So I know I told you guys that I would be making a Baby Page so as not to overload you with all my crazy ramblings/thoughts/baby shiz but I couldn’t figure it out. Technically NOT technical at all so from now on baby posts will be mixed with food posts. Hope that’s okay 🙂
I don’t want to talk about babies at all though today! I want to talk about breakfast. Yummy yummy breakfast. If haven’t noticed on the blog before (I know it’s kind of hard with the lack of posts…) but I get into suuuuper food routines. I have no problem eating the same meal a couple times a week or month. Example: Peas and Thank You Zucchini Quinoa Lasagna. HOOKED. But I couldn’t imagine eating the same thing everyday for lunch or dinner. Boring much? But breakfast on the other hand is a completely different story.
A few years ago I never used to eat breakfast at all. I used to sleep until noon (or 2 or 3), wake up and have lunch. Or if I did wake up before lunch time I would eat leftovers for breakfast. Spaghetti at 8am? Yes please. I’m not sure when I came to the realization how important that first meal of the day is, but now I can’t imagine not eating as soon as I get up. And not leftover rice with mushroom gravy either 😉
Breakfast is the one meal where I can eat the same thing every single day and not be bored. But it changes weekly.
Of course it started with oatmeal. SO many different variations.
Ashley’s scottish oats with granola and pomegranate seeds
same oats as above but with peanut butter cups (chocolate + oats = amazing)
buckwheat groat oatmeal with granola, raspberry jam, maple peanut butter and almond milk
quinoa flake oatmeal with goji berries, frozen raspberries and blueberries and almond butter
overnight oats – 1/3 cup oats, 1/3 cup almond milk, 1/3 cup yogurt, 1 tbsp chia seeds, cinnamon and vanilla left to soak in the fridge overnight…..
topped with a pear, raspberry jam and granola in the morning
After my small oatmeal obsession, I moved on to french toast…
Ezekiel french toast with almond butter + almond milk mixture and frozen raspberries
topped with strawberries, greek yogurt and maple syrup
cinnamon spelt waffles with pomegranates and almond butter + almond milk
with greek yogurt and strawberries
waffle sandwich with 2 egg whites, raspberry jam, laughing cow and maple syrup
and pizzert babies (which totally double as an awesome afternoon snack ;))

Ashley’s banana cornmeal cakes became a staple for many weeks. Total no brainer. They are so filling and so delicious. I think I only stopped eating them because I couldn’t find buckwheat anywhere!

Just as obsessed I was with those bakes, I looove love Deb’s protein muffin. I’ve probably made it uhhhhhh…a couple 100 times? I make mine with brown rice flour, applesauce, egg whites, blueberries and vanilla bean powder. Deeelicious!

Aaand of course I could not forget eggs. I could eat eggs every single day and probably be a very very happy lady. There are soo many different kinds of ways to eat them! Over easy are my favourite though 🙂
Egg rollup with pineapple, cherries, toast with cinnamon + laughing cow
Big omelette fail with broccoli, peppers and spinach, oranges and strawberries.
2 egg scramble with tons of ketchup, quinoa cakes with avocado, hemp hearts + goji berries and raspberries
Runny egg on two pieces of toast, avocado + veggie sausages
More runny eggs on a socca pancake (1/4 cup chickpea flour, 1/4 cup water, salt + pepper +italian seasoning) with avocado, cheese and salsa
I have totally saved the best for last. PANCAKES!! I am so so obsessed with this recipe right now. I add in 2 tsp of bee pollen, use Sun Warrior protein powder and have tried almost every fruit in them 🙂

It was half decent out today (finally!) so Beaz and I spent a lot of time outside.
I had the same thing as yesterday for breakfast.

They are just soo good! And sooo filling. But Ashley is totally right when she says breakfast makes her sweat!!
There was an addition of chocolate covered mulberries but other than that, exactly the same. I know when not to eff with a good thang.
Chocolate covered mulberries are tasteh. I made them exactly like Angela made her chocolate covered raisins (I made those too) and they turned out better than I expected.
I ate LOTS of the mulberries before this pic was taken 🙂

