Holla bloggies!!

Thank you so much for all the sweeeetie pie comments on my last post! You guys are the best everrrr!

Things are all good in the hood πŸ˜€

To bust out of last weeks rut, I turned to my EAT IT NOWW folder to get my eating groove back.

{Side note: Being involved in the blogging community is like having access to 1000s of cookbooks. And their authors. AMAZING}

I made two of Angela’s recipes.

I made her vegan walnut lentil loaf and her vegan shepherd’s pie. Both are unreeeeal.

The only substitution I made was using apple sauce instead of apple butter for the glaze.

This was Andrew’s favorite meal by soooo far. I made his with reg potatoes and mine with sweet potatoes. And ditched the wine πŸ™‚



I made two batches of Kathleen’s pizzert babies!! My fave!! I even like making these for an afternoon snack. Mmmmm!

Topped with almond butter/trail mix and coconut butter/blueberries/hemp hearts.

Topped with almond butter/chocolate chips/gogis/hemp hearts and raspberry jam/shredded coconut.

I’ve made Β Ashley’s socca pizza three times already!! I suuuuuper love this.

Pineapple is a MUSTHAVE on my pizza. The rest is just a bonus.

Speaking of Ashley, I also made her new chocolate chip cookie dough almond butter.

And some chocolate hazelnut butter.

UNFORTUNATELY these aren’t for me. But it didn’t stop me from doing a little taste testing πŸ˜‰

I also made a white chocolate macadamia nut butter. Yeaaaaaah. No recipe yet because it needs some tweaking but it was still crazydelicious.

Here it is smothered on a banana sprinkled with chia seeds, toast with a smooshed avocado and hemp hearts and an egg scramble.


I’ve also fell back in love with salads. Not sure wtf happened with that one. Maybe the 8 months of winter??? Hmm. Whatev. They’re baaack πŸ˜€

Big bed of baby romaine, peas, sweet potato, goat cheddar, grapes, avocado and veggie burgers.

With Italian dressing.

Bed of baby romaine, broccoli, carrots, mushroom, peas, snap peas, veggie burger, avocado and goat cheddar.

With a dressing of Braggs and ginger/garlic.

Bed of romaine (I bought a huuuge container from Costco obv), broccoli, snap peas, red pepper, ginger, garlic, veggie burger, avocado, goat cheddar and tamari roasted pumpkin seeds.

Romaine, sauteed kale, roasted brussel sprouts, sauteed purple cabbage, onions, red pepper, peas, avocado, veggie burger, goat cheddar and tamari roasted sunflower seeds.

I love the little trees.

I busted out my spiralizer to make some zucchini noodles that I topped with a stirfry Andrew made. Not sure what was in the sauce but veggies are just green peppers, celery, carrots, onions, snap peas and water chesnuts.

Soo fun!! I am loving the spiralizer!

Wheewwwww I think that’s it for meals. Noteable ones anyway. πŸ™‚

Something else I wanted to tell you guys was that I have been doing Jillian’s 6-week six pack. I obviously know a six pack in 6 weeks is a little lofty but it sure is a nice change from my usual ab stuff.

This vid shows the first circuit. You FLY through the second circuit. She doesn’t do the best job of describing each move but it only takes a sec to figure it out. My abs are happy happy campers. And I am a sweatmess. πŸ˜€

Okay I think that’s it.

The rest of my day looks something like this:

  • laundry
  • workout
  • groceries
  • mailing some packages
  • making something for a 50th bday tomorrow at work
  • making my lunch/snacks for work tomorrow
  • supper with Andrew’s parents (who just got back from New Zealand!!!!)
  • blog reading/emails (hopefully!!)

Sorry for my missing self the past little bit. I received some pretty discouraging news last week and have been in a food/workout/life rut ever since. But I’m picking my bottom lip off the ground and moving on πŸ™‚

Just a small kink in my life plans but everythings gotta happen for a reason right? Riiiight.

In lieu of my life rut, I didn’t take hardly any food pics! BUT I have some adorable puppy pics! My friend Kristi came over yesterday so I could meet him and take him and Beasley for a walk.

