Hey guys!

Did you have a good weekend?

I did the work thing but now I’m on dayssss off!!!!


So you might be wondering about the title of my post. Well let me explain.

I am such a curious person. I love seeing what’s in people’s fridge’s, cupboards, purses, etc. I always like to know what food people are eating, what products they use/like or what kind of things they carry with them on a daily basis. Anyone else weird like me??

It’s made by Matt & Nat, is made out of vegan leather and the lining is made out of 100% recycled bottles. I know I’m a recycle nerd. NBD.

And it’s got magnetic flap and a bunch of zip pockets which I love!

This stuff {with the exception of the book, gift card and protein bar} is almost guaranteed to be in my purse at all times. I just started getting back into reading so the book is kinda a new thing. Β It is SO INTERESTING so far.

I almost always have some food in my purse. YUMM!!

Onto the food!

I made granola the other day. Yup and it’s already gone. Imaaagine that.

I modified Angela’s Chocolate Dessert Crunch Granola recipe.

  • 2 & 1/4 cup regular oats
  • 1/2 cup peanuts (or whatever nuts you prefer) 1/2 cup hazelnuts, 1/4 cup chopped
  • 1/2-3/4 tsp kosher salt, to taste (I used 3/4 tsp)
  • 2 tbsp peanut butter (or other nut butter)
  • 1 tsp pure vanilla extract
  • 1/3 cup + 2 tbsp brown rice syrup (this gives the clumpy factor) 1 tbsp brown rice syrup + 1/3 cup unsweetened applesauce
  • 3 tbsp coconut oil 1 tbsp coconut oil
  • 1 & 1/4 cup dark chocolate chips 2 tbsp cocoa powder + 1/4 cup vegan chocolate chips

Directions:

1. Preheat oven to 325F and line a baking sheet with parchment or a non-stick mat.

2. In a large bowl, mix together the dry ingredients (oats, cocoa powder, salt, hazelnuts). In another smaller bowl, stir together the oil, brown rice syrup, applesauce and peanut butter. Heat in microwave for about 45 seconds. Stir well and stir in vanilla.

3. Add wet to dry and stir very well until oats are coated. Spread on baking sheet and bake at 325F for 20-25 minutes, flipping once half way through (it will be very sticky, not to worry!). Allow to cool on baking sheet for about 30 minutes before transferring into a container. I store mine in the fridge to keep the chocolate firm. Makes 6 cups.

I have been enjoying the granola by itself {it is sooo crazy addicting}, on top of yogurt

and mixed in with some peanut butter puffins, blueberries, hemp hearts and a big spoonful of pb.

Mixed kale, grapes and a sweet potato. Siiimpleton.

Veggie burger with grainy mustard and avocados, mixed kale and grapefruit.

Big chunk of pumpernickel bread, fried cabbage, quinoa salad and roasted asparagus.

‘Sup peeps!

Happy June 1!!!

I hope that means summer is finally here!

It was half decent out today (finally!) so Beaz and I spent a lot of time outside.

I had the same thing as yesterday for breakfast.

That might be boring to you, but I have found a new love β™₯

Don’t be surprised if you see scottish oats around here like everyday πŸ˜‰

They are just soo good! And sooo filling. But Ashley is totally right when she says breakfast makes her sweat!!

There was an addition of chocolate covered mulberries but other than that, exactly the same. I know when not to eff with a good thang.

Chocolate covered mulberries are tasteh. I made them exactly like Angela made her chocolate covered raisins (I made those too) and they turned out better than I expected.

I ate LOTS of the mulberries before this pic was taken πŸ™‚

I slept in today by a lot! I had lots of shiz to get done and missed out on the whole morning almost. I tried to make it down to Lululemon before it got too busy, but no such luck. I drove around for 25 minutes and still couldn’t find a parking spot. I gave up and went and got fitted for a new bra instead. And it looks like I’ve been wearing the wrong cup size for like the last year. Sweet. Has anyone else had this problem? A little personal-I can’t understand-but seriously, the girl that did my fitting says this happens to like 70% of women or something craaazy!