I slept in today by a lot! I had lots of shiz to get done and missed out on the whole morning almost. I tried to make it down to Lululemon before it got too busy, but no such luck. I drove around for 25 minutes and still couldn’t find a parking spot. I gave up and went and got fitted for a new bra instead. And it looks like I’ve been wearing the wrong cup size for like the last year. Sweet. Has anyone else had this problem? A little personal-I can’t understand-but seriously, the girl that did my fitting says this happens to like 70% of women or something craaazy!
I ended up having a piece of lemon poppy seed cake and a london fog latte from Tastebuds for lunch when I met my friend Janel and her son Treyton for coffee. She is 6 months pregnant and soo cute! She is still so small with just a little basketball belly 🙂 I forgot my camera, so no pics 😦
When I got home Andrew and I took the Biz for an hour or so walk and then I did a 25 minute fat blast on my treadmill and got a massive cramp! I am totally not a runner (yet) so I have no idea why this happened or what I could do to make it go away. They’re awful!! Any advice???
For supper Andrew barbecued corn on the cob and veggie kabobs. I seasoned my corn with tons of chili powder and garlic powder with a little bit of Earth Balance.
Tossed the corn and veggies on top of some arugula and mixed greens and then topped everything with fresh dill, 1/4 of an avocado, 2 big spoonfuls of chili. Then I made it rain feta. Cuz I’m ghetto like that.
And put a big glop of ranch on top to finish it off! It was suuupreme.
After supper I worked on a picture that I saw online a couple of months ago that I want soo bad but cannot afford. I bookmarked it I decided to make it myself. Well, try to anyways. I’ll take pics when I am all finis 🙂

Andrew and I are totally addicted to these Hardbite chips! I am such a salty snacker and I love that these are vegan and made in Canada. I only wish that we could get all the flavors here!! There are so many more I wish I could try. Naturally Home Grown Foods…..send me all your chips!! (Especially the coconut curry ones! YUM)
Anywhoo, time to get to bed so I can get up early tomorrow and actually have a productive day 🙂

It sure doesn’t look like summer over here AT ALL. It’s forecasted to freeze tonight!
Not lame though was my breakfast this morning. Like wowow. I have been experimenting with Scottish oats on and off for a couple of weeks now, but I could never have created anything as faaabulous as this.

As promised yesterday, here is the kale chip lizard skin recipe.
Step 1. Grab your kale.
Step 2: Cut kale off the stem and rip into bite size pieces.
or big pieces, it doesn’t really matter.
Step 3: Wash and dry your kale pieces.
Step 4: Make the sauce
Step 5: The fun part! Put kale in a big bowl and dump the sauce over top. Get your hands in there and massage into the kale pieces, making sure each piece is coated.
Step 6: Place onto dehydrator trays and dehydrate for about 6-8 hours at about 110.
This could of probably been put onto three trays but I squished them onto two.
I have never made these in the oven before but I have read that you can. Just put them on low and watch them.
Sooo cheesy!! Nutritional yeast is amazing.
So after about 7 ish hours I took them out ( and snacked on MANY while they were cooking) and they were perfect!

These are so addicting!! And so easy to make. They even pass Andrew’s taste test. Which is saying A LOT. If he likes them, anyone will 😉
Cheesy Lizard Skins
1 big bunch of kale
1 cup of raw (or just unsalted) cashews soaked in water for 2 hours or more
juice of 1 lemon
1 red pepper (I’m sure any color would be fine)
5 tbsp nutritional yeast (or more to taste)
pinch of salt
Throw it all together in a food processor (or a blender would work too I’m sure) until smooth.
Lunch was eaten a little late because those oats were sooo filling!
1/4 mashed avocado
After lunch Andrew and I took Biz for about a 45 min walk. No rain this time!! When we got home I did a 20 minute ab video. No crunches!!
Supper was a definite fail. I’ll show you the pic but I won’t even bother telling you the mess that was in there. It was supposed to be a pasta salad but I didn’t have the ingredients for the dressing I wanted, blah blah blah. And my brussel sprouts were like mush. The only good thing about supper was the toast.
I made chocolate covered mulberries for dessert!!
But I’ll save that for tomorrow 😉

It’s been 5 years since I came home from NZ and I still miss it everyday. I seriously can’t think of anywhere else I would rather be. ONE DAY sooooon I will go back. My travel list gets new destinations added to it almost everyday, yet this is still #1. I feel like a Kiwi living in a Canadian’s body haha. I am such a nerd. If you ever get the chance to go, GO! You will not regret it 🙂

I had lots of repeat eats for my night shifts so try not to fall asleep while you read this.
1/3 cup oats, 1/3 of each almond milk and water, frozen blueberries, chia seeds and topped with almond butter, raspberry jam and molasses.
b-fast burrito with 2 egg whiles, swiss chard, mushrooms, onions, red pepper, dill. On the bottom of the wrap was a laughing cow and hot sauce. Grapes on the side. Ballin.
Yes breakfast #3 looks identical to #2. I NEVER EVER have liked breakfast burritos but woke up with a craving for one 2 days in a row. Weird weird weird.
Lunch #1 was epic.
chopped cup kale, steamed broccoli, 1/2 cup brown rice and cheesy kale chip sauce massaged into the mess. The sauce is 1 cup of soaked cashews, 1 red pepper, 1/2 cup cilantro, juice from 1 lemon, 1/4 cup nutritional yeast, garlic clove, salt and pepper in a food processor. wwwwwwweeeeeeeee!
Its amazing. TRUST ME.

