And now look at what my younger brother dropped off the same day.

Yup. That would be five bags of baking chocolate. 😀 😀 😀

Hey!!

Please forgive my missing face for the past couple of days. My charger for my laptop broke on the weekend and I didn’t get a new one until yesterday. I have been still doing lots of lurking with my ipad but haven’t been leaving/replying to any comments!

Now everything will be back to normal 😀

Did everyone have a good weekend/week so far?? My weekend was awesome — my mom came for a visit! I love getting to spend time with her! I only wished her and my dad lived in the same city as me 😦

My mom always spoils me when she comes and when she came this weekend she bought me a new toy!!

YAY!!! I’ve wanted a Garmin Forerunner for awhile and now I have one!! I still don’t know really how to use it but so far it’s soo neat! Thanks Mom!! ♥

She also brought me some vday chocolates 😀

I don’t really have too many food pics for you. Pretty poor for a food blog, I know.

omelette with 1 egg and 1/2 cup egg whites, broccoli, peppers, spinach and strawberries and oranges.

quinoa salad made by my mom, half stuffed in a pepper and baked, roasted butternut squash with Tiger Tiger Tikka May-O, KALE, tofu, and strawberries.

more butternut squash with tikka may-o {this stuff is craaaazy good}, omelette with mushrooms, spinach and goat cheddar, toast with almond butter and hemp hearts.

KALE, quinoa salad, rutabagas, homemade wheat thins and goat cheddar slices.

Tofu with mustard, baked yam with avocado, mushrooms and onions and more KALE.

Tea ~ 1 slice fresh lemon and 2-3 chunks fresh ginger.

the BEST blueberry yogurt muffins.

collard green wraps filled with mashed yams, broccoli, avocado and a laughing cow, steamed golden beets and sprouts.

more steamed beets, toast with Choc-ooh-lala nut butter, chile picante plantain chips and snapea crisps.

 

I’m gonna leave you with a video blog {yay!!!} that I did today which hopefully makes up for the craptacular food pics 😀

I just did the accent blog or dialect blog that a lot of other bloggers have done. The mumbly mess that I’m trying to say at the beginning is that I didn’t have my COMPUTER, not the internet.  Stage fright I guess 😉

Hey loves!

Hope you all had an incredible week!

The last two ish weeks for me have been kind of interesting. I have been on and off sick with who knows what and have been feeling suuuuper run down, tired and just plain shitty. I finally decided to go to the doctor and after getting some blood work done we figured out part of the problem. I’m anemic.

I actually knew that my iron was low because the last time I went to give blood (mid-January) I was turned down because I didn’t meet their iron level requirement. I was pretty upset because giving blood is very important to me so I started doing a bit of research and started adding lots of iron rich foods in my diet.

I found that there are 2 types of iron: heme and nonheme. Heme iron is found in animal foods and nonheme iron is found in plant foods.

Nonheme iron > heme iron for this girl.

Some examples of nonheme iron are:

  • lentils
  • spinach
  • kale
  • tofu
  • molasses
  • quinoa
  • broccoli

Because nonheme iron is harder to absorb than heme iron, I have been eating all my iron rich meals with foods high in vitamin C, which enhance iron absorption. I’ve read that drinking coffee and tea with your meal can inhibit iron absorption but luckily I don’t drink coffee and I save tea for bedtime 🙂

Long story short: I started taking iron supplements because after eating tons iron my levels still went down. Obvi there is a reason whyyy my body isn’t absorbing the iron, I just don’t know what it is yet.  So along with the supplements I will still be eating obscene amounts of greens, tofu and lentils. Just the usual 😉

I also have started taking aloe vera shots.

Booya, getting crazy up in hurrrr.

This stuff tastes like craaaaap but the benefits are shweeet!! Check it:

  1. Aids in the elimination of constipation.
  2. Aids in digestion and helps with stomachaches and heartburn.
  3. Helps to regulate blood sugars.
  4. Detoxifies the body and colon.
  5. Helps with weight loss by increasing metabolic rate to burn more calories.
  6. Improves circulation.
  7. Aids in healing damage to internal tissues.
  8. Regulates blood pressure.
  9. Strengthens immune system.
  10. Retards the growth of cancerous tumors.
  11. Helps to reduce inflammation.

