Hey guys! Hope you had a great weekend!
The weather was beautiful here so we spent a lot of time outside.
Friday I had my baby shower! The girls from work wanted to wait until Jett was born to throw me a party and it was so nice to see everyone! It was such a treat to interact with people that can actually talk back 😉

After everyone left I hung out with Jett while Andrew made supper.

Saturday morning we took Jett and Beasley for a nice long walk along the river.
As Jett is getting older she is getting so much more alert and doesn’t like to be strapped down in her stroller. The past three walks we have had to take her out and carry her. She just likes to look at everything!
We spent the day shopping yesterday [Andrew needed new clothes] and went and visited with his parents and nephew Jaxon. When we got home Andrew made the most delicious supper! Andrew usually makes supper because Jett usually wants to eat as soon as she smells food 😉

I’ve been eating the same smoothie for breakfast all week. Today was no exception:
I found the recipe on The Green Lean Bean and added strawberries like Lauren did. I looove the coconut water and goji berries in this!
After breakfast we headed to our Bradley Method class reunion! There were 9 couples in our class and now that everyone has had their babies we decided to get together and have a potluck brunch and a play date 🙂

There were five girls and four boys. Eight natural births and one c-section. Nine healthy, happy babies 🙂

After the reunion we came home and Jett and I had a looong nap. Best.feeling.ever. I woke up feeling completely refreshed – naps don’t happen here very often – and HUNGRY! Thankfully we brought home leftovers from the potluck:
quinoa mac n’ cheese with red pepper and broccoli, mixed greens with avocado, feta and balsamic dressing
And a raw chocolate macaroon for dessert ♥
It is definitely time for bed! Night!

I’ve been loving reading all the recaps of the Foodbuzz festival!! I have definite shwag bag envy 😉
I had a nice little Sunday. The entire house is clean, all the laundry is done, the pups have been walked, I went for a 30 minute jog and now I get to “talk” to you guys! All I have left to do is meal plan and get some groceries tomorrow and I am completely caught up on my to-do list.
I was trying to post during my night shifts but for some reason my pictures got deleted! Lameballs.
I have pretty much been eating two things for the last 5 days. One of which is EPIC.
1 cup unsweetened chocolate almond milk
1 frozen banana
1/2 tbsp cocoa powder
1/2 tbsp raw maca powder
1 tsp flax oil
1/2 scoop vanilla protein powder
3 ice cubes (more if you’re not using a frozen banana)
Mix all ingredients in the Vitamix or blender and blend until smooth.
I have also been obsessed with caprese pita pizzas. I probably would of made another one tonight if I wasn’t out of basil.
1 whole grain pita
tomato paste, as much as you like
2 cloves roasted garlic
baby tomatoes, sliced
10 bocchini balls, sliced in quarters
Preheat oven to 400F. Spread tomato paste on pita and top with roasted garlic and italian spices. Place tomatoes, cheese and basil on as well and bake in preheated oven for 15 minutes or until cheese is browned.
I switched up my meals tonight but only to get rid of some leftovers in the fridge.
Because I slept in
until noon, I had a macatastic smoothie for breakfast while cleaning and skipped lunch. 😦 By supper time, I was sttaaaarving. This was full of carbs and veggies. The besssssssst.
I had a massaged kale salad with baby tomatoes
leftover mushroom and barley burger on 1/2 a sandwich thin with laughing cow and mustard
and ww spaghettini with butternut squash pasta sauce and vegan parm
Butternut Squash Pasta Sauce
serves 6-8 (maybe more maybe less)
1 tbsp extra virgin olive oil
2 cups butternut squash, steamed until soft
1 red onion, diced
3 medium carrots, thinly sliced
3 stalks of celery, chopped
1/2 red pepper, diced
1/2 zucchini, diced
1 bulb roasted garlic
1 5.5 oz can of herbs & spices tomato paste
1/2 cup water (or veggie stock)
salt and pepper
Heat oil in pan over medium heat. Add onion, celery, red pepper, and carrots. Stirfry until veggies are semi-soft. Add zucchini and cook for about 5 more minutes. Next add steamed squash, garlic, tomato paste, water, spices, salt and pepper. Simmer on medium heat until veggies are very soft. Place sauce in Vitamix, blender or food processor and until smooooooth. Pour back into pan, adjust seasonings, add more water if necessary to thin out and heat through. Serve on top of pasta or veggies. Pour extra into a jar and store in the refrigerator.
Leftovers are even better.

