Hope you’re having a wonderful 4th of July!
We celebrated Canada Day on Sunday with my family ♥
I wanted to talk to you guys about meal planning. I know what you’re probably thinking, but bear with me 😉
I wanted to show you what has been working for us for the last couple weeks. We have tried meal planning a million times. And because I read so many blogs/cookbooks/magazines you would think that I would always have it figured out what I want every night for supper. So not the case. I’m pretty good for breakfasts and lunches [smoothies and salads right now] but supper is always an “I’m huuuungry but I don’t know what I want” whine to Andrew. But I finally found a system that works for us 🙂
Andrew and I each pick foods/cuisines that we like and then pick the days of the week that will work best with our schedules/weather. If that makes any sense at all haha.
Example: We loove tacos so we picked Tuesdays to have them. [Taco Tuesday!!] Now every Tuesday I know we are having some kind of tacos. Last week it was fish tacos, this week it was enchiladas. I also love Italian food so this week we chose Wednesday for pasta. We use the same pasta and veggies and then make our own sauces. Super easy.
Okay so here’s this week’s schedule:
Monday – Grill [veggie burgers + salad]
Tuesday – Tacos [vegan enchiladas]
Wednesday – Pasta [goat cheese, fennel + mushroom fusilli]
Thursday – Pizza [homemade on the BBQ]
Friday – Tofu + Veggies [hemp seed crusted]
Saturday – Clean out the fridge/leftovers [take out for Andrew]
Sunday – Free night [supper with Andrew’s parents]
These meal plans have been so easy to follow and make grocery shopping a total breeze. I almost look forward to making them each week. <—geek

The burgers were delicious [I love lentils and mushrooms] but I could probably just eat that spread with a spoon. We used fresh basil from our garden and it was just insane. So simple and so delicious.
Tuesday we made these vegan enchiladas with cilantro avocado cream sauce. My brother came for supper so he and Andrew had mexi fries with theirs and I had a big salad with mine.
The filling is so good I saved some to have for lunch today.

Tonight was pasta night. I used the rest of the basil goat cheese spread mixed with a bit of goat milk to make a sauce and tossed it with sautéed leek, fennel, mushrooms and fusilli.

That’s it so far this week. I can’t wait for tomorrow! Pizza is one of my favourite foods 🙂

The weather was beautiful here so we spent a lot of time outside.
Friday I had my baby shower! The girls from work wanted to wait until Jett was born to throw me a party and it was so nice to see everyone! It was such a treat to interact with people that can actually talk back 😉

After everyone left I hung out with Jett while Andrew made supper.

Saturday morning we took Jett and Beasley for a nice long walk along the river.
As Jett is getting older she is getting so much more alert and doesn’t like to be strapped down in her stroller. The past three walks we have had to take her out and carry her. She just likes to look at everything!
We spent the day shopping yesterday [Andrew needed new clothes] and went and visited with his parents and nephew Jaxon. When we got home Andrew made the most delicious supper! Andrew usually makes supper because Jett usually wants to eat as soon as she smells food 😉

I’ve been eating the same smoothie for breakfast all week. Today was no exception:
I found the recipe on The Green Lean Bean and added strawberries like Lauren did. I looove the coconut water and goji berries in this!
After breakfast we headed to our Bradley Method class reunion! There were 9 couples in our class and now that everyone has had their babies we decided to get together and have a potluck brunch and a play date 🙂

There were five girls and four boys. Eight natural births and one c-section. Nine healthy, happy babies 🙂

After the reunion we came home and Jett and I had a looong nap. Best.feeling.ever. I woke up feeling completely refreshed – naps don’t happen here very often – and HUNGRY! Thankfully we brought home leftovers from the potluck:

I did have a really lax day though (prob not the best idea when we need to be moved out of our house in 5 ish days!!) but it sure felt good 😉
I woke up at the crack of 10am and got right to lurkwork.
Yes that’s right. I named my addiction. Sounds important now, yeah?
While I was working I slurped on a smoothie.
1 cup almond milk
1 frozen peach
1 scoop of vanilla isoflex
2 ice cubes
I bookmarked about a 1000 new recipes and got the googs down to about 700. Wooop!
Just when I planned to take Beasley out for a jog it started to rain. Saskatoon weather is crazy lately! Rain, sun, rain, rain, rain, rain. COME ON MOTHER NATURE!!
Instead of working out I decided to get started on lunch instead.
Healthy Garden Potato Soup
1 1/2 tsp extra virgin olive oil
1 shallot, diced
1 bulb of fresh garlic, minced
1 cup of sliced carrots
6 large stalks of rainbow swiss chard (spinach, kale or green beans would work too)
1 lb of new potatoes, quartered
2 cups of veggie broth
1/2 cup water
3/4 cup almond milk (or regular milk)
1 tbsp fresh basil, torn
salt and pepper
Heat olive oil over medium heat and add shallot and garlic. Cook for about 3 minutes and then add carrots and potatoes. Cook for about 1 minute and then add broth, water, salt, pepper and basil. Bring to a boil and turn temp to low, cover and simmer for 15-20 minutes, until veggies are soft. Add in chard during last 5 minutes. Pour half of soup into blender or food processor and blend until smooth. Pour back into pot. If you don’t like your soup chunky, blend the whole batch of soup. Top with goat chedda, more pepper and some hot saucce if you’re so inclined.
My fave thing about this soup was that everything came from either my mom’s garden or the farmer’s market.
Oh, and obviously the goat chedda.
The rest of the afternoon was spent mindlessly looking through cookbooks and mags, trying to figure out what to take and what to toss. I packed one box. Ha. But I did get all the laundry finished 🙂
When Andrew got home from work we went and picked up a Magic Bullet so we can still have smoothies on our holiday.
I would love to take the Kitchenaid but she’s kind of a husky beast. Bullet is a little more practical.
Ander made supper while I watched Pretty Little Liars.
He had a burger and smoothie (obsessed much?) and I had a gigantic salad with organic mixed greens and kale from ma mama’s garden, grilled salmon, kamut and spelt prepared salad, sliced pickles and cucumbers and topped with raspberry vinaigrette and sunflower sprouts.
Need to learn how to make kamut and spelt salad ASAP.
I’ve been snacking on some cherries
and a piece of toast with raspberry jam and earth balance.
That about brings us to right now.
My eyes are closing again as I’m typing so like ushe, I’m off to bed! (Well, check facebook and email first of course 😉 )
On the food agenda for tomorrow ~ these beautiful crepes! Not sure if they’re going to be for breakfast or lunch yet.

I was a sick kid on sat night/sunday for some reason. Not pukey sick, just felt like my stomach found a new home in my throat.
Yuck, right? Anyway I’m over it and the last couple days have been great!
I left you off with some farmers market goodies and I used them to make supper.
We had pita pizzas brushed with organic truffle oil
This stuff is TASTY. Like wow. I kept the rest of the pizza pretty simple so I could taste the oil so on top went fresh basil, tomato slices, pineapple, red pepper, red onion and goat chedda.
Baked in the oven at 400F for about 15-20 minutes.
Andrew’s had pizza sauce and salami
Fresh basil is amazing on pizza but pineapple is my absolute fave pizza topping.
I also took a London Fog latte to keep me awake
Sunday was kind of a lame food day for me because I wasn’t feeling that well. Not a complete write off because I still had an appetite, but nothing exciting.
Breakfast/Lunch was 2 egg whites with basil and organic ketchup and 1/2 a bran muffin with Earth Balance.
I slept tons and drank a lot of peppermint and ginger tea for my stomach and by about 8pm I was hungry again.
I made some bulgar and mixed it with a stir fry of snap peas, pineapples and onions with a sauce of Braggs (you could use soy sauce) balsamic vinegar and red pepper flakes.
I also had a salmon skewer. Obviously supper was eaten in my lap while I was curled up on the couch. All meals should be eaten like this when you’re sick 🙂
I missed breakfast yesterday because I was in such a hurry to get to my nail appointment. Not smart, I know. I had this when I pit stopped at home for 20 min.