I ended up having a piece of lemon poppy seed cake and a london fog latte from Tastebuds for lunch when I met my friend Janel and her son Treyton for coffee. She is 6 months pregnant and soo cute! She is still so small with just a little basketball belly πŸ™‚ I forgot my camera, so no pics 😦

When I got home Andrew and I took the Biz for an hour or so walk and then I did a 25 minute fat blast on my treadmill and got a massive cramp! I am totally not a runner (yet) so I have no idea why this happened or what I could do to make it go away. They’re awful!! Any advice???

For supper Andrew barbecued corn on the cob and veggie kabobs. I seasoned my corn with tons of chili powder and garlic powder with a little bit of Earth Balance.

Tossed the corn and veggies on top of some arugula and mixed greens and then topped everything with fresh dill, 1/4 of an avocado, 2 big spoonfuls of chili. Then I made it rain feta. Cuz I’m ghetto like that.

And put a big glop of ranch on top to finish it off! It was suuupreme.

After supper I worked on a picture that I saw online a couple of months ago that I want soo bad but cannot afford. I bookmarked it I decided to make it myself. Well, try to anyways. I’ll take pics when I am all finis πŸ™‚

I snacked on these jalapeno chippers between cutting and folding little hearts

Andrew and I are totally addicted to these Hardbite chips! I am such a salty snacker and I love that these are vegan and made in Canada. I only wish that we could get all the flavors here!! There are so many more I wish I could try. Naturally Home Grown Foods…..send me all your chips!! (Especially the coconut curry ones! YUM)

Anywhoo, time to get to bed so I can get up early tomorrow and actually have a productive day πŸ™‚

Heeeeey!!!

This is going to be a super short one with not much talkie talkie.

I am exhausted and the temp inside my house is 85F.

For reals. Its a sweatmess x2.

Beasley is eating ice chips he is so hot!

Breakfast was just a simple 2 egg white omelette with a light laughing cow, some organic raspberry jam and 1/2 a mango.

Smooooshy egg cheesy jammy goodness.

Lunch was pretty boring. Kale salad with steamed broccoli, brown rice and left over nacho sauce.

I also had a cheese string, some triscuits, a millet puff I found in the back of the work freezer and some cherries.

Supper was a pita pizza with organic pizza sauce, broccoli, mushrooms, peppers, onions and pineapple. A side salad with grape tomatoes, feta and ranch, pepperoncini, pineapple, Β too.

Baked in the oven for 20 minutes with a teeny bit of goat cheese.

I love the combo of feta, pineapple, peppeoncini and ranch. Bowwowowow.

After supper I baked mini muffins (mmmmaybe the reason our house is so hot??) again because I ate 5 of them last night and took the rest to work today. I seriously am a MONSTER.

They are lemon rosemary mini muffins though! I would have NEVER EVER thought that this would be good but they are RIDICULOUS. Like I said, I ate 5!!!!

I am drooling again just thinking about them! And I just ate one hehe πŸ˜‰

So teeeny, sooo gooood! I’ll post the link tomorrow when I’m not so laazy!

Dessert was a Stoneyfield Apple Loves Blackberry yogurt, chopped cherries, hazelnut almond butter and hemp hearts.

I added half a muffin at the end cause I rollllll just like that.

It was hhhhhooootttt here today! Like 28C/82F.

Beasley and I spent the whole day outside being bums.

We had breakfast outside, too.

Strawberry Vanilla Rhubarb Smoothie

3/4 cup frozen strawberries

1/2 cup frozen rhubarb

1/2 scraped out vanilla bean

1 cup of almond milk

1 juiced orange

xanthan gum (optional)

Mix everything together in the blender. Drrrrink up!

Beasley had to examine the empty glass πŸ˜‰

I read a bunch of cookbooks and the new Loulou magazine.

They did a piece on my little city! I was so excited to see this. Because Loulou is a Canadian magazine they are always doing feature pieces for shopping in a different city. I have looonged to see little old Saskatoon in the mag and I finally got to! YAY!

Lunch was eaten outside as well – I don’t usually like eating outside because of all the bugs but I just couldn’t bring myself to sit inside today.

Goat chedda slices, half a red pepper, red pepper hummus and about 1/3 cup leftover baked beans.

We had almost no food in our fridge (obvious by my leftovers lunch) so we made a big grocery shopping trip.

I was sooo hungry when we got home so supper was kind of made on the fly.