Wanna see what I’ve been putting into my body lately? Sure ya do.

❤ Day supper of chili, kale and Lauren’s whole wheat hazelnut & goat cheese biscuits. <——highlight of my life.

The chili was made with Bob’s Red Mill 13 bean soup mix, tons of shredded carrots, many mushrooms and corn.

Money.

Massive amount of kale w/ vinegar, tofu, toast with PB and hemp hearts and juicy strawberries.

Hemp hearts = another good source of iron.

Sauteed kale, chickpeas, peso and goat cheddar with oranges and another biscuit.

More kale, baked cajun salmon with mustard dippage, brown rice with soy sauce, steamed romanesco broccoli and another biscuit 🙂

Please don’t judge the crazy amount of kale I eat. I just crave it all the time! And it’s good for me so no big right?

Omelette with egg white and yolks <—–iron rich!, kale and grapefuit and oranges.

Super wrap fail (thanks Food for Life) stuffed with goat cheese, avocado, lentils and sprouts. Kale, strawbs and Angela’s homemade wheat thins.

This filling was effing awesome BUT…

THESE totally stole the show. I added garlic powder, dill, basil and parsley to mine. DELICIOUS.

Roasted cauliflower with truffle oil, lentil pineapple pita pizza and kale!! Anyone brave enough to try this pizza yet??

Veggie burger smothered in mustard, relish and sprouts, wheat thins with laughing cow, an orange and 2 eggs with ketchup.

Fresh sprouts and relish BELONG on a burger. No matta what.

Kale is not the only green I eat. Surprisingly. I also eat spinach! And lots of it! Only in smoooothie form 😉

One big scoop of Vega vanilla almondilla protein powder, 1 1/2 cups unsweetened almond milk, 1 tbsp chia seeds, handful of ice, big handful of frozen blueberries, 1/2 frozen banana, 3 cups spinach and a pinch of guar gum and xanthan gum (totally optional, usually forgotten).

Droooolface.

Same smoothie, different counter, less blueberries.

Samesame but different. Vega Choc-a-lot protein to keep it reaal. And add a brown tinge.

Snack plate with a deep chocolate vitatop smooshed with PB and some granola and strawbs on the side.

I made soooooup! While I watched The Mask today. Jealous? 😀

Kale and Lentil Soup

adapted from Super Soups with Isabel

  • 1 tbsp coconut oil
  • 1/2 large red onion, minced
  • 2 stalks celery, chopped
  • 2 large carrots, chopped
  • 1/2 red pepper, chopped
  • 1/2 orange pepper, chopped
  • 2-3 cloves garlic, minced
  • 3/4 cup green lentils
  • 1 tbsp soy sauce
  • whole head of kale, torn into pieces
  • 6 cups veggie broth
  • sea salt and pepper

Saute the onion, celery, carrots, peppers and garlic until tender. Rinse the lentils and then add to saute mixture with the soy sauce and the kale. Saute all for a few minutes and then add the veggie broth and salt and pepper and allow soup to boil on low, covered, for about 45 minutes. Check the texture of the lentils and cook to your desired taste.

I also have been thinking about doing the gluten free thing for a bit. In preparation, I have been trying out some new recipes.

I tried raw oat groats this morning that I soaked overnight in almond milk and water. This morning I blended them in the vitamix, added 1 tbsp of chia seeds until they thickened up. Idea from this girl.

And after. Sliced banana, PB and frozen blueberries. Buckwheat groats are something I need to get used to. They’re okay but there isn’t a love like my oatmeal love.

For supper tonight I had a bowl of soup and these little suckers on the side.

Two roasted pablano peppers stuffed with millet and goat cheese and topped with pasta sauce.

It’s waaay best my bedtime….like it’s 2:36am and I wanted to be up by 7am. Think it’s gonna happen?? Me neither.

Hiii 🙂

You know what? I love being a food blogger. Like reeeeally love it. Being able to interact with the most creative, inspiring, caring, hilarious and genuine people on a daily basis is waaay more than I could of asked for when I started my blog.