Getting excited for the weekend?
I go back to work tomorrow so this post will be short and sweet so I can get to bed eeeearly 🙂
Breakfast was 1/3 oats, 1/3 almond milk, 1/3 water, chia seeds, raisons, almond butter and a chopped up granny smith apple.
The apple was crunchy and yummy.
I took Beasley for another loong walk today and I think this was the first day all week the sun came out.
When I got back I had to rush to my nail appointment so I didn’t get to have lunch! Oops.
Oh well. I now have highlighter yellow nails 🙂
I didn’t get home until almost 5 and I was staaarving!!
Super late lunch of half an apple and cashew butter and
I made the same egg salad from yesterday but put it on top of spinach instead of a wrap.
This is obvi a new fave.
Supper supper supper was a mish mash of everything I wanted.
Grilled cod with lime juice, paprika and chili powder.
Grilled caesar salad with fat free caesar, rice parmesan cheese, goat chedda and breadcrumbs.
And baked spinach and artichoke dip cups.
This was our first time ever grilled romaine hearts and WOW. Delicious. And so easy. (Says Andrew, he did the bbqing 😉 )
And the spinach and artichoke cups are uber low fat. Probably 60 cals ish per piece. I could probably eat a thousand of them.
They are tasteh!

In my fish bowl went 1 1/2 pieces of carroat cake bar, strawberries and yogurt mixed with vanilla spice protein powder.

Sup muffins! Today was like the fastest day ever! I can’t believe that it’s already 11:00 pm! Craziness.
I woke up a starvin marvin this morning. Good thing I made overnight oats last night. Pheeeew. I added macadamia nut butter to switch it up a bit, raspberries, aaaand granola for the crunch.
I couldn’t even eat it all! Weird.
I cleaned cleaned cleaned this morning and took Beasley for a quick walk. When I came back I tried my hand at scones. I’ve never made them before but figured they couldn’t be too hard! And I was correct. SCONE WIN. I made whole wheat maple date scones and they were awesome possum!

Meee ow. I used my pizza stone and it worked perfectly! Minus the extra bit of flour creeping on top of them.
As soon as the scones were done I had to run out of the house to meet this pretty girl for lunch

I brought her a scone and some asian parteh mix to snack on at work.
Anywoo we went to Jakes on 21st for some lunch and and some chatting. I MISSED HER!! I had The Mediterranean panini with a side of fruit. Of course it was fabulouso. And I was a good girl and took a picture. ( I will learn to be a good food blogger one day) 😉

Before I knew it it was suppa time! Andrew wasn’t eating with me so I decided to make clean-out-the-fridge-veggie-burgers. Yes that is what they are actually called. They can have anything in them and they are (almost) always great.
Start with some veggies
mix in some black beans, carrots, pumpkin seeds, an egg, a handful of oatmeal, worchestshire sauce, cheese, etc.
use your new mister (or if you didn’t just go to Home Sense for some retail therapy) put about a tsp of olive oil in a pan and cook the burgers!
I made a few minis as well
Leftover bean salad from last night, steamed broccolini and asparagus with lemon juice and goat cheese, flax bunny with my burga topped with sprouts, organic ketchup and relish. I LOOOVE RELISH! Any kind. For reals.
I probably went back and had another burger 🙂
Dessert was some serious sconeage. I warmed one up in the oven, cut it in half, topped it with some Stoneyfield Yo Baby Vanilla Hug yogurt mixed with xanthan gum to make it fluffy, and raspberries.
It was sooo goood but I just couldn’t finish it all. Oh wells.
Two AWESOME things about tomorrow:
1. It is Waffle Wednesday!! And I have waffles. Ooh yeah.
2. MY MOM IS COMING!!! Na na na na na na na.