Homemade Annie’s macaroni made with Happy Herbivore’s low fat vegan nacho sauce and broccoli. A HUUUGE salad with roasted onions, asparagus, mushrooms, baked goat cheese discs and a tiny piece of cranberry walnut purple wheat bread.

That sauce is sooo goood! I’m planning on eating it tomorrow it for lunch too πŸ™‚

The cheese was sliced into thin discs, dipped in an egg and then some panko bread crumbs with italian seasoning. They are baked in the oven on parchment paper for 15 minutes at 400F, flipped half way through.

MMmmmmm!

We took Beasley for a walk after supper and then came home and had dessert.

I bought cherries today at the grocery store and I couldn’t be more excited!! I look every time we go to the store and have been going through a super withdrawal all winter! Soooo I had some on top of my carrot cake ice cream and the last of the millet puff bars.

Okay it’s back to work tomorrow so I should get to bed. It’s a sweatmess in here so hopefully I’ll be able to get some sleep! πŸ˜‰

Happy Monday πŸ™‚

I feel like a person that works at a normal job this week!

I am working Monday-Thursday. Still 12s though.

I start my training tomorrow!!!!!

And then I’m back on CPIC on Wednesday for night shifts!!

We were going to have a “Good Riddance” party if I was switching platoons, but because I’m not I was thinking we should have a “You Can’t Get Rid of Me” party instead!! I should PROBABLY bring my faves some treats for night shifts πŸ™‚

Guess who made an appearance this morning??

an overnight oats monster!! I tried to give her bangs πŸ™‚

the toppings were: Saskatoon berries, almond butter, granola, craisins.

the inards were: 1/4 cup oats, 1 tbsp chia seeds, 1/4 cup almond milk, 1 yogurt.

all smooshed together


For my lunch I packed up a HUUUGE salad.

It have everything in my fridge in it. Almost.

Organic greens, dill, red peppers, mushrooms, olives, artichokes, goat chedda, onions, grape tomatoes and 2 egg whites.

I topped it with the best dressing in the world. It will never get old.

I also steamed some broccoli and cauliflower for a snack. Topped it with rice parm and hot sauce.

I was running late so a few snacks escaped my camera.

3 triscuits, a cheese string and a pear. They were all great πŸ˜‰

After work I did the 30 day Shred again.

I did it alone this time so that Andrew could finish making supper haha.

Beasley tried to do level 1 but Jillian is just too tough for him.

He is so crazy.

Andrew made the best supper ever!!

I wanted to eat all the leftovers but figured I should save some for lunch tomorrow.

He got the recipe from the new Vegetarian Times magazine. WOWZA.

Hawaiian-style Sweet-and-Sour Roasted Pineapple and Bell Peppers

Meow.

I had it with about 1/3 cup brown rice, some spinach, veggie burger with mustard and hot sauce, Β and 1/2 of a Mountain bread organic wrap with a light laughing cow.

My stomach is so happy and so full.

And now I must sleep.

445am comes sooooo early!!

Happy Mother’s Day to all the moms out there!

Did you guys have a good weekend?

Mine was pretty dece πŸ™‚

Yesterday for breakfast I had muesli!

Which I haven’t had in forever! Sooo good.

I think it was about 1/3 cup muesli, 1/2 cup of almond milk and 1 tbsp of cashew butter.

We did some grocery shopping at Costco and then at Co-op.

I picked up a treat at each place.

Next to homemade hummus this is totally my favorite. Clearly evident by the massive tub I got πŸ™‚

I also got these chippers


They are made in Canada and taste AAAMAZING!! There is like 170 cal per 20 chips. LOOOOVE THEM!

I had them for lunch with a salad I picked up from Co-op. The bomb salad. It has some bean salad, greek salad, spinach, broccoli, cauliflower, bean sprouts, carrots, and some nuts. It’s just out of this world.

No need for dressing.

Rock salt and vinegar chips with a cheese string.


After lunch we took Beasley for a walk and then we had a nap.

I fell asleep reading blogs haha.

Supper was made and eaten in a hurry.

Another “born yesterday” bun smothered in hummus and relish with a piece of mahi mahi baked with chili powder and paprika, 1/2 an orange and the rest of my salad.