Right after breaky I got straight to work on making some nut butters. I made Ashley’s salt kissed pecan butter and then a hazelnut chocolate kind with vanilla and chia seeds.

I took a break for lunch and made Gina’s crepes!!
THEY ARE INSANE.

I couldn’t decide on sweet or savory cuz I love both, so I had both 😉
I rolled one up with raspberry jam and the salt kissed pecan butter
and these two had sauteed zucchini, green pepper, shallots and broccoli with a teeny bit of pesto.
Laughing Cow sauce of 2 wedges, 1/4 cup almond milk, salt, pepper and tons of green onions
Gina is a for real food genius. These are ridiculously amazing.
Soooo easy and sooo versatile.
I also had a small bowl of leftover potato soup on the side.

While I was eating I did a little bit of lurkwork and came across this post by Lisa. I love her blog and this post was fantastic. So open and honest. It inspired me to give you a little random fun fact about me.

For supper tonight Andrew’s grandparent’s took us out to celebrate Andrew’s birthday. His actual birthday isn’t until the 3rd of August but because we will be gone they decided to take us out tonight.
We went to The Cave and I had a 1/2 order of greek salad and bruschetta.
Imagine them because I didn’t snap any photos!
I did manage to take a picture of his sweeet grandparents though 🙂

When we got home I was still kind of hungry so I had another slice of bruschetta and some steamed broccoli and carrots with a blob of mustard for dipping.

I did have a really lax day though (prob not the best idea when we need to be moved out of our house in 5 ish days!!) but it sure felt good 😉
I woke up at the crack of 10am and got right to lurkwork.
Yes that’s right. I named my addiction. Sounds important now, yeah?
While I was working I slurped on a smoothie.
1 cup almond milk
1 frozen peach
1 scoop of vanilla isoflex
2 ice cubes
I bookmarked about a 1000 new recipes and got the googs down to about 700. Wooop!
Just when I planned to take Beasley out for a jog it started to rain. Saskatoon weather is crazy lately! Rain, sun, rain, rain, rain, rain. COME ON MOTHER NATURE!!
Instead of working out I decided to get started on lunch instead.
Healthy Garden Potato Soup
1 1/2 tsp extra virgin olive oil
1 shallot, diced
1 bulb of fresh garlic, minced
1 cup of sliced carrots
6 large stalks of rainbow swiss chard (spinach, kale or green beans would work too)
1 lb of new potatoes, quartered
2 cups of veggie broth
1/2 cup water
3/4 cup almond milk (or regular milk)
1 tbsp fresh basil, torn
salt and pepper
Heat olive oil over medium heat and add shallot and garlic. Cook for about 3 minutes and then add carrots and potatoes. Cook for about 1 minute and then add broth, water, salt, pepper and basil. Bring to a boil and turn temp to low, cover and simmer for 15-20 minutes, until veggies are soft. Add in chard during last 5 minutes. Pour half of soup into blender or food processor and blend until smooth. Pour back into pot. If you don’t like your soup chunky, blend the whole batch of soup. Top with goat chedda, more pepper and some hot saucce if you’re so inclined.
My fave thing about this soup was that everything came from either my mom’s garden or the farmer’s market.
Oh, and obviously the goat chedda.
The rest of the afternoon was spent mindlessly looking through cookbooks and mags, trying to figure out what to take and what to toss. I packed one box. Ha. But I did get all the laundry finished 🙂
When Andrew got home from work we went and picked up a Magic Bullet so we can still have smoothies on our holiday.
I would love to take the Kitchenaid but she’s kind of a husky beast. Bullet is a little more practical.
Ander made supper while I watched Pretty Little Liars.
He had a burger and smoothie (obsessed much?) and I had a gigantic salad with organic mixed greens and kale from ma mama’s garden, grilled salmon, kamut and spelt prepared salad, sliced pickles and cucumbers and topped with raspberry vinaigrette and sunflower sprouts.
Need to learn how to make kamut and spelt salad ASAP.
I’ve been snacking on some cherries
and a piece of toast with raspberry jam and earth balance.
That about brings us to right now.
My eyes are closing again as I’m typing so like ushe, I’m off to bed! (Well, check facebook and email first of course 😉 )
On the food agenda for tomorrow ~ these beautiful crepes! Not sure if they’re going to be for breakfast or lunch yet.

