Hello!!

Happy Monday πŸ™‚

I feel like a person that works at a normal job this week!

I am working Monday-Thursday. Still 12s though.

I start my training tomorrow!!!!!

And then I’m back on CPIC on Wednesday for night shifts!!

We were going to have a “Good Riddance” party if I was switching platoons, but because I’m not I was thinking we should have a “You Can’t Get Rid of Me” party instead!! I should PROBABLY bring my faves some treats for night shifts πŸ™‚

an overnight oats monster!! I tried to give her bangs πŸ™‚

the toppings were: Saskatoon berries, almond butter, granola, craisins.

the inards were: 1/4 cup oats, 1 tbsp chia seeds, 1/4 cup almond milk, 1 yogurt.

all smooshed together


For my lunch I packed up a HUUUGE salad.

It have everything in my fridge in it. Almost.

Organic greens, dill, red peppers, mushrooms, olives, artichokes, goat chedda, onions, grape tomatoes and 2 egg whites.

I topped it with the best dressing in the world. It will never get old.

I also steamed some broccoli and cauliflower for a snack. Topped it with rice parm and hot sauce.

I was running late so a few snacks escaped my camera.

3 triscuits, a cheese string and a pear. They were all great πŸ˜‰

After work I did the 30 day Shred again.

I did it alone this time so that Andrew could finish making supper haha.

Beasley tried to do level 1 but Jillian is just too tough for him.

He is so crazy.

Andrew made the best supper ever!!

I wanted to eat all the leftovers but figured I should save some for lunch tomorrow.

He got the recipe from the new Vegetarian Times magazine. WOWZA.

Hawaiian-style Sweet-and-Sour Roasted Pineapple and Bell Peppers

Meow.

I had it with about 1/3 cup brown rice, some spinach, veggie burger with mustard and hot sauce, Β and 1/2 of a Mountain bread organic wrap with a light laughing cow.

My stomach is so happy and so full.

And now I must sleep.

445am comes sooooo early!!

Hola monsters! Happy Friday!! We woke up to SNOW this morning and winds blowing 94 km/hr! I thought I was going to blow away walking from my car to the door! NUTZO!! Sorry I didn’t post yesterday. I had such an awesome day with my mom and was totally tuckered out after she left. I wish she could of stayed longer though! xx

Backpeddle to yesterday. I got up sSsSsSuper early to do our recycling. We have curbside recycling and it comes every two weeks. And we always have baaaags of plastic. Totally crazy how much you can actually recycle. πŸ™‚
My mom helped me and it took us about 45 minutes to get it all organized and out. I was soo hungry so I made two egg whites with a laughing cow and a sliced pear.

After breakfast my mom and I headed out to Costco. LOOK WHAT I GOT FOR EASTER!!!!!

Yes oh em gee my mind is blown. I am just elated. It matches the Kitchenaid food processor they gave me for Christmas!!! I have wanted a Kitchenaid mixer for A LONG time now and weeeooow!! Thanks mom and dad!!!! The only problem with it is that I don’t know what to cook in it first πŸ™‚ LOL

My mom also spoiled me with a new pan

And tons of groceries. I am SO LUCKY. We even got a big jar of almond butter for $5.00!! Unheard of haha.

Okay. Totally stop what you’re doing now and focus on what I’m going to show you. THIS IS A FOOD REVOLUTION. For me anyways πŸ˜‰ Probably just a new-to-me food but I am totally and utterly in love.

AMAZING!! Get used to seeing these around here oh, probably everyday! (if not at every meal lol). Moving on……

After Costco and another stop, we were hungry hungry hippos. We wanted something quick and close. Enter Chili’s Restaurant. I had never been to a Chili’s and had never had any desire to go to one but it was so close! LAZY DRIVING FAIL. I ordered the grilled salmon caesar salad with a side of seasonal veggies mixed in and the dressing on the side. Riiiight. Their idea of seasonal veggies are shredded carrots and raw broccoli. E for effort. The salmon wasn’t half bad. My mom didn’t mind the sandwich she got ( the cajun chicken) but we both felt that there was nothing special about our meals. I just prefer to eat at home πŸ™‚

After mi madre left last night Andrew and I decided to use the new pasta we got. I called it the planes, trains and automobiles pasta. I am such a sucker for pasta shapes.

I did not use enough water and the pasta turned out NAAASTY. Like a sticky gluteny mess. grosss. I had to leave the kitchen and let Andrew finish supper. And it did a great job! He fried some leeks, mushrooms and red pepper, mixed it with pesto and new shell pasta and then baked it in the oven with some goat chedder.