We went over to my cousin’s for a games night after supper and it was so much fun. There was about 9 of us and we played Boulderdash. I had never played before and it was super funny but I am terrible at it! The story of a man and his pig was all I could come up with for a movie script. And everyone knew it was mine 😦

I snacked on too much last night! Like waaay too many snacks haha.

We had a huge fruit tray with dip, licorices, cheezies, and hickory sticks.

And maybe some frozen yogurt and more chips when I got home πŸ˜‰

I woke up today and took Beasley for a walk first thing.

Along our walk I came across these beautiful violets.

I used to get them for my mom when I was little for mother’s day and couldn’t believe when I found one today.

I stuck it in her card and sent it home with my brother.

For breakfast I made a smoothie of strawberries, 1/2 a frozen banana, freshly squeezed orange juice, a handful of spinach and some xanthan gum. I tossed some granola on top for a little crunch.

My mom sent me an awesome book!

And while I was flipping through it I came across this page

Did anyone know this???? I had no idea. I always yank out too much tinfoil. NOT ANYMORE.

For luunch I had a barbequed veggie burger with mustard, hummus, cottage cheese and triscuits.

It was so simple but so perfect.

Then it was BATH TIME for Beasley!!

He’s been smelling pretty stanky lately πŸ™‚

Hahaha omg I just love that face.

Andrew did the 30 day Shred with me today! It was awesome. I would rather work out with someone then alone and he is such a good workout buddy. We were both sweeeeeating!! And almost late for supper.

We went to Andrew’s parent’s house for Mother’s Day supper tonight and we brought a salad with organic greens with dill, red peppers, goat chedda, mushrooms and onions. And we made some spinach and artichoke dip cups. Supper was so amazing. We had salad, roasted potatoes and carrots, salmon skewers and garlic bread. Andrew’s sister-in-law made death by chocolate for dessert. I almost died. I wanted to eat the whole bowl, but I refrained. Barely πŸ˜‰ No pics though! So sorry!!

Okay, it is totally bed time now!

It’s back to work tomorrow for me and I need my beauty sleep.

I took last night off from posting so I’ll be playing a little bit of catch up tonight πŸ™‚

Yesterday morning I got up fairly early to make granola bars for a SMALL TOWN BLOOGER MEET UP with this coolio girl.

I had a pretty light breakfast because I knew we were going to one of my favorite places for lunch.

One egg with organic ketchup and a pear.

I met Allison at City Perk and we had an awesome visit! She is so nice and it was awesome to meet another Saskatoon blogger! It was a sweet meet.

I had a romaine salad with some kind of vinaigrette that I can’t remember. Whateves, it was awesome anyway πŸ™‚

I also had the best unpictured London Fog I’ve ever had in my life.

For reals.

For supper Andrew and I went out for Indian!!

Booyah!!

We went to India Palace and I had the matar paneer.

Oooh multiply this plate by about 3. And add some naan bread, too.

Hells yes I love Indian food.

We were going to go see Nightmare on Elm Street last night but bailed and went mini golfing instead.

And indulged in more food. Obvi.

Dessert was a yummy mess of vanilla frozen yogurt, one of my granola bars (with added marshmallows) and strawberries.

Today I got woken up with breakfast in bed!!

I made this shiz myself. Andrew did go to the store this morning and get all the ingredients though πŸ˜‰

Baked egg + 2 egg whites, broccoli, fresh dill, red peppers and mushrooms with a tsp of milk on top baked in the oven at 350F for about 15 ish minutes and then smeared with goat cheese. Served with 1/2 a piece of The Big 16 bread and some grapes.

May for Andrew is Mooostache MoustacheΒ  May.

Basically he and some guys from work grow mooostaches in May.

Yup.

Right now my boyfriend looks like this handsome gentleman.

I skipped lunch today by accident and made up for it with a big supper.

We made pita pizzas and I also had sugar snap peas and steamed cauliflower with mushroom gravy.


The pizza had organic tomato and basil pizza sauce, mushrooms, onions, red peppers, broccoli and the tiniest sprinkle of goat chedda.

The mushroom gravy had the usual suspects of laughing cow, almond milk, tons of pepper, fresh dill and mushrooms.

Dessert was EPIC.

In my books anyway.

