee laaamest posts ever. Just love me, okay? โ™ฅ

I’ve gotta a bloggie date tomorrow (hopefully!) and I can’t wait!

    Heeey monsters!!

Did you guys have a good weekend??

I’ve been loving reading all the recaps of the Foodbuzz festival!! I have definite shwag bag envy ๐Ÿ˜‰

I had a nice little Sunday. The entire house is clean, all the laundry is done, the pups have been walked, I went for a 30 minute jog and now I get to “talk” to you guys! All I have left to do is meal plan and get some groceries tomorrow and I am completely caught up on my to-do list.

I was trying to post during my night shifts but for some reason my pictures got deleted! Lameballs.

I have pretty much been eating two things for the last 5 days. One of which is EPIC.

    Macatastic Smoothie

    serves 1

1 cup unsweetened chocolate almond milk

    1 frozen banana

    1/2 tbsp cocoa powder

    1/2 tbsp raw maca powder

    1 tsp flax oil

    1/2 scoop vanilla protein powder

3 ice cubes (more if you’re not using a frozen banana)

Mix all ingredients in the Vitamix or blender and blend until smooth.

I have also been obsessed with caprese pita pizzas. I probably would of made another one tonight if I wasn’t out of basil.

    Caprese Pizza

    serves 1

    1 whole grain pita

tomato paste, as much as you like

    italian spices

    2 cloves roasted garlic

    baby tomatoes, sliced

10 bocchini balls, sliced in quarters

    fresh basil

Preheat oven to 400F. Spread tomato paste on pita and top with roasted garlic and italian spices. Place tomatoes, cheese and basil on as well and bake in preheated oven for 15 minutes or until cheese is browned.

I switched up my meals tonight but only to get rid of some leftovers in the fridge.

Because I slept in until noon, I had a macatastic smoothie for breakfast while cleaning and skipped lunch. ๐Ÿ˜ฆ By supper time, I was sttaaaarving. This was full of carbs and veggies. The besssssssst.

I had a massaged kale salad with baby tomatoes

leftover mushroom and barley burger on 1/2 a sandwich thin with laughing cow and mustard

    steamed broccoli

and ww spaghettini with butternut squash pasta sauce and vegan parm

    Butternut Squash Pasta Sauce

serves 6-8 (maybe more maybe less)

1 tbsp extra virgin olive oil

2 cups butternut squash, steamed until soft

    1 red onion, diced

    3 medium carrots, thinly sliced

    3 stalks of celery, chopped

    1/2 red pepper, diced

    1/2 zucchini, diced

    1 bulb roasted garlic

1 5.5 oz can of herbs & spices tomato paste

1/2 cup water (or veggie stock)

    italian spices

    salt and pepper

Heat oil in pan over medium heat. Add onion, celery, red pepper, and carrots. Stirfry until veggies are semi-soft. Add zucchini and cook for about 5 more minutes. Next add steamed squash, garlic, tomato paste, water, spices, salt and pepper. Simmer on medium heat until veggies are very soft. Place sauce in Vitamix, blender or food processor and until smooooooth. Pour back into pan, adjust seasonings, add more water if necessary to thin out and heat through. Serve on top of pasta or veggies. Pour extra into a jar and store in the refrigerator.

    Leftovers are even better.

Do you think three recipes for one night is enough? ๐Ÿ™‚ I doooooo!!

    It’s time for Boardwalk Empire!!

    Night night kittens!