****Small confession….I totally thought that today was St. Patrick’s Day so I was trying to add greens to my meals {I realize how lame it sounds now lol} and only found out that it was only the 16th when Andrew came home from work and told me the date. Uh huh. So yeah…onto the food πŸ˜€

I mixed 1 tsp of spirulina into my yogurt {thanks Emilia!} and topped it with frozen raspberries.

I cooked 1/2 cup egg whites + 1 whole egg with a ton of fresh dill and mixed in a laughing cow.

And enjoyed a juuuicy pear on the side.

A while ago I won a crazyawesome giveaway from Kristie over at Lighter Portions and it finally came in the mail!! I won $50 to CSN Stores but was having some problems with shipping to Canada. The rep I was dealing with was named Cameron and he was the absolute best! He responded to my emails super fast and was just an absolute doll. CSN Stores ended up paying for my shipping so I could get what I wanted πŸ™‚ Long story short = CSN Stores are fantastic!!!

Here’s what I got:

A spiralizer!! I have wanted one forevverrrr and now I have one!! Woot wooot! I used it to spiralize a carrot for my lunch today.

I topped the spinach and carrots with chopped celery, green onions, avocado, hummus and leftover lentil walnut loaf.


After lunch I took my book and a blanket outside to sit in the sunshine. It was soo nice today and I am soooo ready for spring!Β {As I started typing this it started to snow again. Uggggh}

I came inside to workout but sooo was not feeling the 30 day shred today. I have been doing level 3 and my back and abs are a liiittle bit sore today so I thought I would do Jillian’s yoga meltdown. Level 2. Uh yeah. Definitely underestimated the rank.

This is for suure a step up from level 1. For me anyways πŸ˜‰


Supper was just a mishmash of random food.

Veggie burger on toast with grainy mustard, relish and goat chedda, roasted bnut squash and some strawbs!

Squash is smothered with the gloooorious Tiger Tiger May-o with Indian Tikka.


I think that’s about it from me tonight, mmmkaaaay? I have an orthodontist appointment bright and early {3+ years of Invisalign….} and then I have an appointment to give blood! Cross your fingers my iron levels are up!!

Oh and R.I.P. Nate Dogg. If you ever listened to Chronic 2001 {don’t pretend you didn’t} his songs were stuuuuck in your head.

Earmuffs if you don’t like swears.

Did you have a good weekend?

I did the work thing but now I’m on dayssss off!!!!

So you might be wondering about the title of my post. Well let me explain.

I am such a curious person. I love seeing what’s in people’s fridge’s, cupboards, purses, etc. I always like to know what food people are eating, what products they use/like or what kind of things they carry with them on a daily basis. Anyone else weird like me??

It’s made by Matt & Nat, is made out of vegan leather and the lining is made out of 100% recycled bottles. I know I’m a recycle nerd. NBD.

And it’s got magnetic flap and a bunch of zip pockets which I love!

This stuff {with the exception of the book, gift card and protein bar} is almost guaranteed to be in my purse at all times. I just started getting back into reading so the book is kinda a new thing. Β It is SO INTERESTING so far.

I almost always have some food in my purse. YUMM!!


Onto the food!

I made granola the other day. Yup and it’s already gone. Imaaagine that.

I modified Angela’s Chocolate Dessert Crunch Granola recipe.

  • 2 & 1/4 cup regular oats
  • 1/2 cup peanuts (or whatever nuts you prefer) 1/2 cup hazelnuts, 1/4 cup chopped
  • 1/2-3/4 tsp kosher salt, to taste (I used 3/4 tsp)
  • 2 tbsp peanut butter (or other nut butter)
  • 1 tsp pure vanilla extract
  • 1/3 cup + 2 tbsp brown rice syrup (this gives the clumpy factor) 1 tbsp brown rice syrup + 1/3 cup unsweetened applesauce
  • 3 tbsp coconut oil 1 tbsp coconut oil
  • 1 & 1/4 cup dark chocolate chips 2 tbsp cocoa powder + 1/4 cup vegan chocolate chips


1. Preheat oven to 325F and line a baking sheet with parchment or a non-stick mat.

2. In a large bowl, mix together the dry ingredients (oats, cocoa powder, salt, hazelnuts). In another smaller bowl, stir together the oil, brown rice syrup, applesauce and peanut butter. Heat in microwave for about 45 seconds. Stir well and stir in vanilla.