Added a salad to mix with on the side with tomatoes and cucumbers. I barely made it past supper. I was exhausted! More than exhausted. Kaput. All the way until 4:45am when my alarm went off.

breakfast was a weird mess but it worked. 1/3 cup oatmeal, 2/3 cup water, chia seeds, sliced pear, raisins, cashew butter, hemp hearts, honey and new jam. Not just any new jam. This new jam.

It’s niiiiice. Especially on oatmeal.

I packed a pretty simple lunch for work today. New wrap with mustard, hummus, mushrooms, peppers, spinach and sprouts. I forgot to take a pic before it was all wrapped up. oops!

2 carrots and a handful of green beans, steamed

and a clementine

For extra snackies I brought Annie’s chocolate bunnies and organic corn.

I ate every single last crumb. Plus a handful of trail mix. Plus a crap ton of water. 7 Siggs full!! Heck yes.

I had a craving for mushroom gravy so bad tonight. Do you ever have cravings so bad that you just HAVE to give in?? I improvised and made a new version. With laughing cow of course haha, mushrooms, almond milk, chives, pepper, pink himalayan salt and xanthan gum.

I also had a piece of cod with chili powder and paprika, baked on parchment paper for 20 min and steamed brussel sprouts with mango salsa ( from Kristi) and stoneground mustard for dipping. It was out of this world. Seriously. I’m already thinking about how I can have it again tomorrow.

Any ideas of what I should make in my new mixer??? I have been thinking about chocolate chip oatmeal cookies or something along those lines. I’ll take any suggestions though!!!

Time for bed! I work two night shifts and then I’m on days off!!! Love it. I hope to try out some new recipes soon!

Hello lovelies!! Another beautiful day, yeah? The title of this post may have brought you back a few years to the kissing game 7 minutes in heaven (which I never played btw) buuut I am referring to my 11 minute straight run today!! B-b-b-booyah!! Awesomeness. I did a 5 minute warmup, 11 minutes of JOGGING, and then a 5 minute cool down!!! After my 45 minute walk with Mr. Beasley.

Breakfast this morning was a HIT!! Andrew liked it! And ate it all. YAY!! And he just ate it on the regular. No toppings at all πŸ™‚ Mine was not so lucky lol

I had another productive day (weeeoh!) but I stopped to take a break for lunch. It was supposed to be the wrap from yesterday but I put it in the fridge last night -HUGE MISTAKE – and when I went to take it out, it shattered. Lesson learned. My fail turned into a win pretty fast though. I cut up some leftover veggies and an artichoke heart, mashed a handful of chickpeas, added some dill and a laughing cow and BAM! Lonchi. With the last of the pumpkin butternut squash soup.

Yay super YUM. You might not be able to tell by my awful pictures but it was AHMAZING.

Andrew is making supper tonight and stopped so I could take some pics.

Lasagna switched up made with broccoli and ricotta cheese. And carrots, peppers, onions, tomatoes and goat chedda of course πŸ™‚ We are out of bread so Andrew made toasted garlic buns.

I had a salad with mine as well. I looove when my greens get all mixed up with other food. I’m defintely not one of those people who can’t have their food touching πŸ™‚

We had chocolate pie again for dessert! I made a little one for me with a crust of walnuts and dates. I was missing some raspberries so I mushed up a few defrosted ones and poured it on top.

Andrew’s piece obviously looks waaay more appetizing than mine. Nonetheless I murdered my little piece πŸ™‚

Sooo….back to work tomorrow. Yeehaw. We are having an appetizer night on our first night shift (Friday) and I still don’t know what to bring!! Any ideas??? I also still need song ideas too πŸ™‚

Hi guys!! Happy Tuesday! Hope everyone had a shweeet day! I left early from work to hang out with Andy and have literally effed the dog all day. And now I am too tired to post the recipes that I promised I would yesterday 😦 So sorry monsters!

Brrrreakfast this morning was…..SURPRISE!! oatmeal oatmeal oatmeal. boooring paije! But today I added Stoneyfield apple loves blackberry yogurt and blackberries.

I spent the afternoon reading some sweet snags from my brother this weekend

and lurking some pretty awesome blogs πŸ™‚ After all that fun, I made supper! So exciting. Not that I had much to do as I had already made the orzo & chickpea salad last night. All I had to do was steam a few carrots, and broccolini and toast some Squirrley bread. Oooh la la.

