You know what? I love being a food blogger. Like reeeeally love it. Being able to interact with the most creative, inspiring, caring, hilarious and genuine people on a daily basis is waaay more than I could of asked for when I started my blog.
One of the BEST parts of blogging is all the recipes! Duh, right? Ever since we got back from the Dominican I have been trying out recipes I have saved in my “Eat it Nowww” folder 🙂
I have had buckwheat groats in my cupboard for about…..ummmm a year? With no idea what to do with them. Until nooow.
Blend the crap out of them.
I added the 1/4 cup of buckwheat groats, 1 tbsp of chia seeds and a dash of cinnamon to a pot.
Then added 1 cup water, 1/4 cup of almond milk and 1/2 tsp of vanilla.
Cooked over medium heat, stirring often for about 10 minutes.
In the last couple minutes I added a banana and smooshed it up with a fork.
I topped it with mighty maple peanut butter, raspberry jam, granola and more almond milk. The buckwheat tastes a little earthier than my usual scottish oats but I still really liked it and it was sooo easy!
Omgsssssh you guys these are crazy good. And good for you!

I mixed 1 tbsp mighty maple peanut butter with 2 tsbp almond milk and warmed it up in the microwave for 30 seconds to pour on top and added some granola and coconut. Heavenforsuuuure.
I have already made these three separate times they are that good!!! And they are soo cute 😀
Neext I made cheezy kale chips! I based my recipe from my brother Jordan’s recipe at the Organic Revolution.
Sorry I don’t have more pictures! We are koo koo for kale chips in this house! I have a double batch in the dehydrator right now though!
I also made Lauren’s English muffins but didn’t take any pictures during the baking process apparently. Check out her blog Lauren Loves Good Food for the recipe, awesome pics and tutorial!! I only made two modifications, I used spelt flour instead of bread flour and baked them for 20 minutes at 350F instead of frying them. They are delicious.
I have been eating them as mini sandwiches for snacks. Peanut butter and pickles. Anyone else like this combo???
Goat cheese and raspberry jam.
I had it for supper tonight with quinoa crackers, sauteed kale with vinegar (obsessssssed), avocado, couscous, goat cheddar, pumpkin seeds and pecans.
And now I have a recipe of my own to share with you 🙂
Lentil Pita Pizza
- 1 whole wheat pita
- homemade pizza sauce (store bought or pasta sauce work too)
- 1/2 cup green lentils, cooked in veggie broth
- 1/3 cup chopped pineapple
- 2 tbsp grated cheese
Put all ingredients on top of pita and bake in preheated 400F oven for 15 minutes or until cheese is browned. Eaaaaasy.
Ahhhh these ingredients work soo well together! I really hope you guys try this!

I was a sick kid on sat night/sunday for some reason. Not pukey sick, just felt like my stomach found a new home in my throat.
Yuck, right? Anyway I’m over it and the last couple days have been great!
I left you off with some farmers market goodies and I used them to make supper.
We had pita pizzas brushed with organic truffle oil
This stuff is TASTY. Like wow. I kept the rest of the pizza pretty simple so I could taste the oil so on top went fresh basil, tomato slices, pineapple, red pepper, red onion and goat chedda.
Baked in the oven at 400F for about 15-20 minutes.
Andrew’s had pizza sauce and salami
Fresh basil is amazing on pizza but pineapple is my absolute fave pizza topping.
I also took a London Fog latte to keep me awake
Sunday was kind of a lame food day for me because I wasn’t feeling that well. Not a complete write off because I still had an appetite, but nothing exciting.
Breakfast/Lunch was 2 egg whites with basil and organic ketchup and 1/2 a bran muffin with Earth Balance.
I slept tons and drank a lot of peppermint and ginger tea for my stomach and by about 8pm I was hungry again.
I made some bulgar and mixed it with a stir fry of snap peas, pineapples and onions with a sauce of Braggs (you could use soy sauce) balsamic vinegar and red pepper flakes.
I also had a salmon skewer. Obviously supper was eaten in my lap while I was curled up on the couch. All meals should be eaten like this when you’re sick 🙂
I missed breakfast yesterday because I was in such a hurry to get to my nail appointment. Not smart, I know. I had this when I pit stopped at home for 20 min.

My dad was in the city and was stopping by to drop off some sweet things from my mom (pics tomorrow if it’s not raining) and I had the pleasure of making him supper to go! I made him a pita pizza, granola for a snacker at my brother’s ball game and some Peanut Butter Brown Rice Crunch Bars. I subbed almonds and almond butter for the peanuts/peanut butter and threw some chia seeds and hemp hearts on top. They are aahmazing.
Suuuuuupper was fish stick salad. Creative, I know. It blows my mind too. I used mahi mahi and panko with italian herbs and baked them at 400F for 20 minutes, flipping them once. I tossed it with the hummy mustard sauce with relish.
There was 1/4 of an avocado and some baby cukes in there too.
After supper we went for an 1 1/2 walk/jog around the neighborhood. It was beautiful out and I got to wear some of my new clothes from Lululemon!!! Boooyah!

Andrew also bought me a new water bottle.
When we got home from our jog I had a crazzzzzy SNACK ATTACK.