Beasley and I spent the whole day outside being bums.
We had breakfast outside, too.
Strawberry Vanilla Rhubarb Smoothie
3/4 cup frozen strawberries
1/2 cup frozen rhubarb
1/2 scraped out vanilla bean
1 cup of almond milk
1 juiced orange
xanthan gum (optional)
Mix everything together in the blender. Drrrrink up!
Beasley had to examine the empty glass 😉
I read a bunch of cookbooks and the new Loulou magazine.
They did a piece on my little city! I was so excited to see this. Because Loulou is a Canadian magazine they are always doing feature pieces for shopping in a different city. I have looonged to see little old Saskatoon in the mag and I finally got to! YAY!

Lunch was eaten outside as well – I don’t usually like eating outside because of all the bugs but I just couldn’t bring myself to sit inside today.
Goat chedda slices, half a red pepper, red pepper hummus and about 1/3 cup leftover baked beans.
We had almost no food in our fridge (obvious by my leftovers lunch) so we made a big grocery shopping trip.
I was sooo hungry when we got home so supper was kind of made on the fly.
Homemade Annie’s macaroni made with Happy Herbivore’s low fat vegan nacho sauce and broccoli. A HUUUGE salad with roasted onions, asparagus, mushrooms, baked goat cheese discs and a tiny piece of cranberry walnut purple wheat bread.
That sauce is sooo goood! I’m planning on eating it tomorrow it for lunch too 🙂
The cheese was sliced into thin discs, dipped in an egg and then some panko bread crumbs with italian seasoning. They are baked in the oven on parchment paper for 15 minutes at 400F, flipped half way through.
We took Beasley for a walk after supper and then came home and had dessert.
I bought cherries today at the grocery store and I couldn’t be more excited!! I look every time we go to the store and have been going through a super withdrawal all winter! Soooo I had some on top of my carrot cake ice cream and the last of the millet puff bars.
Okay it’s back to work tomorrow so I should get to bed. It’s a sweatmess in here so hopefully I’ll be able to get some sleep! 😉

Yesterday for breakfast I had muesli!
Which I haven’t had in forever! Sooo good.
I think it was about 1/3 cup muesli, 1/2 cup of almond milk and 1 tbsp of cashew butter.
We did some grocery shopping at Costco and then at Co-op.
I picked up a treat at each place.
Next to homemade hummus this is totally my favorite. Clearly evident by the massive tub I got 🙂
I also got these chippers
They are made in Canada and taste AAAMAZING!! There is like 170 cal per 20 chips. LOOOOVE THEM!
I had them for lunch with a salad I picked up from Co-op. The bomb salad. It has some bean salad, greek salad, spinach, broccoli, cauliflower, bean sprouts, carrots, and some nuts. It’s just out of this world.
No need for dressing.
Rock salt and vinegar chips with a cheese string.
After lunch we took Beasley for a walk and then we had a nap.
I fell asleep reading blogs haha.
Supper was made and eaten in a hurry.
Another “born yesterday” bun smothered in hummus and relish with a piece of mahi mahi baked with chili powder and paprika, 1/2 an orange and the rest of my salad.
We went over to my cousin’s for a games night after supper and it was so much fun. There was about 9 of us and we played Boulderdash. I had never played before and it was super funny but I am terrible at it! The story of a man and his pig was all I could come up with for a movie script. And everyone knew it was mine 😦

I snacked on too much last night! Like waaay too many snacks haha.
We had a huge fruit tray with dip, licorices, cheezies, and hickory sticks.
And maybe some frozen yogurt and more chips when I got home 😉
I woke up today and took Beasley for a walk first thing.
Along our walk I came across these beautiful violets.
I used to get them for my mom when I was little for mother’s day and couldn’t believe when I found one today.
I stuck it in her card and sent it home with my brother.
For breakfast I made a smoothie of strawberries, 1/2 a frozen banana, freshly squeezed orange juice, a handful of spinach and some xanthan gum. I tossed some granola on top for a little crunch.

For luunch I had a barbequed veggie burger with mustard, hummus, cottage cheese and triscuits.
It was so simple but so perfect.
Then it was BATH TIME for Beasley!!