My dad was in the city and was stopping by to drop off some sweet things from my mom (pics tomorrow if it’s not raining) and I had the pleasure of making him supper to go! I made him a pita pizza, granola for a snacker at my brother’s ball game and some Peanut Butter Brown Rice Crunch Bars. I subbed almonds and almond butter for the peanuts/peanut butter and threw some chia seeds and hemp hearts on top. They are aahmazing.
Suuuuuupper was fish stick salad. Creative, I know. It blows my mind too. I used mahi mahi and panko with italian herbs and baked them at 400F for 20 minutes, flipping them once. I tossed it with the hummy mustard sauce with relish.
There was 1/4 of an avocado and some baby cukes in there too.
After supper we went for an 1 1/2 walk/jog around the neighborhood. It was beautiful out and I got to wear some of my new clothes from Lululemon!!! Boooyah!

Andrew also bought me a new water bottle.
When we got home from our jog I had a crazzzzzy SNACK ATTACK.

This morning I made a point not to skip breakfast. I hardly ever do that, but when I do it fees like I am paying for it all day. I attempted to make a banana split but it didn’t really turn out that way.

I made scottish oats but this time I halved the recipe and poured it on top of half a banana. I topped it with granola, almond butter + almond milk, and organic raspberry jam. It was still delicious.
I had to make a bunch of sushi for a girl at work so I made a couple of extra rolls for Andrew and I for lunch.

Suuupper was yam falafels, homemade tzatziki, 1/2 a pita, and pasta salad.
The yam falafels recipe is right here, the tzatziki recipe was scribbled in my recipe book and I have no idea where it came from. The pasta salad had fresh dill, tomatoes, cucumbers and goat chedda with a vinaigrette of garlic, truffle oil, vinegar, lemon juice, salt and pepper.
We just got back from a walk and I am EXHAUSTED! I feel like all my posts have been rushed and shitty lately but I’m trying to find a time that is good for me and not at midnight or later every night! I haven’t even had any time to do any reading… 😦 Sooon peeps, sooon. Things will gel like crazy ’round here. Promise.

I’m sure everyone has seen the video of the girl that likes everything (you live under a rock if you haven’t lol) so the other day when I was feeling particularly craaptacular, Andrew sang me the song changing the lyrics to “I like my girlfriend, I like my house, I like my dog, I like my guitar….etc”. You get the picture. It was super cute and definitely made my day 🙂 Obviously a lot funnier to me…..

It was half decent out today (finally!) so Beaz and I spent a lot of time outside.
I had the same thing as yesterday for breakfast.

They are just soo good! And sooo filling. But Ashley is totally right when she says breakfast makes her sweat!!
There was an addition of chocolate covered mulberries but other than that, exactly the same. I know when not to eff with a good thang.
Chocolate covered mulberries are tasteh. I made them exactly like Angela made her chocolate covered raisins (I made those too) and they turned out better than I expected.
I ate LOTS of the mulberries before this pic was taken 🙂

I slept in today by a lot! I had lots of shiz to get done and missed out on the whole morning almost. I tried to make it down to Lululemon before it got too busy, but no such luck. I drove around for 25 minutes and still couldn’t find a parking spot. I gave up and went and got fitted for a new bra instead. And it looks like I’ve been wearing the wrong cup size for like the last year. Sweet. Has anyone else had this problem? A little personal-I can’t understand-but seriously, the girl that did my fitting says this happens to like 70% of women or something craaazy!
I ended up having a piece of lemon poppy seed cake and a london fog latte from Tastebuds for lunch when I met my friend Janel and her son Treyton for coffee. She is 6 months pregnant and soo cute! She is still so small with just a little basketball belly 🙂 I forgot my camera, so no pics 😦
When I got home Andrew and I took the Biz for an hour or so walk and then I did a 25 minute fat blast on my treadmill and got a massive cramp! I am totally not a runner (yet) so I have no idea why this happened or what I could do to make it go away. They’re awful!! Any advice???
For supper Andrew barbecued corn on the cob and veggie kabobs. I seasoned my corn with tons of chili powder and garlic powder with a little bit of Earth Balance.
Tossed the corn and veggies on top of some arugula and mixed greens and then topped everything with fresh dill, 1/4 of an avocado, 2 big spoonfuls of chili. Then I made it rain feta. Cuz I’m ghetto like that.
And put a big glop of ranch on top to finish it off! It was suuupreme.
After supper I worked on a picture that I saw online a couple of months ago that I want soo bad but cannot afford. I bookmarked it I decided to make it myself. Well, try to anyways. I’ll take pics when I am all finis 🙂