This morning I made a point not to skip breakfast. I hardly ever do that, but when I do it fees like I am paying for it all day. I attempted to make a banana split but it didn’t really turn out that way.

I made scottish oats but this time I halved the recipe and poured it on top of half a banana. I topped it with granola, almond butter + almond milk, and organic raspberry jam. It was still delicious.
I had to make a bunch of sushi for a girl at work so I made a couple of extra rolls for Andrew and I for lunch.

Suuupper was yam falafels, homemade tzatziki, 1/2 a pita, and pasta salad.
The yam falafels recipe is right here, the tzatziki recipe was scribbled in my recipe book and I have no idea where it came from. The pasta salad had fresh dill, tomatoes, cucumbers and goat chedda with a vinaigrette of garlic, truffle oil, vinegar, lemon juice, salt and pepper.
We just got back from a walk and I am EXHAUSTED! I feel like all my posts have been rushed and shitty lately but I’m trying to find a time that is good for me and not at midnight or later every night! I haven’t even had any time to do any reading… 😦 Sooon peeps, sooon. Things will gel like crazy ’round here. Promise.

I’m sure everyone has seen the video of the girl that likes everything (you live under a rock if you haven’t lol) so the other day when I was feeling particularly craaptacular, Andrew sang me the song changing the lyrics to “I like my girlfriend, I like my house, I like my dog, I like my guitar….etc”. You get the picture. It was super cute and definitely made my day 🙂 Obviously a lot funnier to me…..

This is going to be a super short one with not much talkie talkie.
I am exhausted and the temp inside my house is 85F.
For reals. Its a sweatmess x2.

Breakfast was just a simple 2 egg white omelette with a light laughing cow, some organic raspberry jam and 1/2 a mango.
Smooooshy egg cheesy jammy goodness.
Lunch was pretty boring. Kale salad with steamed broccoli, brown rice and left over nacho sauce.
I also had a cheese string, some triscuits, a millet puff I found in the back of the work freezer and some cherries.
Supper was a pita pizza with organic pizza sauce, broccoli, mushrooms, peppers, onions and pineapple. A side salad with grape tomatoes, feta and ranch, pepperoncini, pineapple, too.
Baked in the oven for 20 minutes with a teeny bit of goat cheese.
I love the combo of feta, pineapple, peppeoncini and ranch. Bowwowowow.
After supper I baked mini muffins (mmmmaybe the reason our house is so hot??) again because I ate 5 of them last night and took the rest to work today. I seriously am a MONSTER.
They are lemon rosemary mini muffins though! I would have NEVER EVER thought that this would be good but they are RIDICULOUS. Like I said, I ate 5!!!!
I am drooling again just thinking about them! And I just ate one hehe 😉
So teeeny, sooo gooood! I’ll post the link tomorrow when I’m not so laazy!
Dessert was a Stoneyfield Apple Loves Blackberry yogurt, chopped cherries, hazelnut almond butter and hemp hearts.
I added half a muffin at the end cause I rollllll just like that.

I took last night off from posting so I’ll be playing a little bit of catch up tonight 🙂
Yesterday morning I got up fairly early to make granola bars for a SMALL TOWN BLOOGER MEET UP with this coolio girl.
I had a pretty light breakfast because I knew we were going to one of my favorite places for lunch.
One egg with organic ketchup and a pear.
I met Allison at City Perk and we had an awesome visit! She is so nice and it was awesome to meet another Saskatoon blogger! It was a sweet meet.
I had a romaine salad with some kind of vinaigrette that I can’t remember. Whateves, it was awesome anyway 🙂
I also had the best unpictured London Fog I’ve ever had in my life.
For supper Andrew and I went out for Indian!!
We went to India Palace and I had the matar paneer.
Oooh multiply this plate by about 3. And add some naan bread, too.
Hells yes I love Indian food.
We were going to go see Nightmare on Elm Street last night but bailed and went mini golfing instead.
And indulged in more food. Obvi.
Dessert was a yummy mess of vanilla frozen yogurt, one of my granola bars (with added marshmallows) and strawberries.
It was a pretty ballin’ date night if you ask me.
Today I got woken up with breakfast in bed!!

I made this shiz myself. Andrew did go to the store this morning and get all the ingredients though 😉
Baked egg + 2 egg whites, broccoli, fresh dill, red peppers and mushrooms with a tsp of milk on top baked in the oven at 350F for about 15 ish minutes and then smeared with goat cheese. Served with 1/2 a piece of The Big 16 bread and some grapes.
May for Andrew is Mooostache Moustache May.
Basically he and some guys from work grow mooostaches in May.
Right now my boyfriend looks like this handsome gentleman.
He would kill me if I put the pictures up I took of him today, but I did snag a picture of someone else participating in Mooostache May.
I skipped lunch today by accident and made up for it with a big supper.
We made pita pizzas and I also had sugar snap peas and steamed cauliflower with mushroom gravy.
The pizza had organic tomato and basil pizza sauce, mushrooms, onions, red peppers, broccoli and the tiniest sprinkle of goat chedda.
The mushroom gravy had the usual suspects of laughing cow, almond milk, tons of pepper, fresh dill and mushrooms.
Dessert was EPIC.
In my books anyway.
I don’t even have words for how good it was.