Good Karma Organic Rice Divine Carrot Cake ice cream.

I don’t even have words for how good it was.

Happy Wednesday!!

I sure did πŸ™‚

Beasley and I went for a walk this morning with my friend Kristi and her parent’s puppy Heidi. So cute.

Beasley wouldn’t leave her bunny Jersey alone though!

Pretty cute but I felt bad for the little thumper being tormented by the little monster!

Before I left this morning I made some homemade Roasted Maple Cinnamon Almond Butter

You heard me right.

The bomb diggity recipe is riiiiiight here.

Store bought nut butters are dead to me.

This is aaamaaaazing.

I snuck a few of these yummers before they went in the processor πŸ˜‰

It took about 30 minutes with my food processor and with all the stopping to scrape down the sides and taste test.

The finished product pics are actually from batch x2 (I gave the whole first batch to Kristi!) and next time I will be quadrupling the recipe πŸ˜‰

I had to try out a teeny bit before we went for our walk.

With half a mango and a piece of The Big 16.

Breakfast looks quite similar to last nights snack…

half a mango, piece of Mack’s Flax, a laughing cow and Crofter’s Superfruit Spread. North America style.

After our walk I came home for some lunch.

Nothing interesting.

Leftover salad from last night with 1/4 avocado and more of Heather’s Hummy Mustard Dressing

Does anyone else eat the skin of mangos??

I make sure to wash them really well and then chow down!!

Love them.

After lunch I had plans to start making a baby gift from my friend Sheena (baby Tensley) but I fell asleep!

Loved nap time.

I only had about a 40 minute nap but felt way better after.

Time for more almond butter!!

Half of a granny smith apple with LOTS of butta.

When Andrew got home from work we piddled around the house and played with Biz outside.

COULD NOT decide on what to have for supper.

I had too many cravings like usual so decided to have them all!

BBQed mushrooms, asparagus and green peppers with cuban seasoning.

Steamed artichoke with lemons. Dipped in the hummy dressing.

I baked up some goat cheddar covered in italian breadcrumbs.

WoW.

I sliced them with dental floss (peppermint by mistake lol) just like my mom does with her cinnamon buns πŸ™‚

Final projecto

romaine lettuce topped with said grilled veggies, baked yam slices, baked goat cheddar and arty the artichoke.

Tomorrow is RECYCLING day!!

And EARTH DAY!!

Booyahs.

All my recycling for 2 weeks.

45 minutes later…

Could you imagine all of this going in the garbage???

I could never go back to a life of not recycling πŸ™‚

Just ooonne more little tid bit of my day.

Macadamia walnut hemp heart milk.

Mmmhhhm.

All nuts blended with some water and a pinch of stevia and then strained with a fine mesh strainer.

I mash the nut pulp with a spoon to get all the liquid out and then put it in the fridge to save for later.

And ready for drinkage.

Well not really.

I can’t milk. Even nut milks.

Call me crazy.

I just like to have it in my oatmeal and cereal and such. πŸ™‚

Okie dokie.

That’s it.

I reeeeally need to get to bed finish watching What Happens in Vegas!! Hehe

Wow. Four whole days without posting felt like FOREVER!!

Sometimes life work just gets in the way of the fun things but I’ll make sure that never happens again πŸ™‚

massaged kale and romaine caesar salad with nutritional yeast, red peppers, sprouts and caesar dressing x2

another salad with spinach, grilled veggies, baked cod with chili powder, paprika and lime juice, topped with Hummy Mustard Dressing . x2

I am so obsessed with this dressing. I want to put it on everything. Oh wait, I do πŸ™‚

I modify it a bit and put in a squirt of stoneground mustard, tiny squirt of jalapeno mustard, spoonful of hummus and water to thin.

SOOOOO GOOOOD.

Dinners

baked fish, steamed swiss chard, steamed carrots and brussel sprouts, brown rice with Braggs, goat chedda and two spinach and artichoke dip cups

another repeat salad with grilled veggies, fish, mustard dressing and a piece of Mack’s Flax with Earth Balance

tonight’s dinner was the best ever. As of late anyways.

GIGANTIC salad from Co-op salad bar.

Spinach, romaine, coleslaw, spoonful of greek salad, shredded carrots, cauliflower, broccoli, tomatoes, black olives, nuts, feta, chives, edamame bean salad, chickpeas, and probably a million other things.