Heeey! Happy Easter! Hope you had a great day! I got off work this morning to Andrew leaving to work overtime so I had a loooong sleep in an empty house. It was so quiet and I was so tired that I slept until almost 3:30pm! Crazy. But it felt so damn good.
I took some very unappetizing food to work last night, but I know you won’t judge 😉 Breakfast/lunch/whatever was some unpictured overnight oats. Lunch/dinner/whatever was leftova pasta, leftover lasagna inards with goat chedda. Obvi I heart leftovers. ♥ This didn’t even make it out of the house.
I cooked 3 egg whites with some dill, tomatoes, mushrooms and onions and slathered a laughing cow wedge on it.
Also in my lunch was a salad, a piece of toast with cashew butter, apple chips, a banana and some organic applesauce. I ATE EVERYTHING. Plus some. I was lurking around the leftover appies from the night before. Ugh. Do you find that after eating lots of crappy food the next day you’re starving? That seems to always happen to me. My body CRAVES fruits and veggies after appetizer nights lol.
After my super duper sleep in today, I totally skipped breakfast and lunch and went straight for supper at about 5:30. I was craving something really yummy so I baked some baby potatoes, steamed some broccolini and made a cheesy lemon dill sauce to go on top. YUUUM. (Don’t mind the unyummy picture of the sauce)
The cheesy lemon dill sauce was just 2 laughing cow wedges, approx 2 tbsp of almond milk, a squeeze of lemon, lots of fresh dill and lots of pepper.
I went in to work tonight for some overtime and brought a new to me Starbucks latte. I had a grande Awake tea latte with nonfat milk. SOOO GOOD. I usually get the Earl Grey latte but this is sooo good. I think I might have to get one tomorrow!
The shift I was working with tonight had an appetizer night. Haha I know. How did I get so lucky?! I swear works actually gets done while were there. Their appie night was so much better than ours though! They had chocolate crepes with whipped cream and raspberry sauce, veggie samosas, crackers with cream cheese and jalapeno jelly, jalapeno poppers, caesar salad, a taco dip and probably way more stuff that I can’t remember. They were so nice to let me eat with them! LOVE ‘A’ PLATOON. I’m probably going to go in and work more overtime with them tomorrow 🙂
So that was my night/day. Things might be a little screwed up with my eating because of the night shifts and overtime but hopefully it will figure itself out before my mom gets here on Wednesday! See you tomorrow!!
PS. My friend Sheena had a baby girl yesterday named Tensley! Isn’t that just the sweetest name? Sorry I had to share but I am just soo excited! I cannot wait to meet her 🙂
Happy Easter weekend! Hope everyone has lots of fun plans! Anyone doing an Easter egg hunt?? That was always my favorite 🙂 Sorry that I haven’t posted in a couple days. After my second day shift I was EXHAUSTED! Like crazy for reals. I think I was in bed at 9pm. And I get home at like 730pm. And yesterday I was just too busy trying to get my appies ready for appetizer night.
Sooo how to break this down. I’ll just start with some breakfast on
Friday Thursday. (I can’t believe it’s been that long. booooo)
Trois egg whites, laughing cow wedge and organic ketchup.
I tried my hand at making the protein muffin vegan by using the flax seed meal + water mixture and a little bit more applesauce, but it didn’t turn out as good as I would of hoped. Obvi I still ate it though 😉 I mixed it with some granola, millet puffs and almond milk for breakfast #2 at work.
I packed some leftover lasagna
and leftover soup, some triscuit crackers, and an orange and some pineapple.
Supper that night was some pasta with steamed green beans and broccoli, italian dressing and goat cheese chunks. With TONS of pepper.
Yesterday was cooked oatmeal. Which I walked away from for 2 seconds and burnt it. Gives it some flava haha. I covered it completely with almond butta extreme, a huge blob of honey and some hemp hearts.
Lunch lunch lunch was a salad with sprouts, cucumbers and ranch with lentil couscous on the side. I literally licked my plate clean. Typical.
Appetizers. I decided to make low-cal stuff mushrooms, wonton chips, pineapple salsa and a fruit tray. I’ll post recipes soon. Maybe I should add a recipe section? What do you think??
There was so much good food last night. I DIDN’T TAKE ANY PICTURES!! RRRRRR I know. Uber crappy. Picture these treats: homemade jalapeno poppers, spinach dip, cheese dip, a frozen dessert (with my favorite chocolate bar ever Skor), boursin cheese and crackers, a surprise spread with black beans, veggies and rhubarb crisp! I overloaded and had a food baby when I got home.
Today is going to be kinda up in the air. I think I took in too much food last night to even THINK about food today 🙂

So there you have it. B-O-R-I-N-G I know. So sorry. Hopefully the creative juices will be flowing after this last crazy night. I won’t be going home for Easter anymore 😦 because they are offering mad overtime so I will be staying to do that. But my mom is going to come in one of those days and I couldn’t be happier. Hopefully I’ll get home next days off 🙂