One of the BEST parts of blogging is all the recipes! Duh, right? Ever since we got back from the Dominican I have been trying out recipes I have saved in my “Eat it Nowww” folder 🙂

First up was buckwheat groat porridge from Emilia at Namaste Gurl.

I have had buckwheat groats in my cupboard for about…..ummmm a year? With no idea what to do with them. Until nooow.

Blend the crap out of them.

I added the 1/4 cup of buckwheat groats, 1 tbsp of chia seeds and a dash of cinnamon to a pot.

Then added 1 cup water, 1/4 cup of almond milk and 1/2 tsp of vanilla.

Cooked over medium heat, stirring often for about 10 minutes.

In the last couple minutes I added a banana and smooshed it up with a fork.

I topped it with mighty maple peanut butter, raspberry jam, granola and more almond milk. The buckwheat tastes a little earthier than my usual scottish oats but I still really liked it and it was sooo easy!

Next I made Kathleen from Kat’s Health Corner’s Almond Joy Pizzert Babies!

Omgsssssh you guys these are crazy good. And good for you!

I mixed 1 tbsp mighty maple peanut butter with 2 tsbp almond milk and warmed it up in the microwave for 30 seconds to pour on top and added some granola and coconut. Heavenforsuuuure.

I have already made these three separate times they are that good!!! And they are soo cute 😀

Neext I made cheezy kale chips! I based my recipe from my brother Jordan’s recipe at the Organic Revolution.

Sorry I don’t have more pictures! We are koo koo for kale chips in this house! I have a double batch in the dehydrator right now though!

I also made Lauren’s English muffins but didn’t take any pictures during the baking process apparently. Check out her blog Lauren Loves Good Food for the recipe, awesome pics and tutorial!! I only made two modifications, I used spelt flour instead of bread flour and baked them for 20 minutes at 350F instead of frying them. They are delicious.

I have been eating them as mini sandwiches for snacks. Peanut butter and pickles. Anyone else like this combo???

You guys already know how much I love Susan’s sunflower hummus.

I had it for supper tonight with quinoa crackers, sauteed kale with vinegar (obsessssssed), avocado, couscous, goat cheddar, pumpkin seeds and pecans.

And now I have a recipe of my own to share with you 🙂

Lentil Pita Pizza

  • 1 whole wheat pita
  • homemade pizza sauce (store bought or pasta sauce work too)
  • 1/2 cup green lentils, cooked in veggie broth
  • 1/3 cup chopped pineapple
  • 2 tbsp grated cheese

Put all ingredients on top of pita and bake in preheated 400F oven for 15 minutes or until cheese is browned. Eaaaaasy.

Ahhhh these ingredients work soo well together! I really hope you guys try this!

Fourteen: the number of days it’s been since I blogged. Ick! So sorry but I’ve been a little busy 😉

Thirty-nine: the number of pictures I took of the ocean. Here is just a few.

One: the number of buggies we hot wired.

Two: the number of trees hugged…..don’t ask 😀

Four: the number of foods I could actually eat in Punta Cana. Fruit, rice, steamed veggies and ice cream made up my diet for the whole trip. I tried lots of different food but everything tasted the same! And everything else had meat in it 😦

Seven: the number of days we had sunshine! 35C and sunny everyday. The weather was amazing. Same number of days I spent by the pool/beach. Heaven.

Nine: the number of days I went without a hot shower. Only luke warm showers in the Dominican and my stomach was too burnt for warm water when we got back. No shower or burn pictures. Creepos.

Zero Zero Six Four: the number you have to punch into a spanish keyboard to get the @ symbol. The more you know.

Twelve: the number of hours we spent in the airports/plane to get home. Including one stop in Jamaica and a hold up at customs in Saskatoon.


Dos: the number of puppies that were happy to see us!

I’ve literally  cooked a hundred things since we’ve been back but I’ve been sick for the last two days and haven’t had any time to enjoy them! I have lots and lots of more food pics but I’ll save them for another day 😀

Missed you guys more than you know!!