MEOW. This socks my rocks off.

I left it dressingless so I could add more of the mustard/hummus when we got home.

And had a 1/2 a baked yam with baked beans with lots of hot sauce and pepper.

There are also some missing pasta dishes in there too. Not sure where those pictures went haha.

Snackers

We ate appies and cake and played spoons! VICIOUS game. Totally fun though πŸ™‚

So yesterday would have been my grandpa’s 87th birthday.

This is the first birthday since he’s passed away and I thought about him all day.

It was soo beautiful outside yesterday and I just know he would have had a great day πŸ™‚

Ah I miss him so much. SO MUCH. He was the youngest 86 year old! He still flew his plane and climbed trees right up until he got sick. He loved showing us everything on his farm and taking us for walks through the trails. We were so lucky πŸ™‚ πŸ™‚ πŸ™‚ πŸ™‚

Moving on…

So happy that I’m back!

I will be posting everyday again and I can’t wait to READ YOUR BLOGS AGAIN!!

Hey guys!

Hope everyone had a good day today!

It was pouring rain here all day 😦 so there was no walk for Beasley. Just lots of indoor playing πŸ™‚

I ended up having a wonderful snack last night.

Banana, wrap, almond butter, dairy-free chocolate chips, cinnamon and hemp hearts

I rolled it up and baked it in the oven at 400F for 15 minutes.

And topped it with the last of the coconut icecream that would not stay on the nanner.

The wrap flaked up like pasty and the banana was all smushy with the chocolate and almond butter.

It was GREAT.

Breakfast this morning was so so so phenomenal. x 10.

I made allie’s aaamzing protein pancakes.

I followed her recipe exactly except I added about 1/2 tbsp more of almond milk and I defrosted some strawberries to put on top.

They are actually really mini but they kept me full for 5 hours!!

And because I like to copy everything Janetha does a day later lol, we celebrated national grilled cheese day today! We named them because we are geeks. We also had a side tomato/red pepper soup.

The Husky Kiwi

2 slices Squirrley bread
1 tsp hummus
2 fresh pineapple slices, thinly sliced
1/4 smashed avocado
lots of goat chedda
two sliced pepperoncinis

It got its name because when I lived in New Zealand I ate TONS of pineapple grilled cheese sandwiches. And I also gained about 25 lbs living there haha.

Rustic Love

2 slices Squirrely bread
Earth Balance butter
thinly sliced red onion
goat chedda
regular chedda
prosciutto
1/4 avocado

Andrew set the sandwiches up. Cutieee.

Because it was a stay inside rain day, I decided to try out a new recipe.

I got it from the Whole Foods site but changed a few things. Including the name πŸ™‚

CarrOAT Cake Bars

1 cup oats
1/2 cup chopped walnuts
3/4 cup whole wheat flour
1/4 cup coconut flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
2 cups grated carrots
1/2 cup pure maple syrup
1/2 cup unsweetened applesauce
1/3 cup unsweetened coconut
1 tsp vanilla
1 tsp chia seeds + 3 tbsp water to make a binder

Preheat oven to 325F. Spray a cake pan with olive oil.

Combine oats, whole wheat flour, coconut flour, baking powder, baking soda, cinnamon, ginger, coconut and salt in a bowl and combine. In another bowl mix together carrots, maple syrup, applesauce, vanilla, walnuts and chia seeds. Put dry ingredients in the kitchenaid and combine and add wet ingredients while its mixing. Pour into pan and bake for about 1 hour.

I got to use my new Kitchenaid mixer! (Technically I used it the other day, but it was a complete cookie fail)

Colored soy sushi wraps!!!!

GAH! I have literally wanted these for about 4 ish years.

The day has finally come.

Look at all the pretty colors!

And they are all colored naturally with either spinach, tumeric, sesame, or paprika.

Of course I haaaad to make sushi for supper tonight.

I used the yellow, pink and green ones tonight.

I can’t wait to try them all.

They were A LOT different than nori though.

They were so much harder to roll!

And so delicate when cutting.

Luckily Andrew came to my rescue and salvaged the pink roll.

I mutilated the green and yellow ones. Oops!