Andrew and I are totally addicted to these Hardbite chips! I am such a salty snacker and I love that these are vegan and made in Canada. I only wish that we could get all the flavors here!! There are so many more I wish I could try. Naturally Home Grown Foods…..send me all your chips!! (Especially the coconut curry ones! YUM)
Anywhoo, time to get to bed so I can get up early tomorrow and actually have a productive day 🙂

I am blogging from my parent’s house tonight! Last minute I decided to take off my two day shifts and come home for a couple of days. I really need to clear my head and get out of the city because lately I’ve been feeling like things just aren’t clicking with me. In almost every aspect of my life. I’m not exactly sure when things went awry but I just feel really off. Blogging is about the only time I feel sane, if you can imagine that! Sorry to spill my guts but I just wanted to let you know what’s going on withe me. I have a few ideas on how to fix this little funk but I’ll talk about that after the meals 🙂
Supper last night was Andrew’s baked french onion soup with goat chedda and garlic crunchies.
I looove french onion soup so much! I usually make a small hole in the side, eat all the soup first and then eat the cheesy bread part at the end.
For dessert I had some vegan tofu chocolate pie with some apple loves blackberry yogurt, pecans, strawberries and hemp hearts.
I made the chocolate tofu cake the other night and I think my dates were bad because ppppppppuuuuuuuu the crust tasted like crap! Soapy crap even. I salvaged some of the cakey part that wasn’t touching the crust for my dessert and tossed the rest.
Breakfast was light ish
Just some toast with pecan butter, strawberries and 1/2 an orange.
I was planning on taking Beasley for a walk and then coming home and doing P90x yoga but plans changed and I only got to take Beabs for his walk. No biggie.
I ate some homemade trail mix of filberts, macadamia nuts, cashews, pecans, almonds, chocolate chips, walnuts and something else I can’t remember the name of during the 2 1/2 hour drive home.

Yowza! In the mix was some cabbage, wild rice, tomato sauce and zucchini and it was taaaasty!
I had a side salad of romaine and organic mixed greens with cucumbers, orange and yellow peppers, fresh chives from my mom’s garden, grated carrots and dill, a piece of corn on the cob and a homemade flax bun.

My mom and I took Beasley for a walk after supper and I’ve been munching on anything I can get my fingers on around here! I am a total feeling eater. 100%. I made some pecan butter and some more lemon rosemary muffins (I have a seeerious problem) and I just finished some pita chips. Can you say MONSTER??
You might be wondering about the title of this post. Or maybe not. Regardless, the witching hour is what I call the time of day when I am the most productive. There is about a 4 hour window where I have so much energy, am so inspired, get the most accomplished, etc. I am in my groove during the witching hour. That time for me just happens to be 10:30pm ish – 2:30am ish.
I was up until about that time last night making birthday gifts. I got in the mood about 10:30pm and just couldn’t stop. I also wrote a ton of ideas for posts and a few scribbled recipe ideas. I’m a nut case. Now you now.
I also came up with some fun ideas to get me out of my skunky funk. They are also mini-challenges because challenges make things more fun! I have been reading tons of blogs that make monthly goals and while I really like this, I am only committing to three. Small enough that I am not intimidated by these goals, big big enough that I will feel accomplished when I complete them 🙂
- 60 minutes of exercise daily. This might seem obvious to everyone that exercise makes you feel better, but I rarely get a whole hour in. Beasley walks count, but I want some sweatmess happening over here. I am joining a gym when I get back to the city and am uber excited for all the fun classes!
- A salad a day. Again, might be a no brainer because salads are awwwesome for you but salads are my absolute favorite meals and are so versatile! I’ll be trying lots and lots of new to me salads in the next 60 days so check back often! This blog and this blog blow my little salad loving mind!
- Insert smile here. This is probably going to be the most important one for me. I really do love my job but holy jeeeepers is it ever negative. There is nothing positive about the things we hear at work. The girls at work are great, it’s just what my job entails that is such a bummer. Crime crime crime and lots of saaad stories. ANYWAYS, because I sometimes find it hard to just leave my work shit at work, I am inserting something that makes me smile into my life everyday. Whether it be a silly story, a picture, a video, a quote, whatev else I will be posting it here! Hopefully it will get a smile out of you, too 🙂
Today was supposed to be day 1 of my challenges and I did okay given the wonky circumstances.
I walked Beabs for a total of 1 hour (or really close to).
I had a salad at supper.