Today was uber productive. I took Bizzle for a walk this morning, spent about an hour cleaning up his nasty winter poop in the backyard and cleaning out the flower beds, cleaned all the cupboards, organized a few, did all my laundry and made a raw chili wrap (it took soo long). That might not seem like a lot but I felt like I got a lot done. Hopefully tomorrow will be the same.
EATS today are as follows:
Overnight oats of 1/3 cup oats, 1 tbsp chia seeds, 1/3 cup almond milk, container of itty bitty apricot Yo Baby yogurt. Topped with granola, strawberries and cashew butter.
I found this recipe in the Raw Food Real World cookbook by Matthew Kenney and Sarma Melngailis. SO GREAT. This is my version. Hope you like it as much as we did!
1 cup fresh pineapple
3/4 of a small banana
1/2 cup strawberries
3/4 cup vanilla almond milk
1 tsp agave
1/2 cup blueberries
In a blender, puree all ingredients except blueberries until smooth. Pour out about half of the mixture into serving glasses, filling each glass about halfway. Add the blueberries to the remaining shake in the blender and blend until smooth. Gently pout the remaining blueberry shake over the pineapple-strawberry shake.
I found a new attachment on my mandolin and until I get my spiralizer, this will have to do 🙂 I mixed some zucchini with leftover red thai curry paste, a veggie burger and some mixed greens. I had a wrap with laughing cow on the side.
Look what we got yesterday!!
Young thai coconuts! YAY!! So many raw recipes are made with these and I couldn’t wait to crack into them. Well, turns out that one of them was rotten! BOOO! The flesh was a nasty purple color and the water was pinky. YUCK.
Here is the good meat
I mixed this with about 1/4 cup of water, 1 tbsp of chili powder, 1 tbsp psyllium husk and 1/4 of a tomato in my food processor until it started to conceal. I then poured it onto a Teflex sheet and thew it in my dehydrator for about 5 hrs.
I’ll be making a wrap with this tomorrow for lunch 🙂
I marinated some veggies in some italian dressing and some cuban seasoning for kebabs
sliced some potatoes with my new handheld mandolin, added some goat chedda and chives and baked for about 20 min at 400F.
and doused my fish with lemon juice and pepper.

After supper, Andrew had a request for chocolate mousse with tofu. My friend Jaime made it one night when we were over there for supper so after finding a recipe and running to the store, we came up with this:

Hi! How is everyone?? Hopefully you’re having a really good weekend. Mine has been going just fine. Did you celebrate Earth Hour tonight?? We sure did! We shut all of our lights off, took Beasley for a walk (his 2nd one today 😉 ) and then came home, lit some candles and shared the So Delicious coconut milk vanilla bean icecream I bought the other day.
This is my third year participating and it just warms my lame little heart how many people do this. The Sydney Opera House and the Great Pyramids of Giza even shut off their lights!

What kind of things do you do to help the earth? We do small things everyday like use cold water to wash our clothes, use reusable grocery bags and sandwich bags, unplugging appliances when we aren’t using them, and recycling as much as possible! And in the summer we compost 🙂

Three egg whites, goat cheese, 1/4 of an avocado, chopped tomato, dill and an apple.
We had a popcorn night at work (cuz my new supervisor is so cool) and she brought her air popper, I brought some popcorn and another girl brought a bunch of popcorn seasonings. I OVERLOADED myself with delicious popcorn. It was crazy.
I only took one picture of what I took for lunch last night. I didn’t think you needed to see another bowl of potato salad or another wrap so I left them out. Andrew made a quesadilla and left me half to take to work. It was curry ish and awesome.
Work was busy busy busy last night!! Ugh. Sometimes I wish crime would take a vacay LOL. But then I guess I wouldn’t have a job, right? 😉
B-fast today was oatmeal with chia, raisons, blackberries, honey, quinoa maple cereal and almond milk. Weird, I know. I had a craving for all of those things and they tasted decee together.

I knew we were having pizza at Andrew’s brother’s house tonight so I had a small meal so I wouldn’t go overboard once I got there. My brother dropped off some soup he made – butternut squash, pumpkin, carrots, cloves and curry – and DAMN! Sooo yummy!! I had it with a smear of goat cheese and whole wheat wrap.
I still managed to have 2 1/2 pieces of veggie pizza 🙂
Time for bed! Or time to have another snack?? Hahaha probably a little bit of both. See you guys tomorrow!!! BYYYYYYE!!
