Hey friends!

Hope you all had a fantastic Easter and got to spend some qt with the ones you love!ย 

Andrew and I went to my parents house and if I was a good blogger I would of photographed the amzinglycool treasure hunt my parent’s sent us on! Shame on me. Sorry!!ย 

I did have time to start my mystery box challenge though! Fiiinally ๐Ÿ™‚

Did you know:

—–> Sunflower seeds are a very nutrient rich food, high in vitamin E and B6 and minerals such as magnesium, iron, phosphorus, calcium and zinc.

—–> They are high in protein.

—–> They are a good source of fibre.

—–> Good source of healthy fat and suuuper tasty on salads, in veggie burgers, muffins and eaten by the handful. But they are especially good as sunflower seed butter.

To make your own is soo easy!

1. Roast 2 cups of raw unsalted sunflowers for about 10 min at 325F or until golden brown and fragrant. Do not over bake!ย 

2. Place seeds in the food processor and let the magic begin ๐Ÿ™‚

3. After about 2-3 minutes you will need to scrape down the sides with a spatula to make sure all the seeds get processed. It should look a little something like this.

4. Continue scraping down the sides every couple minutes.ย 

5. This is what it should look like after about 5 minutes.

6. And after about 6 minutes. Chunky monkey.

7. After about 6:30-7 min it should start getting all buttery. Don’t stop!

8. Process and scrape down the sides a few more times until it is smoooooth as buttah. Literally ๐Ÿ™‚

9. Pour into a jar and you’re finished!

You can use this anywhere you would normally use any other nut butter. Liiike on toast, brown rice cakes, sweet potatoes, oatmeal, bananas, uh…everything!!ย 

If you’ve been reading my blog for awhile {and if not, what up new reader} you would know that I lovee hummus. And guacamole. But why eat them separately when they are soo good together?ย 


1 can chickpeas, drained, rinsed and peeled

1 avocado

1/4 onion, chopped

1/4 cup fresh cilantro

1 garlic clove

juice of 1/2 lemon

3 tbsp veggie broth

1 hefty tbsp of sunflower seed butter

1/2 tbsp cumin

salt and pepper to taste

Mix everything together in the food processor until smooth. Finished!

This is my favorite way to eat the hummamole…..

smothered between two veggie burgers

and as dippage for barbecued veggies. Yuuuuuuum.


Now to get all unfood related on your booty……Andrew and I got the house!! Weow!! We are soo completely happy and I can’t believe I haven’t told you sooner! {Obvs what happens when you don’t blog in 2 weeks!} Anyway, we move in on Friday, May 13 ๐Ÿ˜€

Hey lovebugs!!

Hope you’re having an incredible week ๐Ÿ˜€

I am working my last night shift tonight and then I’m off for 4 days! I can’t wait!!

Who’s participating in What I Ate Wednesday?? I am!! Holla Jen!!


To say that I am only slightlyย obsessed with Ashley’s banana cornbread bake would be an understatement. I’ve eaten it 5 days in a row now!! It is that good. Oatmeal who?

Topped with a layer of homemade vanilla pecan butter. Can’t.get.enough. This keeps me full for like 4.5 hrs! Supreme.


Huge bowl of cantaloupe. Soo fresh and delicious.


My dad was in the city yesterday (awesome!!) and my mom had sent along some quinoa salad for me! She knows me soo well ๐Ÿ™‚

Baby romaine, quinoa salad, chickpeas, avocado and a big blob of hummus. I’m DEFINITELY going to have this again today ๐Ÿ˜‰


I made another batch of vanilla macaroons for my parents. Not before sneaking a couple for me though. Duh.

I love these blond bad boys. They’re slightly crunchy on the outside, soft and yummy on the inside.ย 



Was taken to work so please excuse the fancy shmancy bowls.

Kale salad massaged with a dressing of oil, vinegar, lime juice, garlic, cumin and salt, chopped pickles, green peppers and hemp hearts.ย 

I โค massaged kale.

Insert 3 brown rice cakes and a ton of hummus.


Because I work 12 hr shifts I make sure to bring tons of food so I don’t starve! I try to eat something every 2-3 hrs to keep my belly happy and to keep me awake ๐Ÿ˜€

One good thing about working a night shift is the opportunity to have breakfast again! I love having the x2.

This may not look like much now, but after 4 minutes in the microwave it turns into an quinoa apple pie ish breakfast delight.ย 

It’s Leanne’s 5 minute Apple Quinoa Flake Bakeย and youย should make it now! Tastes amazing and seriously takes only 5 minutes. Winning!ย 

That’s about does it! I’m off for a quick run and then it’s back to work!!ย

My weekend was incredible. I have sooo many things to be thankful for ๐Ÿ˜€

Andrew’s nephew was born on Friday!