Three night shifts make it a little bit hard to blog though!
But it didn’t stop me from taking lots of pics!!

It rained almost all day on Thursday. And then it started to hail!
Those vehicles had to pull over because it was coming down so hard! Lol and some kid on a bike got pelted! I felt so bad for him!
Mixed organic greens and arugula, fishy sticks, avocado, goat chedda and red peppers.
The dressing was HEABs faaaaabulous hummy dressing with some relish mixed in. So gourmet 😉
We had two birthdays at work this week! So we celebrated on our first night shift!
We had rhubarb crisp, brownies and vanilla ice cream.
Scottish oats with almond cashew butter, strawberries, granola. YUUUUUM!!
Mountain wrap with amy’s veggie burger, spinach, cucumbers, pineapple and hummas. Snap peas and butternut squash soup, too.
Whole wheat bow ties, organic tomato and basil pasta sauce with broccoli, garlic, mushrooms and edamame beans.
Topped with nutritional yeast.
and for a snack I took 1/2 an orange, some strawberries and cherries.
I got called in for overtime on Saturday night and I didn’t have any time to eat breakfast. So I made a lunch/supper combo 😉

Andrew’s cousin came over for supper and brought an awesome tofu dish and Andrew made a ginger stirfry.
This was sooooo goood!! Tofu and I aren’t always one, but this was frickn’ awwweseome.

The platoon I worked with last night is the best!! If I had get transferred to a different shift, I would definitely want to go there 😉
We had kind of lupper with my parents today who are in the city for my aunt and uncle’s anniversary. We went to Las Palapas again and it was really goood. I am just starting to get hungry now and it’s been about 4 1/2 hours and Andrew is making french onion soup 😉
There is a few things that I want to talk about tomorrow so PLEASE COME BACK!!
I am trying to channel SUMMER over here even though it has been raining for the past couple days!

Beasley and I spent the whole day outside being bums.
We had breakfast outside, too.
Strawberry Vanilla Rhubarb Smoothie
3/4 cup frozen strawberries
1/2 cup frozen rhubarb
1/2 scraped out vanilla bean
1 cup of almond milk
1 juiced orange
xanthan gum (optional)
Mix everything together in the blender. Drrrrink up!
Beasley had to examine the empty glass 😉
I read a bunch of cookbooks and the new Loulou magazine.
They did a piece on my little city! I was so excited to see this. Because Loulou is a Canadian magazine they are always doing feature pieces for shopping in a different city. I have looonged to see little old Saskatoon in the mag and I finally got to! YAY!

Lunch was eaten outside as well – I don’t usually like eating outside because of all the bugs but I just couldn’t bring myself to sit inside today.
Goat chedda slices, half a red pepper, red pepper hummus and about 1/3 cup leftover baked beans.
We had almost no food in our fridge (obvious by my leftovers lunch) so we made a big grocery shopping trip.
I was sooo hungry when we got home so supper was kind of made on the fly.
Homemade Annie’s macaroni made with Happy Herbivore’s low fat vegan nacho sauce and broccoli. A HUUUGE salad with roasted onions, asparagus, mushrooms, baked goat cheese discs and a tiny piece of cranberry walnut purple wheat bread.
That sauce is sooo goood! I’m planning on eating it tomorrow it for lunch too 🙂
The cheese was sliced into thin discs, dipped in an egg and then some panko bread crumbs with italian seasoning. They are baked in the oven on parchment paper for 15 minutes at 400F, flipped half way through.
We took Beasley for a walk after supper and then came home and had dessert.
I bought cherries today at the grocery store and I couldn’t be more excited!! I look every time we go to the store and have been going through a super withdrawal all winter! Soooo I had some on top of my carrot cake ice cream and the last of the millet puff bars.
Okay it’s back to work tomorrow so I should get to bed. It’s a sweatmess in here so hopefully I’ll be able to get some sleep! 😉

We were going to have a “Good Riddance” party if I was switching platoons, but because I’m not I was thinking we should have a “You Can’t Get Rid of Me” party instead!! I should PROBABLY bring my faves some treats for night shifts 🙂

