My weekend was incredible. I have sooo many things to be thankful for šŸ˜€

Andrew’s nephew was born on Friday!

I got to do yoga every day this weekend and my body is soo happy! I didn’t realize how stiff I was. Andrew and I also got back into running outside. Now that it’s finally SPRING I love being outdoors in the sunshine!

We also cleaned the whole house! Well, almost the whole house. The important things got done šŸ˜‰

I love having everything where I can see it. That way I don’t forget about it and it goes bad.

1. I used to race home from school when I was young to watch the Urban Peasant cooking show and scribble down recipes for my mom to try.

2. I’ve always worn men’s hockey skates.

3. There are two vegetables I do not like: okra and eggplant.

4. I’m allergic to bees.

5. Troop Beverly Hills is one of my favorite movies šŸ˜€ šŸ˜€

6. I took tap and jazz dancing for 7 years and piano lessons for 5. I WISH I had continued with all 3.

7. I twirl my hair when I’m nervous/frustrated.

I have also been eating some pretty tasty food! CHECK IT OUTT šŸ˜€

Delicious purple grapes with butternut squash stufffffed with chili and topped with goat cheddar.

Toast with mashed avocado, 1/2 an orange and frittata with soo much kale.

The frittats was just 3 eggs + 2 egg whites, kale, mushrooms, leeks, red pepper and basil baked in a 400F oven for 20 minutes.

Just some favorites….banana with vanilla pecan butter sprinkled with hemp hearts, sauteed kale and purple and green grapes.

Super salad: romaine, radishes, avocado, crumbled kale chips, sunflower seeds, red peppers, 1/2 cup mixed beans, cucumber and a homemade dill dressing.

The BESSSST breakfast evvva: Ashley’s Banana Cornbread Bake. Made with a flax egg. Make this ASAP. It’s aaaah-maaa-zzzzzing.

Big salad of sauteed kale, cranberries, pecans, avocados, beans, hummus, and heavy on the cilantro salsa.

***

Stir fry made with asparagus, red peppers, mushrooms, onions, broccoli and cashews with brown rice.

So so sooo many vanilla bean macaroons. My dehydrator has been workin’ overtime lately šŸ˜‰

Ah speaking of work….I worked 12 hours today and have another 12 tomorrow. Time for bed!