Baby Jaxon โ™ฅ


I got to do yoga every day this weekend and my body is soo happy! I didn’t realize how stiff I was. Andrew and I also got back into running outside. Now that it’s finally SPRING I love being outdoors in the sunshine!


We also cleaned the whole house! Well, almost the whole house. The important things got done ๐Ÿ˜‰

I love having everything where I can see it. That way I don’t forget about it and it goes bad.

I have also been eating some pretty tasty food! CHECK IT OUTT ๐Ÿ˜€

Delicious purple grapes with butternut squash stufffffed with chili and topped with goat cheddar.


Toast with mashed avocado, 1/2 an orange and frittata with soo much kale.

The frittats was just 3 eggs + 2 egg whites, kale, mushrooms, leeks, red pepper and basil baked in a 400F oven for 20 minutes.


Just some favorites….banana with vanilla pecan butter sprinkled with hemp hearts, sauteed kale and purple and green grapes.


Super salad: romaine, radishes, avocado, crumbled kale chips, sunflower seeds, red peppers, 1/2 cup mixed beans, cucumber and a homemade dill dressing.


The BESSSST breakfast evvva: Ashley’s Banana Cornbread Bake. Made with a flax egg. Make this ASAP. It’s aaaah-maaa-zzzzzing.


Big salad of sauteed kale, cranberries, pecans, avocados, beans, hummus, and heavy on the cilantro salsa.


Stir fry made with asparagus, red peppers, mushrooms, onions, broccoli and cashews with brown rice.


So so sooo many vanilla bean macaroons. My dehydrator has been workin’ overtime lately ๐Ÿ˜‰

Ah speaking of work….I worked 12 hours today and have another 12 tomorrow. Time for bed!

Hey friends!!

Happy April! {6th} ๐Ÿ˜€

I can’t believe how fast the year is going already! It feels like we just started housesitting/dogsitting and now it’s already time to move out!! The past 8 months have just flown by! Speaking of moving out….Andrew and I put an offer on a house yesterday! We still have to wait to hear back from the seller but this house is perfect for us so PLEASE keep your fingers, toes, arms, legs crossed and send positive thoughts our way!!

Did you notice my new tab?? I haven’t added any since I started my blog a year ago so I thought maybe it was time lol. I have been in love with Lisa’s blog for awhile now and when she offered the opportunity to participate in Mystery Box, I had to join!

Egg white + 2 whole egg <—–gotta love the iron scramble with organic ketchup, raspberries and quinoa cakes with mashed avocado, hemp hearts and goji berries.


Beastly salad with baby romaine, sliced baby peppers, avocado chunks, baby pickles, goat cheddar, sliced grapes, and a veg burg.


I’m pretty sure sometime on this day I got my new plate. It’s now the only plate I use for photos ๐Ÿ˜‰

Socca bruschetta with goat cheddar and roasted brussel sprouts. Heeeeellllzzzz yes.


Base of romaine lettuce, spiralized zucchini noodles topped with with chickpea tagine with extra carrots and cauliflower.


Eggstada: 1/4 cup chickpea flour + 1/4 cup water + salt + italian seasoning. Top with goat cheddar, eggs, chopped tomato and avocado. {Missing salsa}.

Gorg cara-cara orange.


More baby romaine, spiralized raw beets <—— sooo delicious, sliced peppers, sliced grapes, veg burg, sunflower seeds.


YUMMY quinoa flakes cooked the same as my usual oats, frozen blueberries, raspberries, gojis and a big blob of almond butter.

Quinoa for breakfast = WIN.


Supperย at my parent’s house of stirfry veg and mixed rice.

With a deeelicious side salad smothered in greek dressing.


More egg yolks mixed with my mom’s homemade salsa, big big bunch of sauteed kale and fresh strawbs.


My version of burga and friesss. Veg burg with tons of relish and mustard, big salad and sweet potatoes baked with blended chickpeas, peppers, nutritional yeast and cilantro. Strange? Yes. Delicious? Not exaaactly. ๐Ÿ™‚


Sauteed kale, spiralized zucchini <—–can you tell I’m obsessed? homemade veggie chili topped with nutritional yeast.


Banana slaaaaathered in almond butter with hemp hearts a la Carrie ๐Ÿ˜€


Grapes, sauteed kale, cara-cara orange and eggies.


Monster supper salad with romaine, quinoa cooked in veggie broth, steamed broc, roasted beets, peas, walnuts with homemade avocado ranch.

Avocado Ranch Dressing/Dip

  • 1/2 avocado
  • 1/2 cup greek yogurt
  • juice of 1/2 lemon
  • 1 small clove garlic
  • fresh chives
  • fresh dill
  • fresh parsley
  • salt
  • unsweetened original almond milk

Put all ingredients into a food processor and process until smooth. Adjust herbs to taste. Add almond milk to thin for dressing or leave out completely and eat as a dip. Def tastes awesome the next day, too ๐Ÿ™‚