For my lunch I packed up a HUUUGE salad.
It have everything in my fridge in it. Almost.
Organic greens, dill, red peppers, mushrooms, olives, artichokes, goat chedda, onions, grape tomatoes and 2 egg whites.
I topped it with the best dressing in the world. It will never get old.
I also steamed some broccoli and cauliflower for a snack. Topped it with rice parm and hot sauce.
I was running late so a few snacks escaped my camera.
3 triscuits, a cheese string and a pear. They were all great 😉
After work I did the 30 day Shred again.
I did it alone this time so that Andrew could finish making supper haha.
Beasley tried to do level 1 but Jillian is just too tough for him.
He is so crazy.
Andrew made the best supper ever!!
I wanted to eat all the leftovers but figured I should save some for lunch tomorrow.
He got the recipe from the new Vegetarian Times magazine. WOWZA.
Hawaiian-style Sweet-and-Sour Roasted Pineapple and Bell Peppers
I had it with about 1/3 cup brown rice, some spinach, veggie burger with mustard and hot sauce, and 1/2 of a Mountain bread organic wrap with a light laughing cow.
My stomach is so happy and so full.
And now I must sleep.

Yesterday for breakfast I had muesli!
Which I haven’t had in forever! Sooo good.
I think it was about 1/3 cup muesli, 1/2 cup of almond milk and 1 tbsp of cashew butter.
We did some grocery shopping at Costco and then at Co-op.
I picked up a treat at each place.
Next to homemade hummus this is totally my favorite. Clearly evident by the massive tub I got 🙂
I also got these chippers
They are made in Canada and taste AAAMAZING!! There is like 170 cal per 20 chips. LOOOOVE THEM!
I had them for lunch with a salad I picked up from Co-op. The bomb salad. It has some bean salad, greek salad, spinach, broccoli, cauliflower, bean sprouts, carrots, and some nuts. It’s just out of this world.
No need for dressing.
Rock salt and vinegar chips with a cheese string.
After lunch we took Beasley for a walk and then we had a nap.
I fell asleep reading blogs haha.
Supper was made and eaten in a hurry.
Another “born yesterday” bun smothered in hummus and relish with a piece of mahi mahi baked with chili powder and paprika, 1/2 an orange and the rest of my salad.
We went over to my cousin’s for a games night after supper and it was so much fun. There was about 9 of us and we played Boulderdash. I had never played before and it was super funny but I am terrible at it! The story of a man and his pig was all I could come up with for a movie script. And everyone knew it was mine 😦

I snacked on too much last night! Like waaay too many snacks haha.
We had a huge fruit tray with dip, licorices, cheezies, and hickory sticks.
And maybe some frozen yogurt and more chips when I got home 😉
I woke up today and took Beasley for a walk first thing.
Along our walk I came across these beautiful violets.
I used to get them for my mom when I was little for mother’s day and couldn’t believe when I found one today.
I stuck it in her card and sent it home with my brother.
For breakfast I made a smoothie of strawberries, 1/2 a frozen banana, freshly squeezed orange juice, a handful of spinach and some xanthan gum. I tossed some granola on top for a little crunch.
My mom sent me an awesome book!
And while I was flipping through it I came across this page
Did anyone know this???? I had no idea. I always yank out too much tinfoil. NOT ANYMORE.
For luunch I had a barbequed veggie burger with mustard, hummus, cottage cheese and triscuits.
It was so simple but so perfect.
Then it was BATH TIME for Beasley!!

Andrew did the 30 day Shred with me today! It was awesome. I would rather work out with someone then alone and he is such a good workout buddy. We were both sweeeeeating!! And almost late for supper.
We went to Andrew’s parent’s house for Mother’s Day supper tonight and we brought a salad with organic greens with dill, red peppers, goat chedda, mushrooms and onions. And we made some spinach and artichoke dip cups. Supper was so amazing. We had salad, roasted potatoes and carrots, salmon skewers and garlic bread. Andrew’s sister-in-law made death by chocolate for dessert. I almost died. I wanted to eat the whole bowl, but I refrained. Barely 😉 No pics though! So sorry!!
Okay, it is totally bed time now!
It’s back to work tomorrow for me and I need my beauty sleep.