Andrew did the 30 day Shred with me today! It was awesome. I would rather work out with someone then alone and he is such a good workout buddy. We were both sweeeeeating!! And almost late for supper.
We went to Andrew’s parent’s house for Mother’s Day supper tonight and we brought a salad with organic greens with dill, red peppers, goat chedda, mushrooms and onions. And we made some spinach and artichoke dip cups. Supper was so amazing. We had salad, roasted potatoes and carrots, salmon skewers and garlic bread. Andrew’s sister-in-law made death by chocolate for dessert. I almost died. I wanted to eat the whole bowl, but I refrained. Barely 😉 No pics though! So sorry!!
Okay, it is totally bed time now!
It’s back to work tomorrow for me and I need my beauty sleep.

I modify it a bit and put in a squirt of stoneground mustard, tiny squirt of jalapeno mustard, spoonful of hummus and water to thin.

I left it dressingless so I could add more of the mustard/hummus when we got home.
And had a 1/2 a baked yam with baked beans with lots of hot sauce and pepper.
There are also some missing pasta dishes in there too. Not sure where those pictures went haha.

So yesterday would have been my grandpa’s 87th birthday.
This is the first birthday since he’s passed away and I thought about him all day.
It was soo beautiful outside yesterday and I just know he would have had a great day 🙂
and here we are out at his farm around the same time
Ah I miss him so much. SO MUCH. He was the youngest 86 year old! He still flew his plane and climbed trees right up until he got sick. He loved showing us everything on his farm and taking us for walks through the trails. We were so lucky 🙂 🙂 🙂 🙂
So happy that I’m back!

Hi! How is everyone?? Hopefully you’re having a really good weekend. Mine has been going just fine. Did you celebrate Earth Hour tonight?? We sure did! We shut all of our lights off, took Beasley for a walk (his 2nd one today 😉 ) and then came home, lit some candles and shared the So Delicious coconut milk vanilla bean icecream I bought the other day.
This is my third year participating and it just warms my lame little heart how many people do this. The Sydney Opera House and the Great Pyramids of Giza even shut off their lights!

What kind of things do you do to help the earth? We do small things everyday like use cold water to wash our clothes, use reusable grocery bags and sandwich bags, unplugging appliances when we aren’t using them, and recycling as much as possible! And in the summer we compost 🙂
Backtracking to yesterday.
Three egg whites, goat cheese, 1/4 of an avocado, chopped tomato, dill and an apple.
We had a popcorn night at work (cuz my new supervisor is so cool) and she brought her air popper, I brought some popcorn and another girl brought a bunch of popcorn seasonings. I OVERLOADED myself with delicious popcorn. It was crazy.
I only took one picture of what I took for lunch last night. I didn’t think you needed to see another bowl of potato salad or another wrap so I left them out. Andrew made a quesadilla and left me half to take to work. It was curry ish and awesome.
Work was busy busy busy last night!! Ugh. Sometimes I wish crime would take a vacay LOL. But then I guess I wouldn’t have a job, right? 😉
B-fast today was oatmeal with chia, raisons, blackberries, honey, quinoa maple cereal and almond milk. Weird, I know. I had a craving for all of those things and they tasted decee together.

I knew we were having pizza at Andrew’s brother’s house tonight so I had a small meal so I wouldn’t go overboard once I got there. My brother dropped off some soup he made – butternut squash, pumpkin, carrots, cloves and curry – and DAMN! Sooo yummy!! I had it with a smear of goat cheese and whole wheat wrap.
I still managed to have 2 1/2 pieces of veggie pizza 🙂
Time for bed! Or time to have another snack?? Hahaha probably a little bit of both. See you guys tomorrow!!! BYYYYYYE!!