3. Add wet to dry and stir very well until oats are coated. Spread on baking sheet and bake at 325F for 20-25 minutes, flipping once half way through (it will be very sticky, not to worry!). Allow to cool on baking sheet for about 30 minutes before transferring into a container. I store mine in the fridge to keep the chocolate firm. Makes 6 cups.

I have been enjoying the granola by itself {it is sooo crazy addicting}, on top of yogurt

and mixed in with some peanut butter puffins, blueberries, hemp hearts and a big spoonful of pb.

Mixed kale, grapes and a sweet potato. Siiimpleton.

Veggie burger with grainy mustard and avocados, mixed kale and grapefruit.

Big chunk of pumpernickel bread, fried cabbage, quinoa salad and roasted asparagus.

I was thinking today that I haven’t done a post where I show you all my eats in a day for a loong time and since I took the day off work {my stomach was really not feeling well last night and I was having trouble sleeping} I had lots of time to photograph my fooood!


I haven’t had pancakes in foreeeeever. I don’t even remember when. But when I was laying in bed this morning reading blogs I came across this delicious looking post by Lauren.

Bam. Breakfast.

Chai Spiced Coconut Pancakes with Macadamia Nuts, Toasted Coconut, and a Creamy Coconut Sauce. CRAAAAZY. And minus the chai.

I substituted almond milk for both the reg milk and the coconut milk. The creamy coconut sauce is out of this world! I don’t know why I have never thought of mixing coconut butter with almond milk before. Please do it. You will not regret it πŸ˜€


I actually made my lunch last night for work today but since I didn’t go I got to add some snacky sides that I normally would of eaten during the morning while working.

I had a big bowl of sauteed kale with vinegar topped with quinoa salad and toasted tamari sunflower seeds.

Quinoa Salad

  • 1 cup uncooked quinoa
  • 2 cups veggie broth
  • 1 red pepper
  • 1 orange pepper
  • 1 yellow pepper
  • 1/2 cup celery, chopped
  • 1/2 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 tbsp light extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 tbsp lemon juice
  • 1/2 white vinegar
  • 1-2 tsp soy sauce
  • 1 clove garlic, minced
  • salt to taste

Bring veggie broth and quinoa to a boil. Put the lid on and simmer over low heat for 15 minutes, until all liquid has been absorbed. Let cool completely.

Meanwhile, chop peppers, celery, green onions and cilantro. Whisk remaining ingredients {from oil to salt} together in a bowl. When quinoa is cooled mix together with veggies and pour dressing on top. Mix well to combine.

This salad is amazing as a side but can definitely be a main too, with some added chickpeas or tofu πŸ™‚

Gluten-free crackers with a babybel.

Some of the best green grapes everrrr. They were all so firm and perfect. I haaaate squishy old grapes. YUCK.


Supper started with a snack! Of the best part of the broccoli — THE STEM! {Right Mom??}

I prepped half this meal yesterday so I wouldn’t have much to do tonight. Brilliant timesaaaver.

The pasta sauce is just a can of roasted tomatoes, 1/3 cup cooked green lentils, 1 can whole mushrooms, 1/2 onion, 2 cloves garlic, and some random spices simmered for about an hour.

Roasted broccoli {400F for 25 minutes}, large chunk of toasted pumpernickel bread with Earth Balance and garlic powder and King Soba millet and brown rice pasta with the lentil pasta sauce and goat chedda.


Just as I am obsessed with kale {although I didn’t eat any today –shocker!!!}, I am obsessed with grapefruit. No sugar needed.

And a deep chocolate vitatop with almond butter and trail mix sandwich. This is my absolute favorite snack right now!