Soo good. I love simple dinners like this πŸ™‚

Oh! I almost forgot. I got new protein powder today…and had a protein muffin for my snackie with cashew butter and raspberry jammers.

Okay lovelies, I gotsta go. It’s sleepy time tea and off to bed!! Another work day tomorrow and tomorrow I WILL NOT BE EATING OATS for breakfast. I creeped a few delicious recipes today and I can’t wait until tomorrow! I will also be posting the recipes that I was supposed to post today πŸ™‚ Night all!

Hi guys! Sorry no post yesterday but after I got home I just wanted to hang out with my boyss and relaaax!! I had such a good weekend at home, though! Just wish it wouldn’t have been so short!

My mom totally spoiled Beasley while we were there. She took him for walk/runs in the a.m. while I was zzzzzing and even picked up his poop! (She’s NEVER been a dog person). I loved it. She took him out in the afternoon if she was going outside and we took him for a really long walk one afternoon. My kitties were even getting used to him. One of them anyway πŸ˜‰

When I got home I realized I was waaay to tired to cook anything so Andrew and I decided to order out. Shocking, I know. We hardly ever eat out! Maybe if we lived in a city where there were a lot more vegetarian/vegan options we would but for now cooking home is totally fine with me πŸ™‚ We ordered from Las Palapas and my meal was suuper duuper.

I had the black bean and roast vegetable burrito with bean salad. GAH soo great. It had a kind of creme fraiche sauce on top of the burrito and it was deelicious!

I miiight have overloaded on popcorn after this. POPCORN MONSTER.

Today started off with an 8am orthodontist appointment. Not sure why I do that to myself. My last day off and I have to be up early! I decided that since I was up so early, I would get a lot done today. Ha ha ha. Not the case at all. I did eat breakfast when I got home

chia oatmeal with cinnamon and molasses. and a frozen raspberry or two. obvi the only thing I eat for breakfast is oats. maybe I could switch it up once in awhile yeah? haha.

I promptly fell asleep as soon as I put my spoon down. And woke up at nooon! Ahhhh, nothing better than a good sleep but JEEZ! Noon?! Whateves. I got up and took Bizzle for a walk and then came home and did some laundry, had a salad (with the leftover yam falafels)

and started making focaccia for tonight’s supper of stuffed focaccia with spinach and feta. I used this focaccia mix

I have never made focaccia bread before and this was really easy. After mixing it all up, I put it in a greased bowl for 45 minutes to rise. I cut it in two pieces – one for the stuffed bread and just a regular one. Spread it out into a rectangle ish shape, spread my innerds on, folded it up and baked it!

YUM YUM YUM!! Andrew roasted some veggies for supper, too. Mushrooms, peppers, onions, asparagus, zucchini.

Oooh my belly is so sassified. No dessert tonight, just supper prep for tomorrow!! Little preview….

Goood evening lovaaaahs. Hope everyone had a T-rrific Sunday. I spend mine at work with some SUPER SWEEET work peeps. Ahh they sure know how to make me smile πŸ™‚ Anways, quick quick post as I need to get this ass to bed.
Breakfast was overnight oats made in the bottom of an almond butter jar with some raspberry jam and half a banana. I probably got this idea from Jenna at Eat Live Run because she’s awwwesome and she started my crazy obsession with le cold oats.

I know it’s a terrible picture. I’m not sure if it is the camera or the operator… πŸ˜‰

SOoOoO I packed up my little lunchi in my cute little lunch bag (made by my mom of course) and peaced out for work.



Above is just some leftover sushi, a veggie burger, salad with some brussel sprouts and fennel, coconut water, a granola bar (my mom makes those super cute bags too) and an apple. AND I ATE IT ALL. I also brought more granola bars and some macaroons for D-bitches. Went for a walk during our lunch and it was sooo sloppy out. And apparently there was a race going on so we were kind of in the way. Overall, great walk ~ great talk.

BAM! That’s right. The boyf made low-fat french onion soup for suppa. Was ready 5 minutes after I walked in the door! YYYYEAAAAH! That’s what I call service muahahha. β™₯

Oh yeah, the macaroons!! Well…I should of just left them like this:

and ate them straight out of the bowl. Instead I OVERCOOKED them. Really. They were haaard. Too hard for my liking. Note to self: NO DEHYDRATING OVERNIGHT. Sorry! No recipe yet. You can have it when I cook them like they are supposed to be cooked πŸ™‚

No breakfast plans, no lunch plans, no supper plans. Maybe I will wake up and the food genie will have made them all for me????? Riiiiiiiiiiight.