Holla! IT’S FRIIIDAY!!! Awesome possum. I am up waaay too early and tonight is gonna be pretty painful! Haha but that’s nothing new. I had LOTS of eats yesterday aaaaaand…..drumroll please…..
I RAN FOR 10 MINUTES STRAIGHT!!!!
One whole mile! No stops! I know that might not be a big deal to most people, but I don’t think I’ve ever ran that long before. So proud 🙂 I felt so great after!! And I’m so looking forward to doing it again!
Now onto the foooods.
B-fast was a smoothie because I had a nail appointment and I had to mooooove.
I was lurking on the Living Harvest website and found this great smoothie recipe. I halved it.
Vanilla Strawberry Banana Smoothie
1 cup unsweetened almond milk
1 cup frozen strawberries
2 tbsp Vanilla Spice protein powder
Blend it and drink it.
When I got home I decided to make some Quinoa Protein Muffins found here. All I did was change the flava of protein. (No idea why I’m so into protein powder right now. Anything to help me stay fuller longer!)
My muffins did not turn out as well as I was hoping. Mine crumbled so I stuck them together with cashew butter to have as a snack at work.
While these were cooking I went and did my run 😉 Oh and because I had made a tons of quinoa, I made some of Angela’s maple quinoa cereal. Check it out riiiiight here!. I have actually made this three times now and burnt it everytime!! This was my best attempt yet though, ha.
I haven’t actually had any of this yet, but Andrew had it for breakfast (with almond milk I think) and he said it was gooood. Win.
I took Bizzle for a long walk and it went by so quickly now that I have new songs on my ipod. I hadn’t changed the songs in 2 years!! Shameful, absolutely. But I rock out now 🙂
I had eggs for lunch! I am so addicted I have been licking my plate clean for the last three days. I mashed some blackberries instead of using jam this time and IT IS DA BOMB. I also finished up the rest of the stuffed focaccia inards (spinach, red pepper, pine nuts, feta, onion) and a piece of Squirrley bread.
I totally didn’t do Raw Food Long Change. Deferred success. So I made orange and white potato salad. Another win.
Sweet Potato Salad
3 tbsp plain organic yogurt
1 1/2 tbsp low fat mayo
squeeze of lemon juice
1/2 tsp vinegar
1 tsp stoneground mustard
tiny bit of fresh grated ginger
salt and pepper
Use as much of everything to taste.You can’t really mess this up 🙂
I made a wrap using the leftover veggies from supper the night before. I just added goat cheese and sprouts.
Blue Lagoon smoothie is next. Or purple lagoon. Whateves. Sooo good. Same recipe as before, just subbed in a cup of Saskatoon berries that we picked and froze in the summer. Now, please don’t judge the fact that it’s in a jar. I had no to-go cup. I tried to pretty the pic up 😉

HAPPY ST. PATRICK’S DAY!!! Hope everyone is having fun celebrating! No green beer for me tonight (the green food coloring actually really creeps me out) because I am going to work! Of course! Soo today was Raw Food Long Change and I spent the afternoon uncooking 😉
I got up this morning at about 8:00am, came out to the livingroom to check my email and fell back asleep!! I didn’t wake up until 10:30am 😦 Oh well. I took Bizzle for a walk as soon as I did get up because it was soo gorgeous outside. We only walked for about 30 minutes before my stomach started grumbling. I came home and had half of one of these:
Not that bad. Not the best flavor I’ve ever had, but not bad. I also had a GREEN MONSTER. In honor of shamrock day of course 😉
And I took the picture in honor of Janetha. It was just my usual banana, spinach and water but I added xanthan gum – the reason it looks like I painted on my mustache.
I made kale chips! And didn’t overcook them this time! I used a different recipe this time though and they are suuuperb.
big bunch of kale
1 red pepper
1 tbsp nutritional yeast
1 1/2 lemons, juiced
1 cup soaked cashews
2 tsp sea salt
Put everything in the food processor except for the kale and Cut out the stem in kale and cut into chip like pieces. Pour sauce over kale and massage until coated. Leave a bit extra and drop in blobs. Dehydrate on teflex sheets for about 6-12 hours.
I also had a little helper this afternoon. He didn’t really help. More so laid in the sun.
I also made a raw spinach dip. I was going to take it to work but (sorry work peeps!!) I’m selfish! 😉
Raw Spinach Dip
1 cup raw cashews, soaked for 2 hours
2 tbsp nutritional yeast
2 cloves of garlic
1 lemon, juiced
3/4 cup water
5 ounces spinach
1/8 red onion
1 red pepper
sea salt to taste
Add all ingredients in a food processor and process until smooth. That’s it. Easy and yummy.
I kind of forgot to eat lunch this afternoon (laundry, grocery shopping and cooking kind of got in the way) so I made a veggie burger, some parmesan Triscuit craackers, spinach dip and a protein cupcake! I stole the recipe from Therese and I am OBBBBSEEEEEESSEEDD.

Tonight we made yam falafels. They are bright orange and I can’t wait! No time to post a pic -you’ll just have to wait until tomorrow!! GOTTTAA GO!!!
